Making dough

  1. Pour warm water (100 ml) into a comfortable deep bowl, the temperature of which should be from 35° to 39°. If you use hot water, the yeast bacteria will die.
  2. Add crushed fresh yeast (25 g), sugar (1 tbsp) and mix well to form a homogeneous watery mass. Add flour (50 g) to the dough and mix the ingredients well again.
  3. Cover the bowl with a clean kitchen towel and place the bowl in a warm space for 15-20 minutes until the dough fits well.

Making the dough

  1. Pour warm milk (90 ml), salt (1 tsp), chicken eggs (2 pcs.), flour (150 g), melted butter (60 g) into the prepared dough and mix everything well.
  2. Next, you need to add the remaining flour (300 g) in small quantities and knead the dough. When it becomes thick, place the dough on a work surface previously sprinkled with flour and continue kneading the dough with your hands. The finished base should be soft and elastic. Place the dough in a deep bowl, cover it with a lid and place in a warm place for about 60 minutes.

Preparing the inside

  1. Peel small onion heads (2 pcs.), wash in water, finely chop and add to the minced meat. In this case, the finished baked goods will be juicy. You can also grind everything in a blender.
  2. Beat a chicken egg (1 piece) into a small bowl, stir it with a fork and add half of it to the meat. The remaining half will be used to grease the pies. Add salt (0.5 tsp), pepper to taste and mix well.

Forming and baking pies

  1. When the dough has risen, you need to put it back on the work surface and stir again. You can add flour, but not enough. It is better to lubricate your hands with vegetable oil (1 tbsp will be enough). Divide the finished dough into equal parts (approximately 15 pieces) and create balls. Knead any ball with your hands into a small flat cake. Place the meat filling in the middle of each flatbread, pinch the edges on top, like dumplings, and smooth out the seam to create a perfect shape.
  2. Cover a baking sheet with parchment paper, lay out the pies, cover the top with a regular or cardboard towel and leave for 30 minutes.
  3. Next, brush the top of any pie with egg yolk, place in the oven, preheated to 190°C, and bake for 20-25 minutes.

3) Mix the dry ingredients into the watery ones in small parts. Knead a soft, sticky dough. Cover with cling film and leave to rise for 1-1.5 hours.

4) Cut the tomatoes crosswise and pour boiling water for 5-7 minutes. Then peel the tomatoes. Grind tomatoes, onions, sweet peppers in a blender. In a bowl, combine chopped onion, bell pepper and tomato, ground beef, salt, dark ground pepper, hot paprika and tomato paste. Mix everything well.

5) Divide the minced meat into 16 parts. The weight of a piece of minced meat is 55-60 g.

6) Knead the risen dough slightly and divide into 16 equal parts. Round each part. The dough pieces came out weighing 110-115 grams. Cover with cling film to prevent it from airing.

7) Roll out a piece of dough with a rolling pin with a diameter of 15 cm. Distribute the minced meat in the center along a width of 5-6 cm.
