Step-by-step recipe with photos

The sweet tooth made from shortbread dough with cottage cheese comes out tender and melts in the mouth, and the shortbread base is crispy and brittle. Everyone who has ever tried this kind of cottage cheese pie was left speechless by it and wrote down the recipe in their culinary notebooks. Despite the apparent complexity, the delicacy is prepared quickly and simply; the main thing is to let the shortbread dough cool for 20 minutes in the refrigerator before baking. Because baking powder is not added to it, the base must be narrow. Almost everyone will ask: why is the dough without baking powder? So that it does not swell from different sides, pushing the filling into far corners. Agree, such a cake, swollen on one side, is not very desirable to show to guests!

You can add different flavors to the filling: vanilla, citrus, orange, etc. Don't forget to add a little butter and flour to create crumbs. The pie tastes best when warm, and even when chilled it is perfect, especially with hot drinks.

So, let's prepare the necessary ingredients and start cooking!

Combine cottage cheese of any fat content with sour cream of any fat content, sweet sand, salt and beat in a chicken egg. Mix the filling thoroughly with a fork or puree with an immersion blender until smooth.

Next, start creating the test. Melt the butter until it boils. Pour sugar and salt into a container with butter, crack in the chicken eggs and beat everything.

Add premium wheat flour in parts and knead into a tight, plastic dough.

Cover it with cling film and place it in the refrigerator for 15-20 minutes.

After the designated time, lightly grease the mold with vegetable or butter, place the dough in it and spread it over the bottom and sides as thinly as possible. Place the filling on the dough and spread it moderately over the dough, without going beyond the sides of the workpiece.

In a separate bowl or bowl, grind the chilled butter and wheat flour, crumbling the butter into small pieces in advance.

Sprinkle the sand crumbs on top of the workpiece and preheat the oven to 200°C. Bake the sweet tooth from shortcrust pastry with cottage cheese for 40-50 minutes, keeping an eye on its surface. If you have a larger shape, add another 5-10 minutes to the cooking time.

Remove the finished pie from the oven and cool slightly.

Then remove from the mold.

Cut into portions and serve with jam, marmalade or confiture.

Recipe for “Crumbled curd pie “Sweet tooth””:

Preparing the filling:
Carefully stir the cottage cheese with sugar, eggs and starch. If desired, you can add grated lemon zest, lemon juice and dried fruits.

the dough with
100 g of ice-cold butter (from the freezer) on a medium grater.
Add flour, sugar and baking powder to a bowl with butter.
Stir with a fork. Place a circle of baking paper on the bottom of a mold d=24 cm.
Pour 2/3 of the flour mixture into the mold and smooth it out.

Spread the curd mass moderately.
(It is not allowed to spread the entire mass at once, in this case it will be difficult to distribute it over the loose flour mass. The cottage cheese must be placed one spoon at a time over the entire area of the form. When all the cottage cheese has been laid out, it must be smoothed out a little, filling the empty spaces)
Pour the rest of the flour onto the cottage cheese masses.
Flatten. Generously grate about 10 g more butter on top.

Place the pan in an oven preheated to 200-220°C for 15-20 minutes until browned.
Remove the finished cake from the oven, leave it for 15 minutes so that it sets, and then remove it from the mold.

Bon appetit.

Sweet tooth: making a pie at home

Manufacturing plan:

  1. A sweet tooth dessert is being prepared with cottage cheese made from shortcrust pastry. Recipe from it and start cooking. It is more convenient to create this using a blender or food processor. This will prevent the butter from melting from the warmth of your hands. Place the ingredients in a bowl and grind with a few pulsating movements into a homogeneous crumb.
  2. Transfer the crumbs to a bowl or place them on the table. Gather into a dough, pressing with your hands. If the crumbs don't form well into a mass, that's normal. Just wrap it in plastic.
  3. Place the cottage cheese in a bowl suitable for mixing.
  4. Break the eggs into the cottage cheese, beat with a mixer to break up the lumps. If more convenient, use a puree masher.
  5. Add sugar, vanilla and beat well again. If the process is performed correctly, you will get a homogeneous interior for the sweet tooth pie with cottage cheese. Use the shortbread dough according to the recipe to lay out the bottom. Use a baking dish or small baking tray. Add a little cool water to 2/3 of the crumb dough. Form into a ball, roll out slightly and place on the bottom. Press down gently with your hands.
  6. Pour in the filling and smooth it out with a spoon to distribute it evenly.
  7. Sprinkle the remaining crumbs of dough on top of the cottage cheese.
  8. Place the cake to bake in the oven, preheated to 180 degrees. Bake for about 40 minutes. The time depends on the thickness of your dessert.
  9. Remove the rosy pie from the oven and cool in the pan. Then cut into portions and serve. If you cut into a hot treat, the dough will break.
  10. Sprinkle with sweet powder on top if desired.
