- mix all ingredients;

Roast salad with eggplant
- one large eggplant;
- tomatoes – 2 pcs.;
- fresh oyster mushrooms – 600 – 800 g;
- 4 cloves of garlic;
- onion – 1 pc.;
- olive or vegetable oil.
- cut the eggplant in half or into 4 parts, place in cool salted water for 1 hour to get rid of bitterness;
- then cut it;
- Place the tomatoes in boiling water, then peel the skins and cut into small cubes;
- finely chop onion, garlic, mushrooms;
- sauté the onion for 5 minutes, then add mushrooms and tomatoes to it and fry for another 5 minutes;
- then add the chopped eggplants and simmer over low heat for 15 minutes;
- add garlic and simmer for another 5 minutes.
This warm salad goes perfectly with roast beef.
It should also be said that these mushrooms will be a good ingredient for any meat salad. They mix perfectly with meat and meat dishes. But cooking them with fish is not recommended.
