Draniki are a common, but very filling and tasty dish, which is quite popular on the daily menu of almost all families. They are prepared from raw potatoes and look like pancakes or cutlets.

For flavor contrast, potato pancakes are often supplemented with other components. Products with the addition of champignons are very tasty. Before mixing with potatoes, mushrooms are fried in oil with onions, so the potato pancakes are the most fragrant and juicy.

Potato pancakes are served immediately after production, but they are just as appetizing when cool. They are usually eaten as a snack with thick sour cream, but it will be much tastier if you prepare a sauce based on it yourself.

Ingredients

  • Raw potatoes: 400 g
  • Champignons: 150 g
  • Bow: 1 pc.
  • Garlic: 1-2 cloves
  • Testicle: 1 pc.
  • Flour: 1 tbsp. l.
  • Salt, pepper: to taste
  • Dill: 30 g
  • Oil: for frying

Finely chop the peeled onion. Heat a frying pan with 2 tbsp. l. oil and fry the onion until soft and light golden brown.

Meanwhile, prepare the mushrooms - rinse and cut into medium-sized pieces. Move the sautéed onions to one side of the pan and place the champignons on an empty surface.

For the first 3 minutes, evaporate the released juice. When there is no more water in the pan, you can add a little more oil. Stir the mushrooms with the onions and fry together over medium heat for about 2 minutes. Season the mixture a little with salt and cool completely.

Remove the skin from the potato tubers with a vegetable peeler, wash thoroughly, and grate using a grater with small holes.

Sprinkle the potato mixture with salt so that it releases the juice faster. Squeeze thoroughly with your hands, leaving behind dry shavings.

Transfer the cooled onion-mushroom mixture to the raw potatoes, then beat in the egg.

Add a suitable portion of wheat flour, sprinkle with ground pepper. Stir thoroughly.

Spoon the resulting mass into vegetable fat heated in a frying pan. Make the heat moderate, cover with a lid. After about 3 minutes, when one side of the products is perfectly browned, turn them over to the other side and fry in the same way.

For the sauce, place sour cream in a bowl, add garlic, passed through a press. Rinse the dill, tear off the thick stems, finely chop the leaves with a knife and add to the sour cream. Stir the mixture thoroughly.

After frying, place the potato pancakes on paper napkins to absorb excess fat. Serve this hearty dish warm with sour cream sauce.

I highly recommend combining them with wild mushrooms - then the dish will turn out not only breathtakingly fragrant, but also very tasty. In the absence of wild mushrooms, you can try eating champignons or oyster mushrooms - it will also be delicious.

This recipe uses previously boiled and then frozen mushrooms - before making potato pancakes, they must be thawed and excess liquid squeezed out. Simply boil and squeeze the freshest mushrooms - there is literally no need for excess moisture. From words to deeds: we are preparing a common dish of Belarusian cuisine - fragrant pancakes with mushrooms!

So, the products for making potato pancakes with mushrooms: potatoes, frozen boiled mushrooms, onions, chicken eggs, sour cream, wheat flour, salt, ground dark pepper, sunflower oil (without aroma - refined).

First, fry the mushrooms - this way they will be the least liquid and have the most powerful smell. In a tablespoon of oil, fry the mushrooms over medium heat with one onion, which we have previously peeled and chopped quite finely. It is necessary to fry without a lid so that the moisture evaporates faster. We need to ensure that the mushrooms become specifically fried, and not boiled-stewed.

While the mushrooms and onions are fried, peel the potatoes and two onions. Let's wash them.

The mushrooms and onions are ready – chop them. You can use a meat grinder or simply chop the mushrooms with a knife. I still prefer to chop the mushrooms in a food processor using the Iron Knife attachment.

Now you need to get shingles - a crushed mass of potatoes and onions. Naturally, you can use a grater for this, but save your hands - if you have a food processor, everything will work out in a few minutes and no cuts! Using a small grater attachment, chop the potatoes and onions. If your potatoes are runny and a lot of water comes out, just remove it with a spoon.

Add sour cream, flour, eggs to the shingles, salt and pepper to taste.

Mix thoroughly until the mass becomes relatively homogeneous. Taste for salt again and add more salt if necessary.

Now we will need a fairly wide frying pan - pour oil into it (at least 5 mm in height so that the potato pancakes are perfectly fried) and heat it up. Place a tablespoon of shingles onto the frying pan and level the mass. Place about a teaspoon of the insides in the center, and also press it down slightly.

Cover the filling with shingles - a tablespoon will be enough. Fry pancakes over medium heat until the bottom is browned.

After about 10 minutes, turn the pancakes over, prying them from below with a spatula. Do you see how golden brown the crust is? Very tasty! Fry the potato pancakes for another 8-10 minutes (you can cover the pan with a lid). When the first batch of potato pancakes is ready, put it on a plate and prepare the others in the same way.

How to cook potato pancakes with mushrooms

Finely chop the mushrooms and fry in vegetable oil until tender.

Not only champignons, but also wild mushrooms are suitable for this dish.

Grate the potatoes together with the onion and garlic. Drain off the juice from the grated potatoes.

You can use a food processor to make this step quicker and easier.

Add salt, pepper, flour, fried mushrooms and eggs to the potatoes.

Add a little more flour if the potatoes have released a lot of juice.

Mix the potato dough until smooth.

Heat vegetable oil in a frying pan. Spread the potato dough in small portions. Reduce heat and cover the pan with a lid.

For 1 potato pancake you need approximately 1 tablespoon of dough.

Fry pancakes until brown on both sides.

For the sauce, the garlic must be chopped and the parsley must be finely chopped.

Add garlic and parsley to sour cream. Stir. The sauce is ready.

  • Milk – 200 ml
  • Onion - 1 pc.
  • Champignons (fresh) - 500 g
  • Wheat flour / Flour - 2 tbsp. l.
  • Chicken egg - 1 piece
  • Potatoes - 800 g
  • Garlic - 2 teeth.
  • Hard cheese - 100-150 g
  • Salt (1 tsp for potato pancakes, 0.5 tsp for mushrooms) - 1.5 tsp.

Recipe for “Daniki with mushrooms”:

Grate the potatoes on a small grater.

Bake thin potato pancakes from the potato mixture in a heated frying pan, greased with vegetable oil.
