Lent, naturally, is full of prohibitions and restrictions, but this does not mean that during the long weeks of Lent you need to eat only sauerkraut and potatoes with mushrooms. Lenten dishes can and should be savory, bringing satisfaction and even to some extent pleasure - after all, isn’t it a pleasure to taste food prepared with love? And when else, if not on a Saturday or weekday evening, can the whole family get together over a cup of tea and pies? Delicious Lenten pies with apples will attract anyone to the Lenten table.

Preparing Lenten baked goods is not that difficult. The main thing is to know what to replace the testicles with during fasting. Remembering that the eggs in the dough play the role of “glue” and impart richness and moisture to the dough, this ingredient can be virtually painlessly, and in other cases even beneficially, replaced with the most unexpected products. Obviously, if we are talking about a quantity of 1-2 pieces. Here is a list of such substitutes for you:

  • Banana puree. One banana can replace one testicle;
  • Baby puree from jars. Apple, zucchini, etc. One jar – one egg;
  • A tablespoon of corn starch, diluted in a couple of tablespoons of warm water;
  • 2-3 tsp. baking powder (baking powder), mixed with water in the same proportions;
  • Soda and vinegar. Never mix before adding to the dough! Add baking soda to dry ingredients, vinegar to liquid. It is better to take apple or white wine vinegar;
  • Ground flaxseed: You can purchase ready-made flaxseed (from health food stores) or grind it yourself using a coffee grinder. A tablespoon of ground flaxseed should be poured with 2 tablespoons of hot water and wait until the mass turns into some kind of jelly.

When choosing one or another option for replacing eggs in dough for a Lenten pie, remember that these tips are only suitable in this case, when you need to change one or two eggs. If the initial recipe calls for more eggs, this trick won't work.

In general, Russian cuisine is famous for its wonderful Lenten recipes for pies, which initially did not contain any eggs. Lenten pies with apples, the recipes of which we would like to offer you, turn out so fluffy, savory and fragrant that it is not a sin to serve them on the fast day.

Before you start making pies, here are a few more tips:

  • To prevent the apples cut for the inside from darkening, sprinkle them with lemon juice. Better yet, buy a small spray bottle, pour juice or lemon extract into it and “pop” it on the apples;
  • The best combination is apples + cinnamon. For those who do not like this spice, we can recommend ground cardamom, a little ground cloves, nutmeg, lemon zest or, finally, vanillin. Or you don’t have to add anything, the apples themselves are quite fragrant;
  • Open Lenten pies with apples can be decorated with a narrow mesh of dough, and a few ground walnuts can be added to the filling;
  • If the apples are very juicy, sprinkle them with a spoonful of starch, preferably corn starch, it does not have the aroma of potato starch. Stir the apples with starch and sugar and fill the pie - after baking, the apples will release juice and it will thicken;
  • Apples for the inside can be previously blanched in boiling water or stewed in a frying pan;
  • And one more thing: try adding a couple of spoons of cocoa to the dough - it's mind-blowing!

Apple pie tin

Ingredients:
200 g flour,
2 tbsp.
sugar, 120 ml vegetable oil,
70 ml ice water,
1 tsp.
baking powder, a pinch of salt.
For the inside:
3-4 apples,
120-150 g sugar,
½ tsp.
cinnamon or other spices, 2 tbsp. flour.

Preparation:
Mix all the dry ingredients for the dough, make a well in the middle, into which pour a mixture of ice water and vegetable oil. Quickly knead the dough until it sticks to your hands, divide it into two unequal parts, wrap it in cling film and put it in the refrigerator for an hour. Peel and seed the apples, cut into slices and mix with cinnamon and flour. Line a baking pan (round) with baking paper, place a large portion of the dough into it and distribute it over the bottom and sides of the pan. Place the apples in an even layer. Roll out the smallest part of the dough into a circle slightly larger than the shape, cover the filling and pinch the edges. Place the pan in the oven, preheated to 100°C, for an hour.

Pie with apples aspic

Ingredients:
150 g flour,
1 tsp.
baking powder, 100 g sugar,
150 ml water,
50 ml vegetable oil,
3-4 apples,
1 pinch of salt,
vanilla, cinnamon - to taste.

Preparation:
Peel and cut the apples into slices, mix with cinnamon. If the apples are sour, add a little sugar. Grease a mold with sides with vegetable oil. To get a wonderful caramel crust, melt a spoonful of sugar, preferably coffee, in a frying pan until golden brown and pour into the mold. Place the apples. For the dough, mix flour with sugar, salt, baking powder and vanilla, add water and vegetable oil and quickly knead the batter. Pour it over the apples in the mold and place it in the oven, preheated to 180°C, for 30-40 minutes.

