Am I too late with a delicious strawberry dessert recipe? Uuuuff, that's great! Now we are preparing an awesome homemade delicacy - strawberry sorbet! I absolutely don’t understand how you can associate store-bought sweets with the delicacies that we prepare at home...

What I mean is that simply with two hands, a little desire, a little diligence and suitable products, you can create something that no other cookery can offer. Take this colorful, appetizing, indescribably fragrant and recklessly delicious homemade strawberry ice cream. Not a single harmful (or even incomprehensible) food additive, not a gram of dye, not a drop of artificial flavoring and other substances that timidly appear in small print on the packaging of EVERY store-bought cool dessert.

What is sorbet? This is frozen fruit or berry ice with sweet syrup, but not in the form of an ice cube, but a homogeneous, smooth, tender mass consisting of tiny sweet pieces of ice that instantly melt in your mouth. Well, how can you not prepare such a wonderful homemade dessert for your loved ones if the ingredients are completely available, and the recipe is so simple that even a child can handle it?

The recipe for this dessert at home includes only natural ingredients: strawberries, water, sweet sand and lemon juice. You can take both the freshest berries (albeit crumpled and ugly, but unspoiled) and frozen.

First we need to create a sweet syrup so that it has time to cool while we work on the strawberries. Pour sugar into a saucepan and pour water. Place on fire and bring to a boil. Cook over medium heat for a few minutes – don’t bother, just let it cook on its own. Then we pour cool water into the sink or a huge saucepan and place a saucepan with syrup in it - this way it will cool even faster.

Now you can create the basis for strawberry sorbet. We remove the stems from the strawberries, wash them, dry them and put them in a blender. Add lemon juice there - you can add more if you like sour ice cream.

Punch the berries until smooth. By the way, if you don’t have a stationary blender, an immersion blender is perfect – is there one? Now you need to combine the cool sweet syrup with the berry puree.

Blend everything in the blender for a few seconds and it’s done.

All that remains is to choose a comfortable container for freezing strawberry ice cream. The main thing is to make it comfortable to stir the mass. Pour the berry puree into a container and place it in the freezer.

Now the most tedious, but indispensable! It is necessary to take out the bowl every 20-30 minutes and carefully stir the berry mass with a fork. This is a necessary procedure to ensure a smooth and homogeneous sorbet without large ice crystals.

After almost 4 hours (and 5-6 stirrings) the strawberry ice cream will be ready. If you like thicker ice cream, leave it in the freezer for 6-7 hours. But we love it when sorbet is tender and soft. Just be careful: it’s very tricky, and it can hurt your larynx if you eat it quickly.

Strawberry sorbet (some call it sherbet) was invented in China. Looking into the history of the origin of this dish, it becomes clear that the recipe was popular among the Arabs and Persians, and was even mentioned in parables. Sorbet achieved global popularity thanks to the French and Italians.

Not only on hot summer days, but also in the winter season, you want to enjoy natural berries. It is customary to prepare compotes, preserves and jams from them. But a truly unique dessert will be the refreshing, fragrant strawberry sorbet, which can be prepared at home.

Both fresh and frozen berries are suitable for production. Because sorbet contains a minimum of calories, and the berries contain a huge amount of vitamins, it will certainly be appreciated by those who follow a healthy diet and watch their weight.

Traditional strawberry sorbet recipe

For strawberry sorbet, the following ingredients will be useful:

  • strawberries – 1 cup;
  • bottled or filtered water - half a glass;
  • lemon or lime – 1 piece;
  • brown sugar - half a glass;
  • a sprig of mint or strawberries for decoration.

Method for making traditional strawberry sorbet:

Often, strawberries, which are sold in hypermarkets, have a nice appearance. But the taste properties leave much to be desired. Therefore, it is better to get it at farmers markets or use it frozen.

  1. Sort the berries, separate from the stalks and wash thoroughly in cold water. After this, wait until the water drains and transfer the strawberries to a paper towel. This is necessary in order to remove the remaining water.
  2. When the berries are dry, they need to be transferred to a blender bowl or a container for whipping with a mixer. Grind to a puree mixture. There is no need to beat for a long time: the berries are soft and only 20 seconds will be enough.
  3. Not all blender models are capable of grinding strawberry seeds. To get rid of them, rub the puree through a fine sieve. After this it will be a completely smooth mixture.
  4. Take a small ladle, pour water into it and add brown sugar. Place on low heat for 5 minutes. With all this, you need to stir constantly. Cook until sugar is completely dissolved. After this, boil it for 1 minute and remove from the stove. Give the syrup time to cool one hundred percent.
  5. Squeeze the juice from lemon or lime and add it to the berry puree. Then add the syrup and mix the resulting mass. Pour the berry puree into a plastic container, spreading it moderately in a narrow layer. Cover with a lid or cling film and place in the freezer. The hardening time will depend on the specific freezer model.
  6. After about 1 hour, remove the container and mix the sorbet well. This is done so that ice crystals do not form and the consistency is saturated with oxygen. You need to repeat these actions three more times, any hour.
  7. Wait until the sorbet freezes perfectly. This may take 12 hours. It is best to prepare the dessert in the evening and freeze it overnight (that is, in the dark) .
  8. Remove the finished sorbet from the freezer and transfer to bowls. This can be created using an ice cream scoop. Then the dessert will turn out to be the most beautiful, in the form of balls. We decorate the top of the dessert with mint leaves. Cut the strawberry into 4 parts and place on any ball.

