Yeast apple pie
A rich yeast pie with apple jam is a wonderful occasion to gather the whole family at one table. Its excellent scent will fill the house with warmth and comfort in any weather. And if you get creative with the design, then such a pie can be safely placed in the center of the festive table. Guests will appreciate your efforts and will probably say a lot of nice words.
Ingredients for the base:
- Flour – 200 g;
- Milk – 200 ml;
- Testicle – 1 piece;
- Sugar – 50 g;
- Butter – 50 g;
- Salt – ½ tsp;
- Dry yeast – 10 g.
- Apple jam – 200 g.
- Yolk – 1 piece;
- Sugar – 2 tbsp.
The main secret of a perfect yeast pie is in correctly prepared dough. Inexperienced housewives will probably need the following advice:
- To make yeast dough, all ingredients must be warm, for which they will need to be removed from the refrigerator in advance.
- There is no need to shift the flour, otherwise the dough will not rise.
- Yeast dough does not tolerate drafts, so you should start making the pie by closing all the windows.
- To proof yeast dough, you need to choose dishes with high sides, as it will increase in volume a couple of times.
- If you don’t have dry yeast on hand, you can replace it with compressed yeast at the rate of 1 g of dry yeast = 4 g of compressed yeast.
- Dissolve yeast and a teaspoon of sugar in warm milk and place in a warm space. After 10-15 minutes, the milk will foam and increase in volume.
- Beat the egg with the remaining sugar, add salt and warm butter melted until watery.
- Pour in the frothed milk and stir.
- Add sifted flour in small portions. Its quantity is indicated approximately, because Only during the process of kneading the dough may adjustments be necessary. There is no need to knead for a long time. The main thing is that the dough stops sticking to your hands, after which it can be put to proof in a warm space. It can be used for these purposes in an oven previously preheated to 60 C and turned off, or in a space next to a working radiator.
- After about an hour, knead the dough that has risen and increased in volume and leave for another 40-60 minutes.
- After the designated time, knead the dough with your hands again and divide it into two parts: roll out 2/3 with a floured rolling pin for the base, and throw 1/3 for the design of the pie.
- Line a baking pan (preferably a springform pan) with parchment and place the dough rolled out into a thin flat cake. Create small sides.
- Place the apple jam filling and use the remaining dough to create a design to suit your own taste. The squiggles in the shape of roses, as in the photo, look interesting and quite elegant.
- Brush the top of the pie with the egg yolk, beaten with sugar.
Bake a pie with apple jam from yeast dough for about 50-60 minutes in an oven preheated to 180°C.

Nina and Ulyana Tarasova “And we have cookies!”
Pie with apple jam – minimum effort, maximum pleasure
They say that the most comfortable home smell is the smell of pies. It's hard to disagree with this statement. And therefore, baking has been and remains an integral attribute of the home, harmony in the family, peace and tranquility. How nice it is to drink tea with homemade cookies or pies during a family dinner in the evening! If you respect such gatherings, then you probably understand quite a few baking recipes. And no matter what self-respecting housewife is capable of preparing something unusual from ordinary and affordable goods. For example, a pie with apple jam, which you can bake if you don’t have the ability to make a pie with apples.
Note that the recipe for such a pie can be quite different. You can bake this pie from yeast, shortbread, puff pastry and even biscuit dough. Which recipe is your favorite? Choose and cook!
- Twist of frisky yeast dough
- Open pie made from yeast dough
- Shortbread pie with apple jam
Twist of frisky yeast dough
This recipe will amuse you with its simplicity and speed of preparation! And such a frisky pie turns out to be not much that is tasty, but also very attractive. The only condition is that the jam must be made from grated apples. Try to make it - you will definitely love this frisky pie!
- Dry yeast – 1 small packet;
- Unleavened milk - half a glass;
- Margarine for baking – 1 pack;
- Sweet sand – 1 tablespoon;
- Salt - a pinch;
- Flour to a suitable dough mixture;
- Apple jam (jammy);
- Egg for brushing the pie.
Mix the yeast with sugar and dilute it in warm milk. Leave the yeast in a warm place until a foamy cap appears. Meanwhile, put cool margarine in a bowl, add a glass of flour, salt and chop everything into crumbs. In other words, in the end we should end up with a small butter-flour crumb. When the yeast starts to foam, pour it into a bowl with flour and margarine and stir. And now, adding flour evenly (little by little!), knead a stiff but soft dough. The dough should be elastic, not stick to your hands and easy to roll out.
