What is needed for making

  1. Meat: 0.5 kg. The usual recipe involves lamb, but you can also use pork, beef, veal or lean poultry (chicken or turkey).
  2. Rice: 1.5 cups or 320 g. It is better to take steamed, of the highest quality.
  3. Vegetables: 2–3 onions, 1 large carrot or 3 small ones, 2–3 cloves of garlic.
  4. Spices: cumin, saffron, barberry, chili pepper, turmeric, bay leaf, allspice, salt. You can use a ready-made pilaf kit.
  5. The freshest herbs to decorate the dish: dill, parsley, cilantro.
  6. Vegetable oil for frying.

  1. Pour the rice with warm water (up to +60 °C) and leave to swell for 1 hour. This will wash out excess starch from it, which means it will reduce the stickiness of the grains, which will allow the oil and spices to soak the dish even better. Otherwise, the pilaf will turn out slippery and unpleasantly greasy. Do not use boiling water for soaking, otherwise the released starch will remain on the surface of the grains, and they will not cook evenly.
  2. Cut the meat into portions and, if necessary, cut off the films. The pieces should not be very small, otherwise they will dry out during the cooking process. Sprinkle them with spices and leave to soak for 20 minutes.
  3. Pour vegetable oil into a cauldron or deep frying pan and place on low heat.
  4. When the oil is hot, place the meat in a container. It is very important that it is fried until half cooked. It should remain a little raw inside.
  5. Finely chop the onion. Carrots can be grated or cut into long strips. The 2nd method is considered traditional.
  6. Remove the meat from the cauldron and transfer to a baking dish. It can be of any kind: from heat-resistant glass, ceramics, cast iron, etc. You can use a larger container or separate portioned pots. It is recommended to douse the clay mold with hot water before inserting it.
  7. Add carrots and onions to the cauldron remaining on the fire. Fry them until golden brown.
  8. Turn on the oven in advance so that it warms up to 180°C.
  9. Rinse the rice until the water runs clear. Place it in a colander and let it drain a little.
  10. Place the fried vegetables on top of the meat and place the rice in an even layer. Add unpeeled garlic cloves.
  11. Salt the workpiece and add seasonings. Careful not to disturb the layers, pour in boiling water. The water level should be approximately 1.5 cm above the goods.
  12. Cover the pan with a lid, if you have one. Instead of a lid, you can use foil. Place the container in the oven.

The production time for such pilaf is 45–60 minutes. It should be served hot, sprinkled with the freshest herbs if possible.

There is another method for making this dish.

  1. In a cauldron or frying pan, simmer the meat until half cooked. Add carrots and onions.
  2. When there is little water left, add spices, garlic (in this case peeled and chopped) and tomatoes. Simmer them together with other ingredients for a couple of minutes.
  3. After almost all the liquid has evaporated, add sunflower oil to the container and, stirring frequently, fry the food until golden brown.
  4. Place meat and vegetables in a baking dish. Place previously soaked and washed rice on top.
  5. Pour in water so that it covers the rice by 1.5–2 cm and place the pan in the oven. The dish needs to be baked for 1 hour.
  6. After removing the form, carefully stir its contents and add herbs.