Strawberry sorbet for adults

Homemade ice cream is loved not only by kids, but also by almost all adults. Specifically for them, you can prepare a refreshing dessert with special alcoholic notes. This sorbet will be a refreshing element at any party. To implement the idea given to us, you can use an assistant such as an ice cream maker. If available, production time will be significantly reduced. It only takes a couple of hours for the sorbet to freeze.

To make champagne sorbet you need the following ingredients:

  • strawberries – 350 gr;
  • lime or lemon - 1 piece;
  • sweet powder - 3 tablespoons;
  • pink champagne – 200 ml;
  • vanilla extract – 1 teaspoon;
  • sprig of mint.

Fresh strawberries can be replaced with frozen ones.

  1. Grind the berries using a blender. If its power allows, it is not necessary to defrost strawberries.
  2. Pour the purchased puree into a comfortable container.
  3. Extract juice from citrus fruits using a juicer or by hand. If there are bones in it, they need to be pulled out.
  4. Mix juice with berry puree.
  5. Add pink champagne and sweet powder to the resulting mass. Mix everything well and make sure that the powder has dissolved.
  6. Pour the mixture into an ice cream maker to cool and leave for 1 hour.

Immediately take a separate bowl and pour water into it, also add sweet coffee sand (0.5 cup) there. Place this liquid on the stove to simmer, stirring it constantly. Boil the sweet liquid until the coffee sugar is completely dissolved in it. Later, boil it again for 5 minutes. Then remove the syrup from the heat and let it cool one hundred percent.

    At this time, add the freshest lemon juice to the homogeneous strawberry puree (if you don’t have lemon, you can use lime juice).

    The finished sweet syrup is poured evenly into the strawberry mass in portions. The entire mixture is poured into a plastic container and distributed moderately over the entire surface of the dish. It is tightly closed with a lid.

    The strawberries are carefully washed and placed in a container. Milk is also added there (instead of milk you can use yogurt without additives and without pieces of fruit or even cream). In order to create the sweetest dish, sugar is added to the mixture (2-3 teaspoons per 0.5 cup of berries). If there is no sweet sand, take honey. Beat the resulting strawberry mass for one minute.     To prepare such a sorbet, you first need to pour sugar (0.1 kilograms) into a blender, where it will be crushed. Berries (500 grams) are sent along with the purchased sweet powder. Orange juice (100 grams) is also added to this mixture.

    Divide the strawberry sorbet into separate cups and place it in the freezer.

    Strawberry sorbet with basil leaves

    Wash strawberries (0.5 kilograms) under water and grind in a mixer or blender until pureed. Later add sweet powder (40-50 grams), basil (seven leaves) and lemon juice. Beat the mixture well with all these ingredients. Carefully pour the fruit mixture into a plastic container and place it in this form in the refrigerator, where it will cool and harden slightly.

    With all this, you will need to take out the sorbet a couple of times and stir it so that ice crystals do not form in the dessert.

    Banana and strawberry sorbet

    First, wash the strawberries (10 berries). Remove all the tails from it. Immediately take two bananas and peel them. Bananas are cut into several small pieces. Combine them in one container with strawberries. All this is briefly placed in the freezer.

    After the fruits for the upcoming sorbet are frozen enough, they are taken out and placed in a blender. There they are crushed. If the berries are not very sweet, then little honey is added to the resulting mass. Then the fruit mixture is again placed in the refrigerator. Wait until it is quite frozen again. After this, the sorbet is taken out and served to the table.

    When served, this dessert is additionally decorated with chocolate, nut crumbs or whole fresh berries.

    Refreshing strawberry sorbet

    To create such a dessert, you need to rinse the strawberries in cold water. Separate the stem from the berries. Place the cooked fruits in an iron saucepan. Add a small amount of sugar there and fill all these ingredients with clean water. Squeeze the juice from 1 fresh lemon into the resulting berry mass. The mass is left to infuse for 25 minutes. After this time, juice should form in the bowl with strawberries. After this, it is placed in a blender, where it is converted into puree.

    Almost all housewives recommend that after this, additionally pass the mixture through an iron sieve. This will create a more homogeneous mass.

    Strawberry sorbet is placed in a plastic container and sent to the freezer. After an hour, the strawberry sorbet is carefully mixed using an ordinary fork.