Next, prepare a round mold for the twist, simply greasing it with vegetable oil. Turn on the oven and leave it to warm up to 180-200 degrees. Sprinkle the table with flour, place the dough on it and roll it out into a rectangular layer about 5 mm wide. Grease the dough layer with jam, spreading it moderately over the entire surface. Now roll the dough into a roll and pinch all the edges well.
We take our sausage roll and, rolling it up like a snail, place it in the mold. Leave the dough for about 10 minutes. During this period of time, the dough will have time to rise slightly and the cake will turn out fluffy. Later, brush the top of the pie with beaten egg and put it in the oven. Bake until golden brown. Remove the finished vitushka from the mold, sprinkle with water and cover with a dry, clean towel. Leave under a towel until completely cool. But now you can brew tea and take a sample from the pie!
The jam can be replaced with freshly grated apples.
Open pie made from yeast dough
This recipe is pretty easy too! For such a pie, we will need at least some apple jam. By and large, this open pie is also frisky. True, the yeast dough must be allowed to stand and rise.
- Testicles – 2 pieces;
- Sweet sand – 2-3 tablespoons;
- Milk - half a glass;
- Butter – 2 tablespoons;
- Vegetable oil – 1 tablespoon;
- Dry yeast – 2 teaspoons;
- Salt - a pinch;
- Potato starch – 1 tablespoon;
- Apple jam – 1 glass (approximately);
- Vanillin – a pinch.
Heat the milk, mix with sugar and dissolve yeast in it. You can add a little flour to this mixture so that it becomes a thin mash. Let the yeast rise. When it foams, pour the yeast into a bowl, add raw eggs, salt, vanillin and mix. Now we begin to add the sifted flour, kneading the soft dough. Let it rise for about 30 minutes. Now knead the dough, adding melted and cooled butter mixed with vegetable oil. After this, cover the bowl with the dough with a towel and leave in a warm place for another hour.
When the dough has risen and increased in volume, knead it and place it on a floured table. Grease the baking dish with oil and turn on the oven, which should warm up to 180-200 degrees. Roll out the dough into a layer approximately five to seven mm wide and place it in the mold so that it covers the side and extends beyond its edges. Now we roll the rolling pin along the edge of the mold, trim off all the excess dough and collect it into a ball.
Mix jam with starch. This will give it viscosity and prevent it from leaking out of the cake. Pour the filling into the mold and spread it into an even layer. From the remaining dough we make thin long flagella, simply rolling out pieces of dough between our palms. We place the flagella on the filling in the form of an oblique mesh. We wrap the edge of the dough from the side of the mold onto the pie, forming a border. Brush the pie with beaten egg yolk and place in the oven, where we leave to bake until golden brown.
Carefully remove the finished pie from the mold, sprinkle with water and cover with a towel. When our pie has completely cooled down, you can start eating! By the way, this recipe is completely suitable in this case if you want to make a pie with the freshest apples.
Shortbread pie with apple jam
Another frisky recipe for pie with apple jam. Now we will prepare frisky from shortcrust pastry.
- Wheat flour – 2 or 3 cups;
- Butter margarine or butter – 200 g (pack);
- Chicken eggs – 2 pieces;
- Apple jam – 1 glass;
- Sweet sand – 1 glass;
- Baking powder – 1 teaspoon;
- Vanillin – a pinch.
Melt the margarine and cool.
Sift the flour and mix with baking powder (baking powder). Now add sweet sand, raw eggs and vanillin to the melted margarine and mix everything well. Pour flour into this mixture and knead the dough, which should not be very stiff and elastic. Divide the dough in half and put one part in the freezer, where we leave it for half an hour to an hour. Roll out the second part of the dough into a layer five to seven mm wide and place it on a baking sheet sprinkled with flour.
Place apple jam in an even layer on top of the dough. Grind the frozen dough into crumbs on a grater and pour these crumbs on top of the jam, also leveling this layer. Place the baking sheet with the pie in an oven preheated to 180-200 degrees and bake our frisky pie for approximately 20 5 minutes. That's all! Take it out of the oven, cool it and serve it with tea.
Do you see how you can make a frisky pie with apple jam? Minimum effort – maximum pleasure. Just don’t forget that you need to enjoy cooking. So choose a recipe and cook. Bon appetit and success in the culinary field!
