If we try to find a more or less solid recipe for banana pancakes on the Internet, we will be faced with the fact that the recipes, for some reason unknown to me, contain quite a bit of banana and a lot of everything else. In my opinion, calling such pancakes banana can be very arbitrary, because the taste and smell of bananas in such pancakes will be so insignificant that it is difficult to extract it. Therefore, I had to experiment for quite a long time to achieve a good result and really call the recipe - banana pancakes .

Ingredients

  • bananas 200 g
  • flour 150 g
  • milk 150 g
  • sugar 2 teaspoons
  • eggs 1 pc.
  • vegetable oil 30 g
  • baking powder 1.5 teaspoons
  • salt 2 pinches

The weight of bananas is indicated in peeled form, 200 grams is approximately 2 small bananas or one very large one.

It is better to choose overripe bananas for the recipe, approximately like those in the photo below. Unlike unripe bananas, they contain a lot of sugar and not a lot of starch, and also have the most intense banana taste and smell.

The amount of baking powder is explained simply: bananas make the dough quite heavy and it is difficult for baking powder to give it a good porous structure, therefore in baking with bananas the amount of baking powder is almost always higher than usual.

At the end we get 9 huge pancakes with a diameter of 11 cm. If you make pancakes that are not so huge, then there will be more of them.

Manufacturing

We prepare all the necessary ingredients for making banana pancakes. It will be perfect if they are at room temperature. In this case, it is better to combine the ingredients together. If you don’t have time for all this “nonsense”, then we’ll just heat up the milk. We will also need 2 bowls, a fork, a mixer (either a whisk or a fork) and, of course, a frying pan.

Sift flour (150 g) into a separate bowl and add baking powder (1.5 teaspoons)

In a large bowl, mash the banana with a fork. I don’t recommend making this with a blender; the banana practically turns into liquid, and we need a thick mass.

Add an egg, sugar (2 teaspoons), 2 pinches of salt and vegetable oil (30 g) to the banana and mix thoroughly until the ingredients combine. You can create this using a mixer, a whisk, or the same fork.

Heat the milk slightly, add it to the bowl and stir. We heat the milk so that the dough is not cool and the ingredients merge perfectly with each other. Namely, so that the sugar dissolves. In addition, if the dough is warm, then the pan does not cool down at the moment when we put the dough on it and the pancakes immediately begin to rise and become more fluffy.

Add flour and baking powder to the bowl. Stir until smooth. The dough is ready, now we will bake the pancakes themselves.

We will bake in a dry frying pan without adding oil, this is what makes the pancakes so moderately browned and smooth. Another condition for obtaining such a uniform color: it is important to use a frying pan with a flat bottom, without reliefs. A frying pan with a smooth non-stick coating is ideal. The diameter of the pan can be any size, but the number of pancakes you can fry depends on this.

On medium heat on the stove, heat the frying pan well. Using a ladle or large spoon, pour the dough into a hot frying pan. Pour the batter into the middle of the pancake; it will spread on its own. If necessary, trim a little so that the circles come out very even. I usually fry one pancake with a diameter of 11-12 cm directly in the center of the pan.

When bubbles begin to appear on the surface of the poured dough, it’s time to roll our pancake. If you have chosen the correct temperature regime of the stove, then by the time bubbles appear, the pancake should no longer be completely watery on top (otherwise, when turning over, the dough will spread a little, the pancakes will turn out crooked), and moderately browned on the bottom. If the pancake is already starting to burn on the bottom, but is still completely watery on top, reduce the power of the stove. Well, and accordingly, on the contrary, if it is already completely baked, and the bottom is completely light, the heating should be increased. I bake the 1st side for 1.5 minutes, the 2nd side for 1 minute.

Fry the pancakes on the back side until they are the same brown color as the first side.

To check if your pancakes are baked perfectly, break one and see if there is any raw dough left inside. It should be visible on the crack that the pancake is baked and has risen moderately.

Banana pancakes are ready!

  • 1 tbsp. l. vegetable oil,
  • 2 pinches of salt
  • ½ tsp. baking powder,
  • 200 ml milk,
  • 3 pinches of ground cinnamon.

Beat a fresh chicken egg into a deep bowl, add sugar and salt to it - for balance. Whisk everything well.

Peel a ripe banana, then mash it with a fork until you obtain a smooth puree. Transfer to a bowl.

Stir everything again with a whisk - the mass will turn out to be slightly heterogeneous; if desired, you can beat it additionally with a submersible blender.

Now pour into a bowl a fresh chicken egg and vegetable oil without a strong corresponding aroma, in other words, refined. Mix with a whisk.

Add the sifted wheat flour and at the same step add baking powder and ground cinnamon.

Stir the pancake batter until it is one hundred percent smooth. Then let it sit for 10 minutes so that the gluten of the flour swells.

To fry the first batch of pancakes, you can optionally grease the pan with oil. Using a spoon, pour small portions of the dough onto the hot surface and fry for 2 minutes on one side.

On the other side, you can fry for a minute - that will be enough. Place the finished pancakes on a plate.
