A delicious recipe for making cod in Polish

There is no point in talking a lot about the healthfulness of cod; it is better to try to cook it. This fish is considered dietary and one of the most delicious. Cod cooked in Polish comes out very tender, and the creamy sauce gives it juiciness and richness.

Recipe for making Polish cod in a frying pan

Ingredients

Cod 800-900 g
Bay leaf 2-3 pcs.
Pepper (peas) taste
Salt 1 tbsp. l.
Carrot 1-2 pcs
Bulb onions 1 PC.
Butter 120 g
Peeled boiled eggs 5 pieces. (for sauce)
Greenery taste
Water 1.5 l (for cooking)

How to choose ingredients

  • When choosing cod, inspect it closely. The freshest fish should have clear eyes and reddish gills. Black gills and cloudy eyes indicate that the fish has been stored for a long time. From time to time they sell hake or pollock under the guise of cod. It is difficult to distinguish them, but it is possible. To do this, examine the scales of cod; they are the smallest. The skin of the fish must be uniform and not damaged. Black spots indicate that the fish has begun to spoil. This is also evidenced by the nasty smell of cod.
  • For this dish, choose high quality butter. Neither margarine nor spread is suitable for making sauce. Natural butter consists only of cream. If it contains vegetable fat, such a product does not have the right to be called butter. Some manufacturers do not list ingredients of plant origin in their composition. But they can be recognized by several signs. Firstly, the oil does not have to be very soft. If you just took it out of the refrigerator, press lightly on the packaging. A high-quality product should not sag. If the oil just creases, it is unnatural. Secondly, the cost may not be very low, because it takes 8 liters to create 200 g of oil. milk. Therefore, the cheapest types are obviously produced with the addition of various impurities, and perhaps even without milk at all.
  • If you buy eggs from a farm, they may not be labeled. And in a store or hypermarket, the labeling is mandatory. It indicates the expiration date and category of the egg, in other words, whether it is dietary or table.
  • The greens should look fresh and should not be contaminated. The uneven color of the leaves indicates that the plants were fed with chemicals.

Step-by-step recipe with photos

Products for making cod with Polish sauce are shown in the photo. You see, they are ordinary and few in number. This allows you to preserve the natural taste of both the fish and the sauce.

Hard-boil the eggs ahead of time. All it takes is 10 minutes, then dip them in cool water and peel off the skin. This sauce looks especially appetizing when homemade eggs with colorful yolks are used.

Flavor the water for making cod with herbs, onions and carrots, and add salt. Bring to a boil, cook for 3 minutes so that the spices give off their own scent.

Prepare the cod fillet: wash it and pat dry with a cardboard towel, and then cut into portions.

Later, lower the fish into the bubbling broth and simmer briefly under the lid at a gentle simmer. 7-10 minutes will be enough for such pieces. Overcooked cod becomes tasteless and dry.

Now let's start making the actual Polish sauce. To do this, chop the eggs using an egg slicer or an ordinary fork. From time to time, when making Polish sauce, a coarse grater is used to grind eggs.

Melt the butter, it is better to add it in parts. Do not boil the butter; you just want it to melt.

Add crushed eggs and finely chopped dill to the melted butter. Pour in a couple of tablespoons of fish broth and heat the mixture until lightly boiling. Now the sauce is ready!

Now add the fish to the sauce and heat everything together briefly so that the flavors of the components penetrate and combine.

Serve the cod with the Polish sauce, adding a little freshly ground pepper.

Cod with Polish sauce is ready! It is appropriate to serve a slice of lemon with the rich sauce and fish and garnish with a sprig of fresh herbs.

How to prepare fish in Polish, steps by step.

  1. Take a pan of water, add pepper, completely peeled onions and carrots, add salt, and let the whole mixture boil.
  2. Cut the cod fillet coarsely.
  3. When the water boils, throw the bay leaves and fish pieces into the pan, cover with a lid, and cook for 10-12 minutes on the lowest heat.
  4. Remove the cod from the broth onto a plate and let cool.
  5. While the seafood is cooling, make the sauce. To do this, peel hard-boiled eggs and grate them on a grater with large divisions. Place the butter in a frying pan, melt it, pour in 5 tablespoons of fish broth (the one in which the cod was cooked), add the grated eggs, stir everything, fry without a lid for almost two to three minutes.
  6. Place the fish in the frying pan in the prepared sauce, distributing the pieces throughout the frying pan. If the pieces were very large, you can cut them into the smallest pieces.
  7. Cover the cod with sauce on top.
  8. Finely chop the greens, sprinkle in the ingredients, turn off the heat, close the lid of the pan and leave for 7 minutes. Everything is ready, you can serve it on the table, placing it on plates in portions. The delicacy is best served hot.
