Lazy dumplings with potatoes are a simple but delicious home-cooked dish. You can prepare this dish quickly and using affordable goods. You can serve lazy dumplings with sour cream, butter or fried onions.

Cut the peeled potatoes into pieces, add water, put on fire and cook in salted water until tender.

While the potatoes are cooking, prepare the frying (which we will add to the finished dish). Finely chop the onion and fry in butter (or a mixture of butter and vegetable oil) over low heat.

Drain the water and mash the potatoes. Add a small piece of butter and mix.

Cool the mashed potatoes until warm, add eggs and dark ground pepper, mix.

We add flour in parts, and a light potato dough comes out, which should not stick very much to your hands.

Divide the potato dough into several pieces. Roll any piece into a rope on a work surface, which we lightly sprinkle with flour, and divide it into small pieces with a knife.

Place the dumplings into boiling salted water, stir, and bring to a boil. Cook the floating dumplings for 2-3 minutes without covering with a lid.

Remove the lazy dumplings with potatoes from the pan and pour over the fried onion. Bon appetit!

Lazy dumplings with potatoes

I absolutely love dumplings with potatoes - it is an extremely ordinary, delicious and extremely homey dish. But from time to time there is not enough time to prepare them according to all the rules. Then I cook lazy dumplings. Lazy dumplings are prepared from the same ingredients as classic ones, but even simpler and even faster. Naturally, they also differ in taste, they differ in approximately the same way as lazy dumplings with cottage cheese differ from traditional dumplings with cottage cheese, but this is also very, very tasty. Let's cook!

PREPARATION:

Peel the potatoes, chop them coarsely, add salt and add water so that the potatoes are just covered.

Place on the fire and cook until done. While the potatoes are cooking, finely chop the onion. I added onions to the dough for dumplings and used them for serving. If you don’t like dumplings with fried onions, then you can use less onion. Heat a little vegetable oil in a frying pan, add chopped onion and fry for 2-3 minutes until transparent. We put a piece of butter, you can put more or less of it - at your discretion. Fry the onion until a nice golden color.

When the potatoes can just be pierced with a knife, they are cooked.

Strain the potatoes, return the pan to the heat, dry the potatoes, and evaporate the remaining broth. Add a small piece of butter (optional) and mash into a puree.

Add about half of the fried onions

Stir, transfer to a bowl and let cool until warm.

At the same time, you don’t need to wait for the potatoes to cool down completely, because when they cool down, they will become denser and it will be more difficult to knead the dough on them. Salt, beat in a medium chicken egg

and stir in the flour until a soft dough forms. In the recipe I indicate 150 g of flour, since this is exactly how much flour I needed this time, but you may need a little more or a little less. If you add a lot of flour to the dough, the dumplings can turn out dense, mealy and, in my opinion, not very tasty. But at the same time, if there is not enough flour in the dough, the dumplings may fall apart during cooking. In general, it is important to maintain a golden mean here. This is the soft, sticky dough I ended up with.

I won't add any more flour. Dust the desktop with flour, lay out the dough, roll it up and divide it depending on the desired size of dumplings.

At first I divided all the dough into small pieces and then divided any piece in half. Roll any dumpling in flour. Boil the shaped dumplings in plenty of water. Add some salt to the water. In order to make sure that the dumplings do not fall apart during cooking, boil one dumpling first.

If the dumpling does not fall apart, boil all the other dumplings. Well, if it suddenly falls apart, this means that you need to add a little more flour into the dough. Place the dumplings into boiling water and cook for 2-3 minutes after floating.

We take out the finished dumplings with a slotted spoon and place them in a frying pan with the remaining fried onions. Place the pan on the heat and fry the dumplings for a couple more minutes.

We serve dumplings as an independent dish, they are usually served with sour cream, you can sprinkle with chopped herbs, everything is at your discretion.

  1. Potatoes can be boiled in their skins or peeled. I boiled it in salted water with a bay leaf. Now I crush it with a masher and drive in the testicle. At this step, add salt, pepper and finely chopped herbs. You can add the spices you like.
  2. Stirring constantly, add half the flour. I leave the second half. You will need it to roll out the dough. I knead the soft dough with my hands. You can add more flour if it gets too sticky to your hands. I leave the dough to stand for 20 minutes. Cover with a lid or film.
  3. Now I finely chop the onion and fry it in a frying pan with vegetable oil.
  4. I dump the dough onto the table. I cut off a small piece and roll out the sausage. The thickness of the sausage is about 2 - 3 cm. I cut the sausage into pieces of 2 cm.
  5. I put a pan on the stove and when it boils, I throw dumplings into the boiling water. I flatten them slightly with a fork. They boil and immediately remove from the heat. I take it out onto a plate with a slotted spoon.
  6. I add fried onions to the dumplings. Can be served.

Try homemade mayonnaise with dumplings. Dumplings are not bad, of course, with sour cream. And if you’re not too lazy to create them with mushrooms, you’ll completely swallow your tongue)

  3. Place the dough on a board sprinkled with flour. I cut off part of the dough and roll out the sausage. I cut small 2 cm slices from the sausage. I flatten them with a fork or my fingers.
  4. I put the dumplings in salted boiling water and wait until they float out, stirring. The dumplings floated out and I immediately took them out with a slotted spoon. I put it in a frying pan with mushrooms and onions. You can fry it a little more. I just mix them with mushroom sauce and take them out onto plates.
