Buns: rich yeast dough

Buns are the most common type of baked goods, which do not require complex steps, but at the same time have a lot of options (with or without entrails). The main thing in this matter is a correctly selected dough recipe, which will allow you to create buns that are light, airy and appetizing.

The storage duration of such baked goods is also an important factor. In order for it to remain soft for 7-10 days (if it doesn’t fly away faster), you need to prepare the right dough for the buns.

Let's look at this point in more detail. Almost all housewives know how important it is for the yeast base to simply fit and be saturated with oxygen. Then the dough is like fluff, and the baked goods come out airy and light. To achieve this, it is important to know not only the set of ingredients, but also their proportions.

We suggest creating dough for buns with 500 ml of milk. This amount will be useful:

  • dry yeast - 2 tbsp. l.;
  • sweet sand - 200 g;
  • salt - ½ tsp;
  • eggs - 3 pcs.;
  • vanillin - ½ tsp;
  • flour - 750 g (3 cups).

To make the dough rich, add butter or creamy margarine. Quite 200 g of this product per 0.5 liter of milk. For ease of kneading, use 2-3 tbsp. l. vegetable oil.

If for some reason you don’t like vanilla, then use cinnamon, lemon or orange zest as a flavoring. You can also add raisins (150 g) to the dough for taste. You need to rinse it in advance and add it when you make the dough.

Kneading yeast dough is not difficult, but you will have to tinker. An important factor in this process is the choice of flour. It does not have to “float” (the reason is the high gluten content), otherwise the buns will not rise as they should. Choose only the highest grade flour from a proven manufacturer.

Mixing takes place in two steps:

  • Making dough involves performing the following actions:
  1. Whisk the eggs with sugar and a pinch of salt.
  2. Add the resulting egg mixture into heated milk (temperature 37 °C) and dissolve the dry yeast.
  3. Sift the flour. Add 1.5 cups of flour to the prepared watery base and knead the dough well with a spoon. It should be watery, similar to thick homemade sour cream.
  4. Mix the ingredients in a deep glass or enamel container. When the dough is ready, cover the pan or bowl with a towel, wrap it in a warm blanket if possible, or place it in a warm space. If everything is done correctly, then after 30 minutes the dough will rise and bubbles will appear on the surface.
  • Kneading the dough:
  1. Melt margarine or butter over low heat. You can use a microwave for these purposes.
  2. Add flavoring, oil and remaining flour to the dough. Mix everything thoroughly and transfer the dough to a work surface to finish kneading.
  3. The dough will not stick if you grease the surface and hands with vegetable oil. If there is not enough flour (the dough is liquid), then add about 3/4 cup. Knead until the dough becomes elastic and pliable.

Then transfer it to a container and cover with a towel. Leave in a warm place for 40–50 minutes to allow it to grow. Please note that fats (butter, margarine) will make the fermentation process heavier and slow down. Therefore, be patient and wait for the dough to rise, and only then start shaping the buns.

How to form beautiful buns from yeast dough

If you want your baked goods to be admired, then take care not only about the decent content (taste), but also about the appearance of the baked goods. We suggest adopting bun shapes that are easy to make even for a novice cook.

Use simple tips and make ornate baked goods with ease:
