Nina and Ulyana Tarasova “And we have cookies!”

Useful as porridge. Oatmeal cookies without flour

The right candidate for wheat is oats. Oatmeal is rich in B vitamins, complex carbohydrates, and soluble fiber. Oatmeal also contains minerals: zinc, magnesium, phosphorus. Special substances found in oats - beta-glucans - lower the level of cholesterol (Insoluble in water, soluble in fats and organic solvents.) in the blood (the internal environment of the human and animal body) , but not just any cholesterol, but “disgusting”.

Interestingly, oats do not contain gluten. The problem lies in the impurities of wheat and rye, which, according to the standard, can contain up to 5% in cereals. Therefore, people with severe gluten intolerance must avoid healthy grains.

About usefulness

From my youth, the familiar oatmeal cookies were usually made with a large amount of wheat flour in the composition, with health-threatening amounts of fat and sugar.

Dietary nutrition involves recipes that limit or eliminate disease additives. How to make delicious cookies without unknown ingredients?

Oatmeal is available on sale, but the cost is unpleasantly surprising, because oatmeal is an affordable raw material. You can save money by making your own oatmeal flour. Simply grind the oatmeal in a food processor. The result will be fairly coarsely ground flour, but for the production of cookies this option is even better than finely ground flour: the baked goods will be the most crumbly.

Homemade cookies differ profitably from store-bought cookies. There will be no hydrogenated fats, and sugar and wheat flour will either be excluded or added in reasonable quantities.

Flourless oatmeal cookies can be a healthy substitute for breakfast cereals and ready-made cereals. Complex carbohydrates provide a permanent feeling of satiety without causing sudden surges in blood sugar (the internal environment of the human and animal body) . Kids eat cookies more readily than boring porridge, so the breakfast problem will be solved. You will need a couple of homemade cookies for a snack and for tea.

Oatmeal cookies will keep in the kitchen cabinet for 5-7 days, so you can bake the treat for the week ahead.

Recipes

These cookies are prepared according to various recipes in the most or least identical way: whole or ground flakes are mixed with the other ingredients. Usually, oatmeal cookie dough does not require rolling out with a rolling pin: the products are molded by hand or simply laid out with a spoon.

Recommendation! It is better to choose a baking tray with a non-stick coating or place oiled paper on it.

ordinary

Ingredients:

  • oat flakes 120 g;
  • butter 100 g;
  • sugar 100 g;
  • yolk 1 pc.;
  • baking powder for dough 1 tsp. no slide.

How to cook:

  1. Chop the oatmeal in a food processor until small pieces come out.
  2. Add the remaining ingredients and mix with the blades of a food processor.
  3. Make balls, flatten them slightly and place them on a baking sheet at the appropriate distance from each other.
  4. Bake at a temperature of 180-200 degrees Celsius. 10-15 minutes is enough.

With honey

Ingredients:

  • oatmeal 1.5 tbsp;
  • oatmeal 1.5 tbsp;
  • sugar 1 tbsp;
  • egg 1 pc.;
  • butter 200 g;
  • watery honey 1 tbsp;
  • baking soda 0.5 tsp;
  • baking powder for dough 0.5 tsp;
  • salt, cinnamon, vanillin, cardamom on the tip of a knife.

How to cook:

  1. Place the butter on the table 2-3 hours before making cookies.
  2. Beat the butter and sugar into a fluffy foam, pour in the egg and honey, and mix with a mixer.
  3. Separately, thoroughly mix all dry ingredients. Knead the dough with a spoon.
  4. Form the dough into balls the size of a ping pong ball, flatten slightly and place on a baking sheet, leaving space between the cookies.
  5. Bake at 180 degrees Celsius until golden brown (10-15 minutes).

No eggs

This recipe is amazingly simple. The dough is mixed with a spoon, and spooned onto a baking sheet. You can make a mountain of cookies without getting your hands dirty!

Ingredients:

  • oat flakes 270 g;
  • sugar 120 g;
  • butter 120 g;
  • honey 20 g;
  • water 2-3 tbsp.,
  • baking soda 0.5 tsp;
  • baking powder for dough 1 tsp. without slide;
  • salt, vanillin, cinnamon on the tip of a knife.

How to cook:

  1. Grind 150 g of oatmeal in a food processor until it becomes flour. Mix oatmeal, oat flakes and sugar.
  2. Place other products in a saucepan and heat on the stove, stirring. The contents of the pan will foam; for this option, you need to choose dishes with supplies.
  3. Knead the ingredients with a spoon, place the future sweets on a baking sheet, leaving space between the products and bake at a temperature of 180 degrees Celsius for 10 minutes, until they are covered with a golden brown crust.

Fundamentally! The vegetarian version of cookies is prepared without butter - it is replaced with coconut oil.

With banana

Banana successfully replaces eggs and sugar in baking. The basic recipe for dietary banana-oatmeal cookies without flour is primitive.

Ingredients:

  • banana 1 pc.;
  • oatmeal 1 tbsp.

The banana needs to be large and very ripe. Its skin will turn brown, and the flesh will become honey-colored and translucent. An overripe banana is difficult to peel and falls apart. It is better to cut the skin and pull out the pulp.

How to cook:

  1. Prepare the dough by kneading the cereal with the banana.
  2. Place the blanks on a baking sheet and brown at a temperature of 180 degrees Celsius until ready, or add chopped dried fruits, coconut flakes, and chocolate drops to the dough in advance.

Unsweetened but tasty

These cookies have an intriguing nutty flavor and are made without flour, eggs or sugar.

Ingredients:

  • oat flakes 160 g;
  • butter 60 g;
  • salt 0.5 tsp;
  • baking powder for dough 0.5 tsp. without slide;
  • boiling water 60 ml.

How to cook:

  1. In a dry frying pan, lightly fry the flakes until they begin to emit a mind-blowing nutty smell. Grind the cooled flakes in a food processor.
  2. Add oil, salt and baking powder and chop with knives in a food processor. Pour in boiling water. Here comes the dough!
  3. All that remains is to make balls with a diameter of 5-7 cm from the dough, flatten them a little and place them on a baking sheet, not forgetting to leave space between the cookies. Bake at a temperature of 180 degrees Celsius, possibly with fan mode, for 20-30 minutes.

Summary

Making oatmeal cookies without flour is not difficult. Healthy food is prepared from everyday cheap goods.

Thanks to its neutral taste, oat flakes fit well into both sweet and savory sweet options. Adding dried fruits, honey, and spices allows you to create cookies with different flavors.

Flourless oatmeal cookies can be served with tea and coffee, juice and milk, yogurt and kefir, and unsweetened oatmeal cookies can be served with broth or puree soup.
