This year we were moving to Bukovel and stopped to spend the night in Lviv, in the center on Rynok Square there is a small bakery-cafe “Lvivskie Plyatski”, so right here they prepare for you apple and cherry strudels, with chicken and fish with spinach, and two types of cheesecakes. Cherry strudel is simply amazing. And the cost is only 19 UAH. for 100 gr. This is not for advertising purposes, because we live in another part of Ukraine, but no matter how many times I’m in Lviv, I will constantly visit this bakery.

Last year, on a business trip to Moscow, I stayed at the Globus Hotel, just behind Cosmos, the rooms are ordinary. cost too. In the morning we came to the restaurant for breakfast. but they couldn’t order anything other than bacon and eggs. because the cook comes to work at a certain time. There was a lot of time before the plane, and we could have been hungry 5 times - despite all this. it was necessary to check out of the hotel. I ordered cherry strudel with ice cream! That was magic! ,I tried strudel in Rostov-on-Don, but how can it be compared? Firstly, the taste, secondly, the size of the dish. If you don’t know how to do better, don’t translate the products. and in Moscow the Globus is simply classy - I STILL REMEMBER WITH DELIGHT!

Strudel is absolutely a parable. and in Prague it is simply beautiful in any area of the city..

Oh, I’ll never forget what kind of strudel I had to experience in Prague. My mother! Here and there in the Vinohrady area, in one of the entrances of an ordinary nine-story building, there was a tiny stall, also known as a bakery, where a fairly young man rolled out and baked strudels the size of suckling pigs. How delicious it was! I've never tried anything like this again.

  • There is no need to add more flour to the dough than indicated in the recipe. If it sticks to your hands, then you just need to knead it longer, greasing your hands and table with vegetable oil;
  • A bread maker can make making dough easier. To do this, all ingredients must be placed in its bowl and kneaded using the “Pizza”, “Dumplings” or similar modes;
  • Heat and proofing help the gluten to swell well, so the dough does not tear when stretched. You can defrost it by placing it in a hot pan;
  • It is necessary to stretch the dough slowly and very carefully so that it does not tear. If a gap has formed, do not start the pulling process again. This will make the dough hard. You can simply cut a piece from the edge and seal the hole with it.

Regular and delicious strudel with cherries

Strudel is an incredibly delicious pastry. The dough is thin, the insides are even smaller: how could a dessert be the most successful? Well, among the entrails, the cherry one certainly takes precedence, although they bake strudels with apples, cottage cheese, and salty fillings like ham, cheese and spinach. Cherry strudel is absolutely easy to prepare: here is the most delicious step-by-step recipe with photos.

Ingredients:

  • flour – 200 g;
  • water – 150 ml;
  • vegetable oil – 2 tbsp;
  • salt - a pinch;
  • breadcrumbs – 50 g;
  • cherries – 500 g (at the time of weighing – with pits);
  • butter – 50 g;
  • sugar – 150 g.

Additional equipment you will need is a baking sheet and parchment, a rolling pin, a whisk for brushing with melted butter, a device for removing pits from cherries, cling film or a regular bag for storing dough.

How to make strudel with cherries

First, prepare the dough: once it has risen, you will have time to prepare the cherries. So, sift the flour over a bowl, add a pinch of salt and stir.

Then stir the vegetable oil into the flour with a spoon.

Add water little by little and knead until the dough is smooth. If the dough comes out very liquid, which is impossible to knead with your hands, add a little more flour. The mass may slightly stick to your hands - it must remain gentle and flexible. To avoid sticking, apply a little vegetable oil to your hands.

Form a bun from the tender dough and place it in a bag or cling film. Keep the mixture warm: this type of dough does not need to be refrigerated. On the contrary, after standing for an hour in a warm place, it will become more flexible and will roll out perfectly in the future.

While the dough is proofing, wash the cherries and remove them from their pits. This can be done either with a special device, a pistol, or manually. Both options will take approximately the same amount of time.

If an hour has already passed, melt the butter in a small bowl. Line the sheet with parchment and brush it sparingly with melted butter. Roll out the dough into a rectangle, place it on parchment paper and grease the entire dough with oil, not counting the sides (they will need to be pinched later).

Spread the cherries over the entire rectangle of dough, not counting the sides, quickly sprinkle with sugar (it is necessary to form the strudel before the cherries release their juice), and cover with a thin layer of croutons on top. Breadcrumbs are necessary to retain the cherry juice inside the strudel and prevent it from leaking out of the baked goods.

Wrap the dough into a roll, pinch its edges and turn the strudel over so that the “ribbed edge” of the dough is on the bottom. Make punctures in the upper part of the strudel with a fork so that the dough does not puff up during baking, and brush it with melted butter on all accessible sides.

Preheat the oven (180 degrees is suitable) and place the strudel in it for half an hour. During this period of time, remove the baked goods from the oven a couple more times and brush with melted butter. The fat will seep into the dough and make it softer and more delicious.

Strudel with cherries is ready! It is best to prepare it in the evening, and then cool it and overnight (that is, at night) . During this period of time it will be soaked and become simply amazingly tasty!
