Not the most sophisticated title, right? However, the delicacy has a delicate taste, reminiscent of an airy soufflé. And thanks to the variety of different molds, instead of ordinary cone-shaped cupcakes, you can bake true culinary masterpieces, turning them into a favorite treat for all family members.
Very satisfying, it is perfectly suitable as an afternoon snack or breakfast; it can be safely served as a treat for tea or simply as a snack on the road. Knowing the basic recipe, you can supplement it with different insides, pour icing or sprinkle with nuts, this will only make the cake better.
You probably can’t wait to cook this deliciousness. We will offer you two recipe options, both of which taste beautiful. Well, write it down.
Cottage cheese and semolina cake
This combination of goods can be found in various dishes: cheesecakes or casserole. But they are all as one, adored by children. In fact, for almost all mothers, this is actually the only method to “shove” cottage cheese into their beloved child. But this delicacy differs significantly from the rest in its lightness and tenderness of taste.
This recipe for semolina muffins consists of the following ingredients:
- Cottage cheese – 400 gr
- Sour cream – 150 g (3-4 tablespoons);
- Testicles – 4 pieces;
- Sugar – 6 tablespoons;
- Semolina – 6 tablespoons;
- Butter – 50 g;
- Vanilla sugar – 5 g (or vanillin on the tip of a knife);
- Baking powder - 2 teaspoons (can be replaced with 1 teaspoon of slaked soda).
Now let's look at the manufacturing process step by step.
- We rub the cottage cheese through a sieve. If you are not a fan of manual labor, then a blender or meat grinder will be completely suitable for these purposes.
- After making the mixture homogeneous, add regular sugar and vanilla, or vanillin. Beat until the sugar dissolves.
- Melt the butter in the microwave or on low heat on the stove and let it cool to room temperature. In order not to stop the process, add one egg at a time to the curd-sugar mixture and mix thoroughly each time.
- Add baking powder and semolina to the acquired consistency, stir, carefully distributing it over the entire size. Then pour in the oil that has cooled by this time and stir again.
- After adding the last ingredient, it is better to let the dough sit for 10-15 minutes so that the semolina begins to swell a little. At this time, you can start preparing the molds, but if you don’t do this, then naturally nothing terrible will happen to your cupcakes.
- The need to prepare the molds depends on the material from which they are made. Silicone molds do not need to be greased or sprinkled, while all others are pre-greased with oil and sprinkled with flour or semolina.
- Place the slightly risen dough into the prepared pans. Try not to fill the mold completely, since during the baking process the dough will not “fit” enough. - Sugar – 100 gr;
- Butter – 80 g;
- Semolina – 200 gr;
- Vanilla sugar – 1 teaspoon;
- Baking powder – 2 teaspoons.
Now let's move on to manufacturing:
- Mix cottage cheese and drink until smooth.
- Beat sugar, vanilla sugar and eggs separately. We do this until the size increases, after which we introduce the curd-kefir mass, while continuing to beat.
- Now add the butter, softened to room temperature, semolina and baking powder. After whipping everything until smooth, let the dough rest for half an hour, after which we put it into molds and put it in the oven.
Baking temperature: 180 degrees.
Baking time: 50-60 minutes.
If desired, you can add raisins, chocolate chips, berries or dried fruits to the base dough. You can decorate the cupcake with chocolate glaze, sweet powder or confectionery powder. But you can be sure that even without all this, it will be eaten simply instantly. Bon appetit!

These include cottage cheese cake with semolina. Perhaps the name of this dish does not seem sophisticated; anyone will like this delicacy because of its delicate taste and airiness. This cupcake can be prepared both for a holiday and for breakfast, because its recipe is quite simple. But knowing how to prepare the main recipe, you can constantly vary this dessert with different insides!
Traditional recipe
Cooking time: 1.5 hours; number of servings: 4; calorie content: 185 kcal
So, for this dish you will need:
- Semolina – 5 tablespoons;
- Cottage cheese – 300-400 g (can be replaced with kefir);
- Sour cream – 150 g;
- Vanillin – 2-3 g;
- Butter – 70 g;
- Testicles – 4 pieces;
- Sugar – 5 tablespoons;
- Baking powder – 2 teaspoons (or 1 teaspoon of slaked soda).
Manufacturing:
- Step 1. First you need to grind the cottage cheese. This can be done manually using a grater, but you can also use a meat grinder or blender. After this, you need to pour sugar, vanillin into the cottage cheese and add sour cream (or a drink), and then beat the whole mass again.
- Step 2. The butter is heated in a frying pan and then cooled. At this time, eggs are broken into the curd mass and beaten until smooth.
- Step 3. When the butter has cooled, pour it into the cottage cheese, and then add baking powder and semolina. After adding the last ingredient, it is recommended to leave the dough for 20-25 minutes so that the semolina swells and the cake itself comes out as airy as possible.

- Semolina – 7-8 tablespoons;
- Butter – 100-150 g;
- Milk or drink – 300 ml;
- Sugar – 200 g;
- Testicles – 6 pcs;
- Vanillin – 5 g;
- Baking powder – 2 teaspoons;
- Raisins - optional.
Manufacturing:
- Step 1. Pour semolina with milk or kefir for half an hour so that it swells well. At this time, you can prepare the main dough: grind the cottage cheese, and then mix it with sugar, flour, vanilla and eggs and beat until smooth.
- Step 2. You need to prepare the butter: melt it in the microwave or over low heat, and after cooling, pour it into the cottage cheese. Mix with semolina, which has swollen by then, add raisins and leave to steep for 15 minutes.

I have already baked many different cottage cheesecakes, with different fillings. I also tried semolina muffins many times, but I caught myself thinking that I had never baked muffins that combined cottage cheese and semolina. Or maybe I baked them once, but I forgot, I’ve made so many of these cupcakes that I can’t count them! In general, I decided to test it and selected the appropriate composition, and also came up with my own proportions. The result was quite amusing, the cupcakes came out very soft and tender - a real pleasure! It is with pleasure that I share my result with you.
To make cottage cheese muffins with semolina, prepare the necessary products from the list.
Place cottage cheese in a bowl, add sugar and vanillin.
Mash the cottage cheese with a fork, mixing with sugar and vanilla, then break the eggs into the mixture.
Using an immersion blender, beat the mixture well.
Next add sour cream and cooled melted butter.
Add semolina and baking powder to the mixture, mix and leave for 15 minutes.
The dough will be medium thick and pourable.
Divide the batter into muffin tins. I really like baking in silicone molds, nothing ever sticks and the cupcakes just jump out of them. You can actually fill it to the top, because the muffins won’t grow much in the oven.
Preheat the oven to 180 degrees and bake the cupcakes for 30-35 minutes. Check the readiness of the curd muffins with semolina with a dry toothpick; there should be no traces left on it.
