- Whey from cottage cheese or feta cheese – 500 ml
- Sugar - three tablespoons
- Salt - half a teaspoon
- Premium wheat flour (you can mix in a little rye) – 3.5 cups
- Vanilla sugar - sachet
- Soda - a teaspoon without top
- Sweet powder for sprinkling - optional
Whey pancakes are fluffy
- The first secret is that the whey must be acidic. Lick it before making it to be sure. If it is sweet, it will not be able to extinguish the soda. In this case, it must be extinguished with additional vinegar. Although I won’t say literally, I constantly use specifically acidic whey.
- Pour into a wide bowl and heat until hot enough to hold your finger. Do not bring to a boil, otherwise the flour will simply boil.
- Stir sugar and salt in it until dissolved.
- We begin to sift the flour into it through a sieve. You can slightly add rye flour to snow-white flour, if available. Cook from proven flour so that there are no surprises - this is the second secret.
- Stir the mixture with a whisk - it will initially stick to the whisk, but later it will become a dough. Don't forget to add vanilla sugar.
- The dough must be thick - look at the photo, it does not flow, but falls from the spoon, and falls very slowly. This is another secret of splendor. The batter will spread across your pan.
- Now it's time to add soda. Please note that baking soda will slightly thin the dough, so don’t be afraid to get carried away with the thickness. You can let the dough sit for 5 minutes so that the flour swells, and then add baking soda and bake. I usually add baking soda right away, after I knead the dough. The main thing is that the dough does not flow, but is as in the photo.
- Let's start frying, this also has its secrets. Pour in a sufficient amount of vegetable oil and heat the frying pan perfectly (essentially!). We place a cup of cool water near us - we will dip a spoon there to collect the dough.
- Wet a spoon in water, scoop out the dough and place it on a hot frying pan. Try not to let the pieces of dough touch each other. Now immediately (!) reduce the heat to low and cover the frying pan with a lid for 2-3 minutes. If the stove is electronic, simply set the frying pan aside. During this period of time, the pancakes will grow in size and will not spread on top.
- We turn them over to the second side very carefully, put them back on high heat to brown the second side for almost 30 seconds. Reduce the heat again or completely set them aside from the stove and cover with a lid. You will see for yourself that they are 100% baked from the inside, and there is no raw dough in the middle.
- From this quantity of goods I got 28 pieces (4 times 7 pieces). Place the finished pancakes first on a paper towel to blot off excess fat. Then put it in a bowl or pan and cover with a lid.
- What is the best and tastiest way to eat them? The most common option is to sprinkle with sweet powder. My children love mixing sour cream with sugar or honey. Well, simply delicious with jam or marmalade!