Yeast pie

Ingredients:
300 ml water,
1 tsp.
without top of salt, ½ cup.
sugar, 30 ml vegetable oil,
1 packet of dry yeast (or 25 g new),
700-900 g flour (as the dough takes),
vanilla.
For the inside:
4 apples,
3-5 tbsp.
sugar, 1 tsp.
cinnamon, 1 ½ tbsp.
lemon juice, lemon zest - to taste.

Production:
Mix yeast with sugar, dilute in lukewarm water, add a glass of flour and stir until smooth. After 10-15 minutes a foamy cap will appear, which means the yeast has “awakened”. Pour vegetable oil or melted vegetable margarine into the dough, add sugar and vanillin, stir and add flour and salt. Sift the flour, remember? Knead into a soft dough and place in a warm place, covered with a clean towel. Meanwhile, peel and core the apples and cut into small cubes. Add cinnamon, lemon juice and sugar to them, stir. Punch down the risen dough, divide into four parts and roll each into layers about 1 cm wide. Place on any filling, stepping back from the edges a couple of cm. Then roll the layers into ropes, hiding the filling, like in a roll. Pinch the bundles so that the inside does not fall out. Place the strands in pairs, two along, two across, and intertwine them. Then weave the remaining “tails” in the opposite direction and tuck them under the pie. You will get a round braid. Place the pie in a round pan with high sides, greased with butter, brush with strong tea leaves and sugar and place in the oven preheated to 180-200°C for 30 minutes.

Lenten apple pie in a slow cooker

Ingredients:
3 multi-cups flour (or 2 cups regular),
½ cup.
sugar, 1 cup.
boiling water, ½ cup.
vegetable oil, 1 packet of baking powder,
2 apples,
2 tbsp.
honey, 1 tsp.
starch, 50 g raisins,
1 packet of vanilla sugar,
1 tsp.
cinnamon, a pinch of salt.

Production:
Steam the raisins in advance, drain the water, dry, cut the peeled apples into slices and mix the fruit with starch. Prepare the dough: mix sugar, vanilla, cinnamon and honey in a glass of boiling water, add vegetable oil. Constantly stirring with a whisk or mixer, evenly add flour and baking powder to form a homogeneous batter. Place apples and raisins in it and pour into a greased multicooker bowl. Set the “Baking” mode for an hour. If there is a “Multi-cook” program, set the temperature to 150°C. After the signal about the end of the program, unscrew the cake onto the steamer bowl and let cool. Transfer the pie to a plate and sprinkle with sweet powder. To make it absolutely perfect, cover the cake with a piece of tulle or patterns and sprinkle powder over it. Carefully remove the patterns - you will get a pattern on the surface of the pie.

I have great respect for people who truly, with all their hearts, observe Orthodox fasts, humbling their spirit and body. But during Lent you also need to eat tasty food. Therefore, I am painstakingly approaching the compilation of a list of recipes for Lenten dishes, which I would like to convey to you, my dear readers. Lenten apple pies occupy one of the most prominent places in it.

Apple baking is a favorite in our family. During the summer season, apples were born, apparently and invisibly. We dried them, froze them, boiled them and baked lush apple charlotte every week. During Petrov’s Fast, I “invented” a completely decent replacement for her. The recipe will be below. Begin!

Lenten pie with apples - recipes

Lenten yeast pie with apples “Wanderer”

Ingredients

  • 600 g flour.
  • 300 ml water.
  • 120 ml vegetable oil.
  • Two tablespoons of sugar.
  • Half a tablespoon of salt.
  • 7 g dry yeast.
  • 10 g vanilla sugar.
  • 600 g apples.
  • Cinnamon (optional).
  • 2-3 tablespoons of sugar into the filling (you can use sugar to taste).

How to make lean yeast dough for apple pie

The flour should definitely be sifted. I sow the flour directly into a plastic container. Pour the yeast directly into the flour and stir with a spoon. Pour in vegetable oil.

Add vanillin or vanilla sugar (it could have been mixed with flour right away, but I simply forgot about it). Place sugar and salt in a small container, add warm water, stir. Pour the liquid into the flour.

Stir in the middle with your index finger, evenly wrapping the surrounding flour around it. Leave the lumpy mixture to stand for about 5 minutes in this form (cover the container with cling film or place in a plastic bag). After 5 minutes, begin to knead the yeast dough.

Scrape the dough from the edges of the dish into the middle and continue kneading vigorously. Form a ball, cover the container with a lid, leave in a warm place for an hour and a half to rise.

