- If you cook plums for a long time, the skin will turn out to be very soft, and this is important in making jam.
- This dessert can be prepared with or without sugar. But in the second case, you can only keep it in the refrigerator. The less sugar, the cooler the storage space should be.
- The jam can be stored at room temperature if you add at least 50% sugar of the total size of the plums.
- The finished dish must contain no more than 25% water. To achieve this indicator, you must first evaporate the fruits by 50%, and then add sweet sand.
- If jam is prepared for the winter, jars and lids must be sterilized. If you plan to store at room temperature, you must close it with metal lids. If it will be kept in the refrigerator, plastic ones are also suitable.
Fruit preparation
Before you start making jam, you need to properly prepare the plums.
- Sort through and set aside those that are not suitable. Clean suitable ones from dirt, tear off the tails, wash and dry.
- Remove the seeds (according to some recipes they cook with seeds).
Now you can start mastering recipes for making plum jam. These will be options with and without sugar, with syrup, citrus fruits and even in the oven.
Sugarless
According to this recipe, pitted plum jam turns out to be dietary and healthy. It mixes well with cottage cheese, so it can be served with cottage cheese casserole, and it will also be a good inside for pies and huge pies. It will take approximately 3-4 days to produce.
For such a dietary treat, you need to prepare ripe sweet plums. The quantity is taken as desired.
Place the cooked seedless fruits, broken in half, into a saucepan. Place the container on the stove and cook the plums for about 2 hours, stirring constantly. Turn off the gas and leave the pan with the preparation to stand until the next day.
The next day, put the container with the plums on the stove again, bring to a boil, and then cook for another hour, stirring constantly. Then remove the dish from the heat and leave it until the next day.
On the third day, continue to cook the jam, stirring constantly, so that it does not burn, as it will already be thick. Readiness is determined by its thickness: it should not flow out of the jar when it is tilted to a horizontal position. Otherwise, you need to finish cooking it, in other words, cook it for the 4th day.
Place the jam in jars, wait until a film appears on the surface, and after a couple of hours close the lids. Store only in a cool place, for example, in the refrigerator or in the cellar.
Traditional recipe
It is better to cook plum jam with sugar for the winter, as it is easier to store. It comes out thick and is suitable for drinking tea and making sweet pies.
The following products will be required:
- 750 g sweet sand;
- 1 kg plums with pits.
Manufacturing is done in several steps:
- Pass the prepared pitted plums through a meat grinder, add sweet sand, mix well and leave for 30 minutes until the sugar dissolves.
- After half an hour, put the container on low heat. When the plum and sugar boil, cook for about an hour until a thick jam is obtained. During cooking, stir the mixture constantly so that it does not burn.
- Cool the finished jam, put it in sterilized jars and close the lids.
As already written above, the lids can be screw-shaped or nylon.
In syrup
To make such a dessert you will need the following ingredients:
- 1 kg of sweet sand;
- 1 kg of processed plums (pitted);
- 100 ml water.
- Pour water into an enamel bowl and heat it until warm. Then add sugar, stir, and cook thick syrup.
- Place the fruit halves into the syrup and cook for 30 minutes, skimming off the resulting foam from time to time.
- Grind the plums in syrup using a blender and cook for about 40-50 minutes until you get a thick jam.
- Place the hot jam into the prepared jars and close the lids.
Place the items in the pantry for storage.
With lemon
For this recipe you will need sweet Hungarian plum, and lemon juice will be added to obtain a special sourness.
- 2 kg of sweet sand;
- 2 kg of unprocessed plums;
- 100 g water;
- a tablespoon of gelfix;
- 1 lemon.
- Place the prepared plum halves in a container and add 1 kg of sweet sand.
- Squeeze juice from lemon.
- Make a thick syrup from the remaining sugar, lemon juice and water.
- Place the plums, covered with sugar, in the prepared syrup, put on fire and cook for 30 minutes over low heat, stirring constantly.
- Transform the resulting mass into puree using a blender. Continue cooking until thick jam is obtained, stirring constantly.
- Before the end of cooking, add jelly fix.
- Place the finished jam into jars and close.
The thickness must be such that it can be cut.
Recipe for yellowish plum jam for the winter
It is prepared with the addition of orange, so the taste will have unique citrus notes.
- 1 kg yellowish plum (unprocessed);
- half an orange;
- 0.5 glasses of water;
- 1.5 kg of sweet sand.
- Place the processed plum halves into a container.
- In another saucepan, cook syrup from sugar and water: mix the ingredients and put on fire, wait until the sweet crystals are completely dissolved and bring to a boil.
- Pour the syrup into the container with the plum. Place the dishes over low heat and cook for 20 minutes after boiling, skimming off the foam from time to time.
- Squeeze the juice from the orange and finely chop the zest.
- Rub the roasted plum through a sieve and put it back on the fire. Add orange juice and zest to the plum mixture and cook for another 15 minutes.
- Prepare the jars and place them in the finished jam.
Close the jars with lids and store them.
In the oven
You can also make plum jam in the oven. To do this you will need the following ingredients:
- 1 kg of processed plums (pitted);
- 600 g sweet sand;
- ¼ glass of water.
Don’t throw away the plum pits; they will come in handy during the manufacturing process.
- Place 5 plum seeds in fabric bags (The structure of tissues of living organisms is studied by the science of histology) .
- Pour the water into the baking dish.
- Cut the plums into small slices and place in a mold. Place bags of seeds around the plums.
- Place the form in the oven, preheated to 150 degrees.
- Bake for an hour and a half, then remove from the oven, put in a container and cover with sugar. The bones can be thrown away; they are no longer needed.
- When the mold has cooled, wash it with water, dry it, and cover it with parchment. Add the sugar mixture and plums and place in the oven.
- Cook the plums for an hour and a half at 150° C.
Take out the finished jam and cut into slices. Place in jars and close tightly. Store in the pantry.
The amount of sugar in this recipe can be halved, but the cooking time will then increase by one to two hours. Low sugar content products can only be stored in the refrigerator.
