Raisin and Rice Pie

If you want to amuse your loved ones with savory and satisfying pastries for tea, bake this raisin and rice pie. The pie recipe will require a minimum of ingredients and very little time from you.

Ingredients

  • 450 g flour
  • 200 g butter
  • 150 ml kefir of any fat content
  • 150 g dry rice
  • 100 g dried apricots
  • 100 g raisins
  • 1 egg (optional)
  • 4-5 tbsp. sugar (preferably coffee)
  • half a tsp salt
  • 1/3 tsp. soda (slaked with vinegar)

Recipe for making a dish at home

  1. Wash the rice well and pour into a pan of bubbling, lightly salted water. Cook the rice for about 15 minutes until almost done. Meanwhile, prepare the raisin and rice pie dough.
  2. Lightly heat the oil (toss in 50g for the inside) in a water bath until soft. Combine warm oil with kefir, 2 tbsp. sugar and carefully grind everything until a homogeneous mixture. Sift half the flour evenly through a sieve and knead until completely smooth.
  3. Quench the soda with a few drops of vinegar and add to the dough, mix again. Sift the remaining flour evenly and knead the dough until smooth, roll into a ball and wrap in cling film. Place the dough in the refrigerator to rest for 20 minutes.
  4. Place the egg in a pan of boiling water and cook for about 10 minutes. After this, drain the hot water, add cool water and leave to cool for a few minutes. Peel the cooled egg from the shell and cut into small cubes.
  5. Place the raisins in a small container and cover with hot water for 10 minutes. When the rice is almost ready, place it in a colander and let it drain. Combine rice with raisins, sugar, egg and mix.
  6. Preheat the oven to 180C, grease a baking dish with a piece of butter. Divide the dough into two unequal parts (approximately 3:2). Roll out a large portion of the dough and place it in the mold. The edges of the dough should hang over the sides of the pan by 1-2 cm.
  7. Place the filling of rice and raisins into a mold lined with dough. Finely chop the remaining butter (50 g) and cover the filling sparingly. Roll out the dough thinly and place it on top of the inside.
  8. Cover the pie with the edges of the bottom layer of dough and pinch them together with the top layer of dough. If you have excess dough left, you can cut it into shapes and place it on top of the pie. If desired, you can brush the surface of the pie with yolk. Place the pan in a preheated oven.
  9. Bake the raisin and rice pie for about 20-30 minutes until done. After this, remove the pan from the oven and leave to cool for a couple of minutes. Cut the pie into portions and serve. Rice and raisin pie is delicious either hot or cold . Bon appetit!

This large, hearty, sweet pie with rice and raisins, the oven recipe for which I would like to offer you now, is often prepared by my mother-in-law on weekends. She places it directly on a baking sheet, so this pie can feed a dozen people. It’s very comfortable, especially if a friendly family who loves delicious food is about to gather.

Sweet Rice and Raisin Pie - Recipe

To make the pie as tasty as the cherry pie, the recipe for which I offered you earlier, it is very important to choose high-quality ingredients for the inside, in this case raisins. It should not be very small; preference should also be given to the dark variety. Otherwise, everything is simpler than usual, especially since the dough in this case is used without yeast, which means that all production will take very little time.

Pie ingredients

To prepare this pastry, we will need ordinary products, a supply of which can be found in the kitchen of almost every housewife. Please note that the dough contains mayonnaise, which makes it very elastic. This allows us to simply roll it out to a thickness that suits us.

So, to bake this sweet raisin and rice pie, prepare the following ingredients:

Ingredients for the inside

  • 800 grams of rice
  • 1.5 cups sweet sand
  • 300 grams of raisins
  • 300 grams of butter

Step-by-step production with photos

1. Mix sour cream, mayonnaise, vegetable oil in a bowl, add salt and add flour evenly. Carefully mix the ingredients together.

2. Knead soft, elastic dough. A little less or a little more flour may be useful. Therefore, see for yourself, the finished dough does not have to stick to your hands.

3. For the inside, take rice, boil it until half cooked, then rinse thoroughly with cold water.

4. Add pre-washed raisins and sweet sand to the rice, carefully mix the filling.

5. Divide the dough into two parts, one of which must be larger. We roll out a huge part into a fairly narrow layer.

6. Transfer this rolled out layer to a baking sheet and grease with a small amount of vegetable oil. The edges of the dough should extend beyond the baking sheet, take this into account when rolling out.

7. Place all the filling on the dough and distribute it moderately. Season the filling with melted butter.

8. Roll out the second part of the dough thinly and cover the laid out filling with it. We connect the edges of the dough with a beautiful braid.

9. Bake the pie in an oven preheated to 180 degrees for about an hour. Baking time depends on the size of the cake and the capabilities of the oven. We focus on a golden crust. Let the finished pie cool slightly, and then cut into portions and serve.

