How to make buckwheat from minced meat (video + photo)

    1. For buckwheat lovers, you can use already cooked buckwheat or boil it just before preparing the dish. Cook buckwheat 1:2. Those. one part buckwheat (1 cup) and two parts water (2 tbsp. water). Add a little salt after boiling and cover with a lid. When all the water has boiled away, remove the porridge from the heat and let it cool.
    2. Minced meat can be made from pork, beef or mixed. Twist the meat yourself or bring ready-made minced meat from the store - it’s your choice. The main thing is that the products are fresh and of high quality.
    3. Put chopped onion into the minced meat (I chopped it in a blender, you can put it through a meat grinder) and one egg.
    4. When the buckwheat has cooled, add it to the minced meat. Don't forget about spices. I used Provençal herbs, dark pepper and salt.
    5. Stir the minced meat until smooth.
    6. With wet hands we form cutlets. I got 15 pieces. small size.
    7. Heat the required amount of vegetable oil in a frying pan and fry the buckwheat on both sides over medium heat.
    8. Place them in a container suitable for stewing.
    9. Add tomato sauce or thick tomato juice. Cover with a lid and simmer for about 20 minutes.

    1. Soak buckwheat for 10 minutes. Wash it and boil until tender.
    2. Peel the onion, chop finely. If desired, you can sauté in vegetable oil or leave it raw.
    3. Place cooled buckwheat, minced chicken and onion in a mixing bowl.
    4. Add the egg, season with salt, pepper and spices. To increase the viscosity of the minced meat, boiled buckwheat can be slightly mashed with a masher. Mix the mass.
    5. Boil hard-boiled eggs, cool. Peel them from the shell and grate them on a small grater.
    6. Add salt, dry garlic, pepper, finely chopped parsley and sour cream to the filling. Mix the mass.
    7. Place some of the minced meat on a auxiliary plate in the form of a flat cake.
    8. Place the filling on top.
    9. Cover the minced meat with a meat patty and, with wet hands, carefully form an oblong cutlet.
    10. Roll each one in flour.
    11. Fry the buckwheat in a frying pan in hot oil until deliciously crispy on both sides.

    Sort out the buckwheat and wash it. Pour into boiling salted water and cook until tender. Cool.

    Pass the meat through a meat grinder with one onion.

    Add eggs, salt and pepper to taste to the minced meat, knead thoroughly.

    Combine the minced meat with buckwheat and mix well again.

    Form cutlets from the minced meat, bread them in flour and fry the purchased buckwheat in vegetable oil on both sides until golden brown (as in the photo).

    Cut the second onion into half rings and fry in vegetable oil until golden brown.

    Pour in tomato sauce and heat through. Homemade tomato sauce can be replaced with store-bought tomato sauce or tomato paste diluted with water in a 1:1 ratio.

    Place the buckwheat into the frying pan with the sauce, cover with a lid and cook over low heat for 20-25 minutes.

    Buckwheat with minced meat

    Have you tried buckwheat? Very tasty buckwheat cutlets with minced meat. A dish from the group two in one, both a side dish and meat, and, of course, this is a good method of recycling yesterday’s porridge.

    Grechaniki is a common dish in Ukrainian cuisine. There are a good dozen recipes. Greeks are prepared with minced meat (most often with pork or pork-beef, in general, whatever you can find in the refrigerator will do, chicken, turkey, bunny). There are recipes without meat - vegetarian buckwheat with overcooked onions or mushrooms.

    Cutlets are prepared from buckwheat (it’s best to use “kernels”) or from ready-made porridge that has been left in the refrigerator “since yesterday.” Fry in a pan or steam. Buckwheat is most often served plain, with sour cream, but can also be stewed in sauce (tomato, tomato-sour cream, mushroom, etc.). A whole field for culinary tests!

    Ingredients

    • buckwheat – 1 tbsp.
    • water (for cooking buckwheat) – 2 tbsp.
    • butter – 30 g
    • onions – 2 pcs.
    • minced pork and beef – 350 g
    • chicken egg – 1 pc.
    • salt and pepper - to taste
    • flour for breading - 3 tbsp. l.
    • vegetable oil - for frying

    Manufacturing

    Boil buckwheat porridge (for 1 cup of cereal you will need 2 cups of water, salt to taste), add butter to it for flavor, and cool completely. You can use yesterday's porridge that was left in the refrigerator.

    Peel the onion and cut into cubes - as small as possible. Fry in vegetable oil until softened and lightly browned. There is no need to spare the onion, it will give juiciness to the cutlets and also taste. Therefore, take a couple of large onions - approximately 150 g.

    Grind the buckwheat porridge through a meat grinder with a large mesh. Or beat it in a blender (in two steps, everything won’t fit in the bowl at one time) - some of the buckwheat will be crushed, some will remain large, this is the “right” mixture for buckwheat lovers. If you don’t have a meat grinder or a blender, you can mash the porridge with a potato masher. The porridge must become viscous, then the cutlets will keep their shape and will not fall apart.

    Add minced meat, egg, salt to the buckwheat mass (remember that buckwheat is already salted, I added another 1/3 tsp) and pepper. Knead thoroughly until the mass becomes homogeneous.

    Wet your hands with water, form cutlets, flatten them a little - due to their flat shape, they will be moderately fried. Bread them in flour.

    Heat vegetable oil in a frying pan and fry until golden brown. The heat should be moderate so that the buckwheat cutlets with minced meat have time to cook completely.

    Serve warm as a separate dish. Bon appetit!