Let's see what we've got, let's crush it. The ball differs significantly in appearance from the initial one. Let's come up again.

Divide the dough that has risen for the second time into two equal parts, rolling each into a layer approximately 5 mm wide. Spread with any apple innards and roll tightly. Intertwine them together, starting from the middle.

How to bake

We put the resulting “wreath” in an ordinary springform pan with a diameter of 22 cm, greased with oil, and place it in a plastic bag. When the cake fills about ¾ of the pan, lightly grease the surface with vegetable oil. Bake in the oven at 200°C for approximately 40 minutes.

In terms of taste and appearance, lean yeast pie with apples is actually not inferior to butter pie!

How to make apple filling

  1. Wash the apples, cut off the skin, remove the cores, and grate them on a large grater.
  2. Simmer over low heat, adding sugar, cinnamon, and cool. If the inside is very watery, then drain some of the water and add a teaspoon of semolina.

  • Lenten apple pie from yeast dough can be created in any shape. I’m preparing a “basket”, because in our family it’s customary to create it this way.
  • Before baking, the surface of the pie can be greased with water and sugar, sprinkled with poppy seeds and sesame seeds.

Lenten jellied pie with apples “Linden Tatin”

Dough ingredients

  • 125 g flour.
  • Two apples.
  • One teaspoon of cinnamon (optional).
  • 170 g sugar.
  • 10 g vanilla sugar.
  • One teaspoon of soda.
  • Half a teaspoon of citric acid.
  • 100 ml vegetable oil.

Ingredients for the inside

  • Four big apples.
  • Four tablespoons of sugar.
  • Two tablespoons of honey.
  • Two tablespoons of dessert wine (cognac, brandy).

How to bake

  1. Peel the washed apples, remove the cores, grate them on a large grater, and mix with cinnamon.
  2. Mix flour with soda and citric acid.
  3. Beat sugar with vegetable oil with a mixer, add grated apples and flour to the mixture, mix well until a fairly thick dough is obtained (like a cake).
  4. Pour sugar into the bottom of a one-piece mold (22 cm in diameter), place slices of peeled apples, pour wine and honey over them.
  5. Fill with dough. Bake for half an hour in an oven preheated to 200°C.
  6. Turn the baked pie onto a wire rack and cool. Eat warm with cool milk or cool with hot tea.

Gascony pie with apples from phyllo dough “Wife's Veil” - a Lenten version of the recipe

The French call this pie “Croustade”. This is the “wife’s veil.” I will not claim that the recipe is authentic. But it came to me exactly in this form. The only thing that distinguishes the “small” version of the pie from the “lenten” one is that the layers of dough are coated not with butter, but with vegetable oil.

Ingredients

  • Eight sheets of phyllo dough (about 300 g).
  • 100 ml of Armagnac (with a measured conscience we replace it with cognac, brandy or other fragrant alcohol - we are not in Gascony).
  • 100 ml vegetable oil.
  • 120 g sugar.
  • One kilogram of apples.
  • Vanillin.

How to cook

    Peel unblemished apples, cut out the centers, and cut into small cubes. Place in a small narrow plastic bag, pour alcohol into it, add a little vanillin. Leave to marinate overnight (that is, the dark time of day). If you are in a big hurry, 2-3 hours will be enough.

The unique recipe involves the use of Armagnac. With a measured conscience, we replace it with cognac, brandy or other fragrant alcohol - we are not in Gascony!

Look into the oven - a crumpled “veil” does not have to fry to death.

My comments

  • If making a “wife’s veil” pie seems very difficult for you, then bake apple strudel from phyllo dough. He's completely lean!
  • “Gag”: some apples can be replaced with pieces of pumpkin and banana.

Lenten pie with apples in the oven: recipe with photos step by step

Ingredients:

  • wheat flour - 2 cups;
  • vegetable oil - 60 g;
  • sweet powder - 0.5 cups;
  • water - 70 g;
  • baking powder - 1 tsp;
  • salt - 1 pinch;
  • apples - 2 pcs.

