How to make cheesecakes with cottage cheese from puff pastry

  1. Remove the finished dough from the freezer and place any piece on a kitchen board lightly sprinkled with flour. Leave to defrost for 20 minutes.
  2. Without rolling, use culinary rings of various shapes to squeeze out circles approximately 10 cm in diameter (less is possible). This can also be created using a glass or mug. In half of the circles, remove the middle, squeezing out a circle of the smallest shape, thereby leaving a rim. I also made cheesecakes from the smallest circles.
  3. Break one egg and separate the white from the yolk. Brush the circumference of the whole circles with egg white and place the cut out rim on top, forming sides.
  4. For the inside, take cottage cheese, mash with a fork, add 1 egg and sugar.
  5. Stir until smooth.
  6. Place the cheesecake blanks on a baking sheet lined with parchment.
  7. Place the curd filling in the middle.
  8. Brush the top with egg yolk and lightly sprinkle with sugar.
  9. Preheat the oven to 190 degrees. Bake for 30 minutes.

Regular baked goods with cottage cheese filling are ready. Serve warm or cool with tea or milk.

  • puff pastry dough – 250 g;
  • cottage cheese – 130 g;
  • curd mass with raisins – 50 g;
  • lemon zest – 1 tbsp. l.;
  • orange zest – 1 tbsp. l.;
  • egg – 1 for filling + 1 for greasing;
  • sugar – 1 tbsp. l.;
  • cinnamon – 1 tsp;
  • cardamom – 0.5 tsp;
  • sweet powder – 2 tsp;
  • flour for sprinkling - 1 tbsp. l.

How to prepare puff cheesecakes boats

  1. Wash citrus fruits in warm water, scald and wipe. Remove a thin layer of zest using a special knife.
  2. Place cottage cheese, sugar, curd mass and egg in a bowl. Mix the ingredients with a fork.
  3. Add cardamom and cinnamon, add lemon and orange zest. Mix the filling until smooth.
  4. Thaw the finished yeast dough at room temperature under a towel.
  5. Spray a little flour onto a hard surface and roll out the dough to a thickness of 2 – 3 mm. It is necessary to roll out in one direction so as not to spoil the puff texture. Cut any layer into three parts to make squares.
  6. Place a tablespoon of entrails in the middle of the square.
  7. Create tucks in the corners as in the photo.
  8. Fold the corners in pairs and form “boats”. Secure the edges - for reliability, the dough can be lightly greased with water. Leave to rise under a towel for 20 minutes.
  9. Line a baking tray with parchment and place future cheesecakes. Brush them on all sides with beaten egg. Bake until golden brown at 190 degrees for about 20 minutes.

Cool the products and sprinkle with sweet powder. Decorate the boats with cherries and serve.

Nowadays, not every housewife can spend enough free time to realize her own culinary fantasies. It is in such cases that semi-finished products, for example, puff pastry, always come to the rescue. It can also be used to bake equally delicious and quite unique puff cheesecakes, although not in a completely ordinary shape for this flour product. We will share with you a unique cut of puff pastry that is perfectly suitable for making puff cheesecakes, regardless of the filling.

Ingredients for making puff cheesecakes (for 6 pcs.):

  • puff pastry without yeast – 200-250 g
  • cottage cheese – 150 g
  • egg – 1 pc.
  • sugar – ¼ cup
  • raisins - optional

Recipe for making puff cheesecakes:

Roll out a plate of defrosted puff pastry into a rectangular layer 4 mm wide.

Cut it into 6 squares with a knife.

Combine the two opposite corners of the square, thus folding it in half.

Create two cuts along the edges, not reaching the corner, as shown in the photo.

Straighten the square, brush the edges with egg white (previously divide the egg into white and yolk).

Place the notched corner on the reverse edge, as in the photo.

Do the same with the reverse side. What comes out is this simple cheesecake.

Grind cottage cheese with sugar and egg yolk. Add raisins if desired.

Place a spoonful of curd mixture on each puff pastry.
