Vanilla raisin muffins

Recipe for vanilla raisin muffins:

Carefully wash the raisins with water a couple of times, then pour boiling water over them and let them swell for 10-15 minutes. Later, drain in a colander, drain and let dry.

Meanwhile, carefully separate the egg yolks from the whites. Place the egg whites in the refrigerator while making the dough.

Cut softened butter (margarine) at room temperature into small cubes and combine with sugar. Cream the butter and sugar with a spoon.

Then add the egg yolks to the sugar-butter mixture one at a time and mix well each time.

When all the yolks have been added, the mass should become more watery, homogeneous and acquire a bright yellow color.

Add vanilla sugar to the mixture and mix again.

Mix flour with baking powder and sift everything together through a sieve. Add flour to the main mixture in portions, carefully stirring the dough each time.

As a result, the dough should be quite dense. Place it in the refrigerator for 10-15 minutes.

At this time, beat the chilled egg whites with a mixer into a strong, stable foam.

When the dough has cooled enough, fold in the beaten egg whites. The mixture will begin to resemble thick, fatty sour cream.

Place the prepared raisins into the bowl with the dough and stir well.

Grease a muffin pan with butter and sprinkle with breadcrumbs or semolina (or simply use paper molds). Place the dough into the molds.

Bake raisin muffins in an oven preheated to 180 degrees for about 25 minutes.

Allow the baked goods to cool slightly, remove from the pan and, if desired, sprinkle with sweet powder.

I have a traditional one for muffins and a dog.
It’s convenient if you have paper molds, but I ran out of them, so I put them specifically in silicone ones, having previously greased them with vegetable oil. Place in a preheated oven and bake for 25 minutes at 180 degrees.
