Shortcakes are another common choice for homemade cookies. Shortbreads containing cottage cheese turn out crumbly and tasty.
We only need patience to knead, cut, bake. If you want to get the softest products, then you need to roll out the dough thicker. For a crispy result, the dough is rolled out thinner.
We will need such products to make cottage cheese shortcakes.
Pour flour into a bowl, add salt, vanilla sugar and grate butter.
Divide the eggs into whites and yolks. Separately mix cottage cheese, sweet powder (or sugar) and two yolks.
Now combine both consistencies - curd and flour. Knead the dough.
The dough crumbles at first, then comes together perfectly into a ball. You can put it in the refrigerator, wrapped in film, for 15-20 minutes.
Divide the dough into two parts for ease of use. Leave one part in the refrigerator for now, and roll out the second. Dust the rolling table with flour. Cut out shortcakes of random sizes. Choose the thickness yourself, mine is half a centimeter. Then roll out the rest of the dough.
Place the shortcakes on a baking sheet. Brush with whipped egg white (we left 2 pieces) and sprinkle with sugar, sparingly. Bake at 180 degrees until lightly browned, 20 minutes.
The curd shortcakes are ready! Yield: about 30 pcs.
Curd shortcakes
Soft, fragrant and rosy shortcakes made with curd dough will appeal to both children and adults. Shortbreads are prepared quickly; you can easily prepare them from a very small set of ingredients.
Ingredients
- 300 g flour
- 250 g cottage cheese
- 200 g sugar
- 2 testicles
- 100 g butter
- 1 tsp baking powder
Recipe for making a dish at home
- Remove the butter from the refrigerator in advance and leave it for half an hour at room temperature until it becomes very soft.
- Grind the melted butter with a mixer at high speed with sugar until a very fluffy creamy mass is obtained.
- Continuing to beat the buttercream, add the cottage cheese and knead at high speed until a homogeneous mixture is obtained. Beat in the raw eggs one at a time, beating well afterwards.
- Sift the flour through a sieve together with baking powder and mix evenly into the curd and butter mixture, knead into a soft dough that does not stick to your hands. It is better to then wrap it in film and put it in the refrigerator for half an hour.
- Roll out the curd dough on a floured table to 1 cm wide and cut out shortcakes from it using a glass or molds. Place the shortcakes on a baking sheet lined with parchment paper and brush with a thin layer of milk.
- Bake the curd shortcakes for approximately 15 minutes at 200C, remove the baking sheet and leave it for at least 10-15 minutes. Ready-made shortcakes with cottage cheese are delicious both warm and completely cooled. Enjoy your tea!

Cooking steps
Combine butter, cottage cheese, sugar, salt, vanilla sugar in a food processor.
The mass must be homogeneous.
Add the egg, beat again until the sugar dissolves, add soda, stir.
Add flour, knead the dough until smooth.
Add a spoonful of flour to the table, lay out the dough, it will be sticky, gather the dough into a ball and leave it on the table to rest for 5 minutes.
Dust the table with flour and roll out the dough into a layer 1 cm wide.
Cut the dough into three strips, then cut into triangles.
Transfer the shortcakes to a baking sheet sprinkled with flour, brush the shortcakes with beaten egg, and create a sketch with a fork.
Bake for about 20 minutes in an oven preheated to 180°C.

Cottage cheese shortcakes were very popular among housewives a few 10 years ago, but over time, this ordinary, but very tasty pastry lost its relevance and was supplanted by almost all other most fashionable recipes. Every housewife previously had a recipe for cottage cheese shortcakes, and each one prepared them differently. The most popular were cottage cheese shortcakes without butter, on kefir, in a frying pan, without eggs.
Now I would like to offer you a regular recipe for cottage cheese shortcakes, which turn out soft, fragrant and fluffy. If you have cottage cheese in the refrigerator and also have little free time, then I advise you to use this recipe and prepare a tasty addition for home tea for your household.

Curd shortcakes - recipe
After all the ingredients have been prepared, you can begin making the curd shortcakes. Place the cottage cheese in a bowl.
Add a packet of vanillin or vanilla sugar to it for flavor.
Add sour cream. I use sour cream with 20% fat content.
Take an immersion blender and blend all these ingredients until the cookies are smooth.
Pour in refined sunflower oil.
Stir the mixture for the curd shortcakes with a whisk. Add baking soda.
Stir again. Be sure to sift the flour through a sieve before adding it to the dough. After this procedure, it will be enriched with oxygen and baked goods with it will turn out to be more fluffy. Pour the flour into the dough base evenly, stirring each time before adding it.
Finally, knead the dough with your hands.
Sprinkle the table with flour. Roll out the curd dough for shortbreads into an even layer using a rolling pin. Cut out cookies using special cookie cutters. You can also use muffin tins for these purposes.
Grease the baking sheet on which you will bake the curd cakes with sunflower oil or sprinkle with flour. Lay out the shortbreads in rows. During baking, the shortcakes grow in size, so try to place them at a certain distance.
Place in the oven preheated to 180 degrees. Bake the curd shortcakes for about 15 minutes at this temperature. As soon as they noticeably grow in height and become ruddy, we can consider that they are ready.
Transfer them to a plate and let cool. Curd shortcakes, like other types of shortcakes, can also be topped with chocolate fudge, icing, or eggless glaze with gelatin.
