For the inside. Combine 500 gr. cottage cheese, 100 gr. sugar, a pinch of salt, 10 grams of vanilla sugar and 3 eggs. Mix with a blender into a homogeneous mass.
For the baby. K 350 gr. add 130 grams of sifted flour. cool chopped (or grated) butter, 80 gr. sugar and 1 pinch of salt. Mix. Grind into crumbs.
Place a large portion of the crumbs into a 20 cm diameter pan lined with parchment. Compact and form sides. Place the curd filling. Sprinkle the remaining crumbs on top.
Bake in an oven preheated to 180°C for 45-50 minutes.
Release from the mold.

In appearance, the royal (or it is also called royal) cheesecake does not look like an ordinary cheesecake, common to everyone, but is more reminiscent of a grated pie with a tender curd soufflé in the middle. The pie is very tasty, and the sweet crispy crumb on top will not leave anyone indifferent. Children especially like this type of baking, even those who are not very fond of cottage cheese.
Prepare the necessary products.
To make the dough, mix flour with sugar, soda and margarine. Grind everything with your hands until you get small crumbs. You can grate the margarine ahead of time, or you can just chop it. The margarine should be perfectly frozen.
Pour approximately 2/3 of the shortbread crumbs into the baking dish and smooth it out with your hands so that the cake has a bottom and small sides. You can take any baking form. My form size is 25x35. Can be baked in a frying pan or in a cake pan.
To make the inside, mix cottage cheese with sugar, eggs, salt, soda and vanilla. Stir well.
Pour the curd filling into the baking dish on top of the dough.
Sprinkle the rest of the shortbread crumbs on top of the filling.
Place the pan with the royal cheesecake in a preheated oven and bake for 35-40 minutes at 200 degrees. Then remove the pan from the oven and let the cheesecake cool.
Cut the cooled royal cheesecake into portions and serve.

But the royal cheesecake is a completely different matter. Unlike the ordinary one, which is an open flatbread with curd inside, the traditional Tsarskaya has a very tender taste - cottage cheese with eggs and sugar is melted into a typical soufflé, covered on top and bottom with a delicious, crispy crust of shortbread crumbs. It is cooked in the oven and comes out indescribably tender and delicious.
Almost all children eat the filling from a regular cheesecake, leaving the “crust” - the dough. If you offer them the royal one, rest assured, not a crumb will be left on the plate. Step-by-step recipe for royal cheesecake with cottage cheese in the oven
To make it you will need cottage cheese, sugar, eggs, flour, butter, salt, soda, vanillin.
Preparing shortbread crumbs for the dough. To do this, rub with your hands 1.5 cups of flour, 0.5 cups of sugar and 100 grams of butter.
Distribute 2/3 of the resulting crumbs moderately over the baking dish, pressing it with your hands and making a dense layer. Also, do not forget to form a side, 1-2 cm high.
Prepare the filling: 500 g of cottage cheese, 1 glass of sugar, 4 eggs, 1⁄2 teaspoon of salt, 1⁄2 teaspoon of soda and 1 pinch of vanilla, mix until smooth. If desired, you can grind the cottage cheese through a sieve. The inside of the mixture should turn out like sour cream.
Pour the resulting filling into the mold with the crumbs.
Sprinkle the remaining shortbread crumbs sparingly over the filling.

A delicious homemade pie with cottage cheese, recognizable as royal cheesecake, is very simple to prepare. In this case, usually, even beginners do not have any difficulties. Almost ordinary shortbread dough, very common in production. For the inside, homemade cottage cheese, sour cream and eggs are used. In fact, that’s all, there is nothing complicated; from the desire to bake an unusual delicacy to the finished pie it takes just an hour.
Cheesecakes, which came from ancient Slavic cuisines, are an open pie or pie. Usually, they are round, pinched only on the sides. The inside is almost always cottage cheese with various additives. Cheesecakes are baked from yeast, butter, and shortbread dough. I read somewhere that the name of the baked goods came from the word “vatra” - fire.
By and large, cheesecake in a royal style is not sufficiently different from the usual and simply recognizable pastry - cheesecake with cottage cheese, which is made from yeast dough. The inside is actually similar, the only difference is the baking. We prepare shortcrust pastry, almost the same as for quiche pie. We grate some of it to sprinkle on the cottage cheese. It’s amazing that the inside of the royal cheesecake is prepared quite watery. During the baking process, it “sets” due to the presence of egg white, and further hardens as the baked goods cool. Homemade cottage cheese is ideal, but you need to keep in mind that it can be fatty. It is better to choose “grainy” cottage cheese with low fat content from store-bought cottage cheese.
The pie can be eaten warm or allowed to cool. It will be just as tasty on the second day. The taste of baked goods is especially excellent when mixed with warm milk or cocoa. By the way, if you wish, you can add a little cocoa powder to the batch, this will change the taste, and the light interior will look great in the darkest crust. At one point I saw how the finished baked goods were sprinkled with grated chocolate.

- At the very beginning I prepare the dough. While the oven is heating up and the inside is mixed, the shortbread dough has time to cool slightly and become dense. Sift the wheat flour into a large bowl, add half the sugar and a pinch of salt. Stir the mixture with a fork until all ingredients are distributed. Separate one egg yolk from the white and add it to the flour. Soften the butter. Knead everything.
