Step-by-step production
Step 1:
Prepare the necessary ingredients. If the meat is frozen, defrost it by moving it to the bottom shelf of the refrigerator in advance.
Step 2:
Wash the pork, dry it with cardboard towels, remove the veins, cut into random pieces. Peel and wash one medium-sized potato, cut it into 4 parts. Peel the garlic cloves and onions.
Step 3:
Pass the meat through a meat grinder, adding potatoes, onions and garlic.
Step 4:
Wash the carrots thoroughly with a brush under running water. Peel it and grate it on a small grater.
Step 5:
Add the grated carrots to the minced meat.
Step 6:
Carefully rinse the chicken, because even the seemingly clean shell can harbor harmful bacteria. Use food grade detergent and a brush. Beat one egg into the minced meat.
Step 7:
Salt and pepper to taste.
Step 8:
Add breadcrumbs.
Step 9:
Add spices to taste - I used a pinch of nutmeg.
Step 10:
Step 11:
Using wet hands, form the minced meat into round meatballs.
Step 12:
Dip each meatball in flour and place on a cutting board.
Step 13:
Pour vegetable oil with the highest smoke point into the pan. Reheat well. You can recognize that the oil has warmed up quite easily using the usual method. Dip a wood spatula into it, if bubbles gather around it, then you can begin the frying process. Place the meatballs and fry them until light golden brown.
Step 14:
Using a spatula, carefully turn the meatballs over so that they are browned on all sides.
Step 15:
Take a heatproof pan. Place the fried meatballs there.
Step 16:
Prepare the gravy. Peel and chop the garlic cloves with a knife.
Step 17:
Peel the onion and chop finely. To prevent onion juice from irritating the mucous membrane of your eyes, wash it and your knife with cool water. If you grease the cutting board with a piece of lemon, it will not absorb the nasty onion smell.
Step 18:
Place the onion and garlic in a frying pan and fry in the oil that remains from frying the meatballs.
Step 19:
Remove the skins from the tomatoes in their juice, add them to the fried onions and mash them with a fork, adding the juice from the tomatoes. Instead of tomatoes in your juice, you can use homemade tomato juice or 2 tablespoons of tomato paste diluted in 500 ml of water.
Step 20:
Add your favorite spices, I have Provençal herbs. The dish will immediately acquire a completely different taste. If you use ready-made spices for meat dishes, be sure to read the ingredients before use. If the consistency already contains salt, take this into account when adding salt to the sauce, otherwise you risk over-salting.
Step 21:
Add slightly hot reddish ground pepper, it will give the sauce some piquancy.
Step 22:
Simmer the gravy for approximately 5-7 minutes, test to see if there is enough. If you think necessary, add a little salt and sugar.
Step 23:
Pour the tomato sauce over the meatballs and place them in the oven. Bake for about 30 minutes at 180 degrees. To ensure that the oven has time to heat up to the appropriate temperature, turn it on 10-20 minutes before starting cooking.
Step 24:
Serve the meatballs hot. The side dish can be anything, for example, stewed rice, buckwheat, mashed potatoes or pasta. Or just make a vegetable salad. Bon appetit!
Pierce the meat with a knife: if the knife goes in easily and light juice flows, it means it is ready, if the juice is pink or reddish, you need to continue cooking.
Use oil with the highest smoke point for frying!
Any oil is useful only until it reaches a certain temperature - the smoke point, at which the oil begins to glow and toxic substances, including carcinogens, are formed in it. With rare exceptions, unrefined oils have a low smoke point.
They contain a lot of unfiltered organic particles, which quickly begin to glow. Refined oils are more resistant to heat and have a higher smoke point. If you are going to cook food in the oven, frying pan or grill, make sure to use oil with the highest smoke point. The most common of the oils with the highest smoke point are refined varieties of sunflower, olive and grape.
Keep in mind that everyone's oven is different. Temperature and cooking time may vary from those indicated in the recipe. To ensure that any baked dish turns out successful, take advantage of useful information about the features of ovens!

Recipe for juicy meatballs without rice for the oven
In the minced meat for meatballs, instead of rice according to the Swedish recipe, it is customary to add snow-white bread soaked in milk or cream and boiled potatoes grated on a small grater. They also add the classic fried onions and carrots, salt and ground pepper - the base for the meatballs is ready.
Form balls from it, roll them in flour, and place them on a greased baking sheet. Here they are poured with tomato sauce and placed in a hot oven for 40 minutes.
If you previously fry the meatballs in a frying pan until golden brown and only then bake, the dish will have the most pronounced taste.
Tips and advice
For minced meat, it is best to take 2 types of meat - beef and pork; a thin layer of lard will give the meatballs a pleasant juiciness.
The minced meat is divided into small pieces of approximately the same size, given a suitable shape, rolled in flour and laid out on the table.
Before frying, the balls are again rolled in flour. This double breading will make the crust denser and the meatballs will not fall apart in the sauce.
In small batches, the products are placed in a frying pan with hot oil. In this case, the layer of oil should be such that the meatballs are immersed in it by about a quarter, in other words, about 1 cm.
The best side dish for meatballs would be crumbly boiled potatoes, spaghetti, and boiled rice. By the way, this seems unusual for our taste, but in Sweden it is customary to serve lingonberry jam with this dish.