The grandmother of my close friend Amina is from Feodosia, Tatar by nationality. And specifically, she shared with me a recipe for a pie that amazed all my family and guests. And thanks to this recipe, my daughter Daria began to eat rice.

Balish is a closed pie that I fell in love with from the first bite. The taste is extraordinary, rich, not bland. Almost everything depends on the inside: it can be either sweet or salty.

Balish with meat and potatoes is considered common in Mongolian cuisine, but my friend’s family always made this version - with raisins or dried apricots.

Rice and Raisin Pie

Editorial “So Simple!” I have prepared for you a recipe for sweet rice cake “Balish” . A real masterpiece of Mongolian cooking, which I mastered in just an hour!

Ingredients for the dough

  • 1 tbsp. round rice
  • 1 tbsp. seedless raisins
  • 5 tbsp. l. butter
  • 1/2 kg prepared yeast dough
  • 1.5 tbsp. l. Sahara
  • 1.5 tbsp. l. flour
  • salt to taste

Manufacturing

In a comfortable container, wash the rice with cool running water. Then pour boiling water over it, add salt and cook until fully cooked.


Now you need to prepare the raisins. I sorted it out, washed it and filled it with hot water until it swelled.


Place the finished rice in a sieve and wash thoroughly with cool water, then leave it in the sieve to drain.


For the inside, you need to lightly melt 3 tablespoons of butter and add all the rice to it, and then the raisins. Stir everything well.

Also, if desired, you can add dried apricots and prunes to the filling.


Divide 0.5 kg of dough into 1/3 and 2/3 parts. Roll out 2/3 of the dough to fit the mold. Next, transfer the dough into a greased pan.


Fill the dough with the insides, pressing it lightly with a teaspoon.


For the topping you will need to soften 1 tablespoon of butter and add sugar and flour to it. Then stir all the ingredients until crumbly.


Sprinkle crumbs over the top of the pie. Please note that there is no need to fill the holes!


Bake the pie for an hour at 170 degrees in a preheated oven.


Now take the pie out of the oven and cut a piece. Lift the “lid” slightly and add a teaspoon of butter.

On the eve of the professional holiday - Teacher's Day - a master class for readers of Chelninskiye Izvestia was conducted by a teacher with 45 years of experience, Gulsina Minnekhanova. This year there was a good pumpkin harvest at her dacha, she offered to bake a regular and cheap pie.

Ingredients:

premium flour – 1.5-2 cups,

pumpkin – 1 kilogram (weight in peeled form),

milk – 150 ml,

butter – 150 grams,

refined vegetable oil - a quarter cup,

rice - 0.5 cups,

raisins (or dried fruits) – 0.5 cups,

compressed yeast – 8-10 grams,

salt – 0.5 teaspoon,

sweet sand - 0.5 cups.

Dough:

1. Pour milk, water, vegetable oil into a large bowl, add yeast, salt, 0.5 teaspoon of sugar.

2. Place the dishes with ingredients on the switched on gas burner.

3. While the mixture is heating up, mix it by hand.

4. Transfer the dishes to the table and, evenly adding the sifted flour in advance, knead a soft, elastic dough.

5. Cover it with a towel and place it in a warm space for approximately 40-45 minutes.

Interior:

1. Peel the pumpkin, cut into small cubes 1-1.5 centimeters in size and place in a bowl.

2. Prepare the rice: wash and boil in water for 3-4 minutes, turn off the gas and let it swell. To prevent it from being sticky and viscous, wash it with cool water.

3. Pour warm water over the raisins for 10 minutes and wash.

4. Mix all ingredients cool and add 0.5 teaspoon of salt (needed for rice).

5. Note! Do not sprinkle the filling with sugar, otherwise the juice will appear.

Pie assembly:

1. Turn on the oven at 180 degrees in advance.

2. Grease the frying pan with vegetable oil.

3. On a floured kitchen board, divide the dough into two unequal parts.

4. Roll out a large piece of dough for the base of the pie and place it in a frying pan.

5. Mix the filling with the remaining sugar, place on the flatbread, and smooth with a spoon.

6. Pour melted butter over the top of the mixture.

7. Roll out the second part of the dough and cover the pie with it.

8. Carefully pinch the edges of the dough.

9. Sprinkle sweet crumbs on top of the pie: mix 1 tablespoon each of flour, sugar and sunflower oil, rub the mixture well with your hands.

Baking:

1. Place the formed pie in the oven for approximately 40-50 minutes.

2. When the crust is browned, the pie is ready.

3. If the pumpkin turns out to be a little tough, put the pie in the oven for another 10-15 minutes.

4. Serve the finished dish for tea, cutting into portions.

The pie melts in your mouth and is delicious both hot and cold.