How to make Lenten apple pie

  1. Sift the wheat flour, baking powder and salt into a bowl.
  2. Make a well in the flour and pour in sunflower oil: preferably refined without aroma.
  3. Rub the flour and butter with your fingers until a greasy crumb forms.
  4. Pour water into the resulting crumbs.
  5. Let's knead the dough. Mix well with your hands until the mixture is smooth and homogeneous. Set aside, cover with a towel, and proceed to the inside.
  6. Wash the apples, peel them, remove the cores and seeds and cut them into medium-sized pieces. It’s better to take soft ones so that they just bake in the oven. If the fruits are hard, then you can simply stew them in a cauldron in a small amount of water. Those. First, evaporate the water from them, and later use them as entrails.
  7. Roll out the dough into a narrow sheet. Place the apples in the center, leaving 2-3 centimeters of free space from the edges. If the apples are sour, then they can be sprinkled with sweet powder. The sweet variety does not need to be sprinkled.
  8. Raise the edges of the dough and cover the apples, placing several folds around the perimeter. You will get an open pie.
  9. Transfer it to a baking sheet. But it will be even more convenient to do all this directly on the baking dish - i.e. transfer only the rolled sheet there, and form the pie on a baking sheet. We put it in the oven. Bake at 180 degrees for approximately 25-30 minutes.
  10. Sprinkle the still warm apple pie with sweet powder. Leave to cool slightly. Even without egg wash, the baked goods will turn out completely golden brown.

We cut it into pieces - the dough came out crumbly, the structure is very similar to shortbread: it crumbles in the mouth into small grains. Load up on sweets even during Lent!

  • dark tea (brewed) – 120 ml;
  • apple – 2 pcs.;
  • sunflower oil – 50 ml;
  • sugar – 1 glass;
  • wheat flour – 2 cups;
  • baking powder – 5 g;
  • salt - a pinch.

How to bake a lean apple pie in a slow cooker

  1. Brew a not very strong tea (about 1/4 tsp of crushed leaves per 120 ml) and leave to cool for 10-15 minutes. After this, strain the tea through a sieve and pour it into a bowl in which we will knead the dough.
  2. Add a little salt and a glass of sweet sand to the still warm tea and mix thoroughly until all the crystals begin to dissolve.
  3. Next add vegetable oil. To prevent the cake from acquiring an uncharacteristic smell, it is better if the vegetable oil is refined, in other words, without taste and aroma.
  4. In a separate bowl, sift the flour with baking powder and add it in parts to the main mixture.
  5. Knead a fairly thick but flowing dough - it will turn out a little thicker than for a sponge cake.
  6. Wash and peel large apples. Then we cut out the core and cut the pulp into large pieces or slices.
  7. Add the pieces directly to the dough and mix gently.
  8. Coat the bottom of the multicooker bowl with vegetable oil. Then we put the dough with apples into it and level the surface. The finer the fruits are cut, the smoother the surface will be.
  9. We set the “Baking” mode, cooking time – 1 hour. After finishing, immediately open the lid of the multicooker so that the cake does not gain moisture, and check it for readiness with a wooden stick or toothpick. It must be dry, otherwise we extend the baking time.
  10. Remove the finished pie using a steam container and leave it directly on it to cool slightly. If you cool the pie on a board or plate, the base of the pie may collect moisture. Before serving, turn the brown side up or simply sprinkle with sweet powder.

Does this tall and fluffy pie look like a dietary pie? That's the same: that the sweet life lasts!

Lenten apple pie with semolina

What we will need:

  • wheat flour – 100 g;
  • semolina – 200 g;
  • sweet sand – 180 g;
  • water – 200 g;
  • cinnamon – 2-3 pinches;
  • vegetable oil – 50 g;
  • apples – 2 pcs.;
  • baking powder - 1.5 tsp.

Baking a Lenten pie with apples and semolina

  1. Pour sweet sand and semolina into a large cup of water at room temperature. Stir with a spoon until it begins to swell.
  2. Pour ground cinnamon and baking powder into the dough for fluffiness. If desired, you can add other fragrant spices to the manna: vanillin, various extracts or ground ginger.
  3. Add vegetable oil and stir until smooth.
  4. Sift the flour into the dough and mix slowly.
  5. The dough comes out without lumps: smooth and slightly viscous. It can be kneaded with a spoon or an ordinary whisk.
  6. Cut the apples into small cubes (you can use slices) and place them on the bottom of a baking dish. Lightly grease the mold with vegetable oil in advance.
  7. Pour the dough over the apples and lightly level the entire surface of the pie. Place in a preheated oven to bake.
  8. At 180-190°, 30-35 minutes will be enough. Manna becomes lush and beautiful in front of the eyes. Choose the degree of browning to your own taste. When the crust appears slightly golden, it’s time to remove the baked goods from the oven.
  9. Let it cool, and only then cut it into portions.

You can brew tea or coffee with this Lenten pie - but certainly without milk, if you strictly adhere to fasting. Any berry juice or compote will also perfectly complement a piece of fragrant apple manna. Bon appetit!
