Liver pancakes - 5 recipes with step-by-step photos

Almost everyone is probably tired of classic dishes made from liver. In order to vary your diet, prepare liver pancakes, which can not only become your favorite everyday dish, but also decorate a festive table!

How is this product useful?

Liver is the best offal, both in terms of nutritional and taste qualities. It contains a large amount of salts, amino acids, nutrients and minerals that are needed to preserve and restore the functioning of the body. The liver is also enriched with an abundance of vitamins.

Its role is also irreplaceable when it is necessary to raise hemoglobin in the blood (the internal environment of the human and animal body) , therefore the constant use of this product is often prescribed for anemia.

Savory liver pancakes from beef liver with semolina

The dish according to this recipe turns out to be very tasty and economical. It is served both hot and cold, and you can also eat them with garlic sauce or any other sauce of your choice.

  • Beef liver 1 kg
  • Onions 2 medium onions;
  • Semolina 5 dessert spoons;
  • Salt, pepper to taste;
  • Sunflower or ghee oil for frying.

Let's start cooking:

Let me make a reservation right away: you don’t need to remove the film from it and you don’t need to soak it in milk either. Take the beef liver and pass it together with the onion through a meat grinder.

After we have dealt with the first products, we need to add garlic to our mass (both granulated and fresh will do). We also send semolina, dark pepper and salt there. Mix everything very thoroughly until a very thick mass is obtained.

We add a very small amount of 10% cream to our base for liver pancakes and mix everything well again. In order for the semolina to thicken, we leave our mixture for 10-15 minutes.

When everything is ready, put the frying pan on the stove and add a little melted butter to it. Liver pancakes need to be fried over medium heat, so that they do not burn and the oil slightly squishes. They cook for about 3 minutes on each side, but it all depends on the size you choose to make them. It is better to make them thin, because in this form they are perfectly fried.

At this point our manufacturing process is ready, and after using this recipe you will be pleased with its taste and simplicity.

Traditional recipe for thin liver pancakes with flour

What products are needed?

  • Pork, chicken or beef liver – 500 g.
  • Chicken egg – 2 pcs.
  • Baking soda – a small pinch.
  • Onion - medium sized head.
  • Flour (any kind) – 40 g.
  • Carrots – 1 pc. (the average size).
  • Salt, pepper and other spices - to taste.

Manufacturing process

Using a blender (can be replaced with an ordinary meat grinder), grind the liver, previously washed and separated from films and fat. Add carrots and onions to it, cut them into small cubes and also chop. Add eggs, spices, herbs, soda and flour to the acquired consistency. Carefully grind all the ingredients again. At the end you should get a mass of creamy mixture (thin and not very watery). If the mixture is extremely watery, add a little flour to its composition; if it is very thick, add a little milk or boiled water.

Grease a frying pan with vegetable oil (any kind will do) and heat it over the fire. Next, begin to spread the mass onto its surface in portions. You can form pancakes with an ordinary tablespoon. It all depends on what size you want the final product to be: if it’s small, don’t put too much consistency into the spoon; if you like large pancakes, use a ladle.

Fry each side of the pancakes for no longer than 2 minutes. Remember that crushed liver cooks quite quickly. The main thing is not to overcook the mixture in the pan so that the product does not burn. Remove the finished pancakes from the pan, place on a beautiful dish and decorate according to your taste, for example, herbs and sour cream.

Very tasty and soft chicken liver pancakes

In this recipe we will use chicken liver, thanks to which our pancakes will turn out even more tender than the dishes listed above.

  • 0.5 kg chicken liver
  • 2 tbsp flour
  • 2 testicles
  • 1 large onion
  • vegetable oil
  • salt, dark pepper to taste.

To make the mixture, we need a blender and 10 minutes of your time. If you do not have such equipment, then you can use a meat grinder.

Tip: To make the liver rotate better, after you have cleaned and washed it, drain off the excess liquid and put it in the freezer so that it freezes slightly. Then the veins will not get stuck in the meat grinder.

In the future, we just need to alternately pour all the ingredients into the blender bowl and turn on the mode we need to get the dough for pancakes.

Let the pan heat up and start cooking. Don’t forget to watch the fire; it’s best to set it to moderate. Fry for approximately 2-3 minutes on each side. This is the dish that comes out of this recipe.

Liver pancakes with beef liver rice - step-by-step recipe with photos

If you add a little rice to the liverworts, the dish will turn out to be very satisfying and incredibly tasty.

We will need:

  • Boiled rice
  • Beef liver
  • One testicle
  • Boiled rice
  • Onion
  • Salt
  • Dark ground pepper
  • Mayonnaise
  • Vegetable oil

First you need to deal with the liver, in other words, clean it of veins, films and cut it into small pieces. We also peel the onion and pass it through a meat grinder together with the beef liver.

Add one egg to the resulting mass. Add rice, approximately half of the resulting minced meat. Mix everything well, pepper and salt to your taste.

Place our minced meat in a heated frying pan with oil; it is best to use a tablespoon for this (it comes out in a portion size). Fry on both sides for a couple of minutes until half cooked.

Half-baked pancakes will still need to be steamed; to do this, put them in a saucepan. We dilute a couple of tablespoons of mayonnaise with cool boiled water until it becomes thin sour cream. Pour the rice liverworts into the pan and steam for 10 minutes over low heat, so that nothing burns.

This is how you can simply and deliciously prepare this dish, be sure to try it.

Pork liver pancakes with buckwheat

This is perhaps one of the best methods for making liver pancakes. If you love these offal products, then be sure to try this recipe.
