In addition, unlike an ordinary sponge cake, which you have probably prepared more than once and soaked in syrup or jam so that it is not dry, the angel protein sponge cake comes out surprisingly juicy and pleasant, so you can even eat it just like that, without any... then additives. But, almost always, it is customary to decorate this sponge cake with the lightest snow-white cream, adding only a few new berries to it, so the end result is a sophisticated, weightless white cake, certainly worthy of the holy heavenly creatures.
In my opinion, angel cake is one of the best options for a festive dessert for a hot summer, since it does not contain enough fat and very few calories, and thanks to this it does not make us fat or overload our digestive system. Light sponge cake, airy whipped cream and the freshest ripe fruits and berries - this is a beautiful combination of ingredients to create the perfect low-calorie sweets, which will suit small children, those losing weight, adherents of proper nutrition, and all other gourmands will probably really like it. This unique and very cute cake is prepared without much effort from ordinary and economical goods, but the pleasure that it can bring with its airy mixture and delicate creamy taste is impossible to measure and is completely priceless. How to make an “Angel Food” cake with whipped cream - a recipe for an angel sponge cake with egg whites with step-by-step photos
INGREDIENTS:
- 5 whites from large C-0 eggs
- 50 g sugar
- 1 packet vanilla sugar
- 80 g sweet powder
- 60 g flour
- 350 ml cream 33%
- 1 tbsp. l. sweet powder

1. In order to bake a beautiful white “Angel Food” cake, you first need to knead the sponge cake with egg whites. To do this, the eggs must be divided into whites and yolks very carefully, so that even a drop of yolk does not fall into the white part, while the whites must be placed in the bowl of a food processor or other higher container for whipping. If you have little experience in separating eggs, then I advise you to first strain the white of each subsequent egg not into a common container, but into some separate container, for example, a mug, because if during separation the yolk accidentally gets in, then the dirty white can simply discard, and the overall mixture will not be affected.
2. Next, you need to beat the egg whites very well at the highest speed of a mixer or food processor until you get a compacted foam that forms soft peaks on the surface when you remove the whisk.
3. After this, you need to add regular and vanilla sugar and continue beating until large sparkling peaks that hold their shape perfectly.
Once you get such a compacted and fluffy mass, like in my photo, beating should be finished immediately, otherwise it will be difficult to mix the over-beaten whites with flour and sweet powder. 4. Flour and sweet powder must be mixed and sifted through a sieve, then evenly introduce this mixture into the protein mass, kneading it with a wooden or silicone spatula.
You should not stir for too long, otherwise the proteins may settle, but nevertheless, it is necessary to achieve complete hydration of the dry ingredients. 5. Then the resulting airy dough should be placed in a baking dish and leveled.
For this, either a rectangular cake pan measuring 10 x 20 cm or a small round cake pan with a diameter of 16 - 18 cm is suitable. A very important condition is that the pan must not be greased with oil, because it is absolutely necessary for the dough to stick to it slightly and thanks to it didn't settle before it cooled down. For this reason, we cannot use silicone baking molds to make protein biscuits, but you can take a glass, clay or alloy mold. 6. Bake angel sponge cake in an oven preheated to 180°C for 30 minutes.
During the baking process, the dough may swell and protrude beyond the boundaries of the mold, but once it is completely baked, the fluffy cap will fall off and the top will become flat. 7. The mold with the finished biscuit must be turned upside down, placed on a grid and left in this form until it cools completely for about 1 hour. This procedure is absolutely necessary so that the sponge cake does not crumble or become deformed and, after cooling, remains very airy and beautiful.
8. To remove the biscuit, you first need to run a long narrow knife along the walls of the mold, then hit the bottom of the mold on the table a couple of times, then turn the mold over and shake out the biscuit onto a dish. Next, the white angel sponge cake should be cut lengthwise into three cakes, and it is better to use a serrated bread knife for this, because the sponge cake comes out especially elastic and very tender and simply crumples under an ordinary knife.

9. Now you can create a very light cream that mixes perfectly with this extraordinary protein biscuit.
To do this, beat the cooled heavy cream at the highest speed of the mixer until you obtain a very thick fluffy mass and mix it with the sweet powder with a spoon. 10. Wash and dry the strawberries, then remove the stems and cut into thin slices.
11. When forming the cake, any sponge cake should be generously coated with whipped cream and sandwiched with strawberry slices.
12. After the three cakes are assembled together, the cake should be generously greased with cream on top and sides.
You can decorate the angel cake in any way you wish - in the summer it’s great to use the freshest berries or fruits, and in the winter the cake can be decorated with grated chocolate, ground nuts or special multi-colored sprinkles.
In addition to the berry decoration, I sprinkled the sides of the cake with weightless almond petals, which look very affectionate against a snow-white background and perfectly harmonize the taste with cream and protein biscuit. Enjoy your tea!

Preheat the oven to 175C.
Beat the whites with cream of tartar and salt until stiff peaks form (like meringue), adding the sweet powder evenly.
Add vanillin. Sift the flour, mix with lemon zest and carefully, in 3 additions, mix with the whites. Place in a 25cm (10″) tin, level the surface and bake for 30-45 minutes, checking with a matchstick for doneness.
I baked it in a special form for this cake.
If it is not there, then no matter what non-stick form will do, provided that it has a cylinder-shaped recess in the center (like for cupcakes). This condition is necessary so that the cake is moderately baked from the inside. Allow the finished cake to cool by turning the pan upside down (so that it does not fall off when cooling). Sprinkle with sweet powder and serve.

- Then put the cake back in the oven and bake it for another 20 minutes.
