How to Create Waffle Batter

Soft waffles are puffy waffles of square or round shape, which are prepared from dough with the addition of baking powder. Viennese waffles are considered a classic.

If the recipe contains butter, then it needs to be melted in a water bath. Baking with melted butter acquires a delicate taste and porosity.

To melt butter in a water bath, you will need:

  • plate;
  • 2 pans: larger and much smaller.

Place the oil in the smallest container and place it in a large pot of bubbling water. Stirring the butter constantly, melt it.

Eggs are constantly added to the dough using a special method. The yolks are separated from the whites and added to the dough immediately. The whites are whipped to peaks and added at the end: small air bubbles make the baked goods light and fluffy. If you do not separate the whites from the yolks or add them at the beginning, the waffles may turn out rubbery.

If the recipe contains a drink, milk or sour cream, then they are added penultimately, before the whipped egg whites.

All ingredients without whipped whites must be thoroughly stirred with a mixer in a deep bowl until a homogeneous mass without lumps is obtained. When the whites are added, the dough is mixed only by hand. The mixture should resemble sour cream and be a little thicker than pancake batter.

How to cook Viennese and other soft waffles

Grease the waffle iron plates with vegetable oil and heat the device. Focus on the light indicator: when the waffle iron is ready for use, the green light will light up.

Place 2 tablespoons of dough on each plate. No more is needed, otherwise it will spill out around the edges. If you use less, the waffles will turn out very small.
