Anthill cake: a small version of the famous cake

The recipe for the “Anthill” cake (aka “Ant Hill”) is familiar to almost all housewives. Gourmets adore this wonderful dessert for its simplicity and speed of preparation. With all this, you can show all your imagination and experiment with the components.

For those who do not want to wait a long time and want to experience this delicacy faster, the option in the form of cakes is suitable. It will take no more than half an hour to soak them, and they are served in portions, so they do not need to be cut, unlike the cake of the same name.

In this article you will find several detailed recipes for making “Anthill” cakes with photos.

Traditional recipe for Anthill cakes

Such unique sweets will make children go into ecstasy, so preparing them for a child’s birthday would be a good idea.

Ingredients for the test:

  • Flour – half a kilogram;
  • Sour cream and high-quality creamy margarine - 100 g each;
  • A teaspoon of soda;
  • Sugar – 90-100 g.

Ingredients for the cream:

  • A jar of boiled or ordinary condensed milk;
  • Slightly melted butter – 100 g.

We prepare the delicacy according to the traditional recipe step by step:

  1. Margarine, cut into small pieces, is melted in a small iron cup (you can replace it with butter).
  2. For the dough, select the deepest container into which sour cream is laid out and soda is added. The ingredients are thoroughly mixed and left for a short period of time (about 2 minutes) for the reaction to begin. You can replace the soda with baking powder, but then it will need to be combined and sifted with flour in advance.
  3. The previously melted margarine is poured into the same bowl and sweet sand is poured in. Everything is mixed well until the crystals dissolve.
  4. Flour is added in small portions and the resulting mass is kneaded. At first the mixture should be slightly crumbly. After this, it must be continued to knead until the dough forms a homogeneous mixture.
  5. The finished test mass is put into the cold for half an hour.
  6. After the designated time has passed, the dough is removed from the refrigerator and divided into small balls, from which sausages are then rolled, the thickness of which corresponds to the opening of the meat grinder.
  7. The blanks are passed through a meat grinder and distributed in a narrow layer on a baking sheet lined with parchment or a special silicone sheet.
  8. The “worms” are baked in the middle position at a temperature of 180 degrees for 15-20 minutes until lightly browned. If you exceed this time, the workpieces will become hard.
  9. While the baking process is underway, the cream is prepared. A little more than half of the total amount of condensed milk and all the butter are placed in the mixer bowl. The ingredients are whipped until smooth.
  10. After the “worms” have cooled, grind them into coarse crumbs. You can also add chopped nuts or peeled, toasted sunflower seeds.
  11. In a separate container, the crumbs are combined with the cream and thoroughly kneaded.
  12. Next, the cakes themselves are formed. You can create this in muffin tins or any similar small containers. To prevent the dough from sticking, you need to lightly moisten the molds with water each time.
  13. The acquired mass is placed in the container and compacted tightly.
  14. The dessert is taken out onto a beautiful huge platter.
  15. The finished delicacy with condensed milk can be decorated with fried sesame seeds, poppy seeds, coconut flakes, or poured with melted chocolate.

The finished “Anthills” should soak for approximately 40 minutes. But if possible, let it take 2-3 hours, so they will be even tastier. After this, you can serve them to the table.

Cookie dessert

It is better to use unsweetened cookies. In the finished version, the cake comes out almost like a store-bought one, but at the same time made from natural ingredients.

  • Sweet butter – 250 g (melted);
  • Shortbread cookies – 550 g;
  • A can of boiled condensed milk;
  • Coconut flakes, chocolate glaze or chocolate (45-50 g) - at your discretion.

How to make Anthill cake from cookies:

  1. Chop the cookies using a rolling pin (or knife). It is better not to use a coffee grinder or blender, because the crumbs come out very small, and this will affect the taste of the sweet dish in its finished form. You can also finely break the cookies with your hands;
  2. Beat the soft butter with a blender (mixer) in a deep bowl and, without turning off the “device,” add boiled condensed milk into the container. Mix with a device until it becomes a sticky light brown mass;
  3. Combine it with cookie crumbs. It is better to add chopped and lightly toasted nuts or dried fruits;
  4. Now we will form the sweets with our hands dipped in water so that the products do not stick to our hands. For convenience, you can use silicone molds (or steel), from which the finished dish is removed and turned upside down;
  5. We put the preparations in the refrigerator. Melt the chocolate in a microwave (microwave radiation, ultra-high frequency radiation - electromagnetic radiation, including the decimeter, centimeter and millimeter range of radio waves) oven or in a water bath, then pour over the top of the future cake. If desired, we will also decorate the sweets with chocolate glaze: place chocolate (40 g), butter (25 g) and sweet sand (3 tablespoons) in a saucepan, heat until the crystals are completely dissolved;
  6. Let's put the sweet products in the cold for an hour or two. If there is no time to cool down, you can immediately start tasting. But the “anthills” with the top of melted chocolate need to be kept in the refrigerator for about an hour.

Sweets at home can be decorated with various sprinkles, thereby giving the culinary miracle a “dressed up look”.

Dietary recipe for cakes

The calorie content of the finished product is only 117 Kcal per 100 g.

  • 30 g corn starch;
  • 8 huge spoons of oat bran;
  • A glass of skim milk;
  • A small spoon of instant chicory;
  • Vanillin - optional;
  • 2.5-3 huge spoons of dry milk (skimmed);
  • 9-10 drops of stevia plant syrup, or any other sugar substitute.

  1. Let's heat the milk (on the stove or in a microwave (microwave radiation, ultra-high frequency radiation - electromagnetic radiation, including the decimeter, centimeter and millimeter range of radio waves) oven), introduce all the components into it evenly, but without stevia;
  2. Place the mixed mass in the microwave for almost a minute, stir again;
  3. Repeat this process 5 times, and later add stevia;
  4. It's time to form “ant slides”, which need to be cooled for at least 40 minutes before use. You can also use portioned forms.

Raisin cake

Almost everyone adores this sweetness for its fascinating design and unique, unique taste.

  • One testicle;
  • A jar of boiled condensed milk;
  • 1/4 cup sweet sand;
  • 150 g butter;
  • 0.5 small spoon of baking powder;
  • 1.5-2 cups flour;
  • 2 huge spoons of cognac;
  • 3 level tablespoons of raisins.

  1. Combine the sifted flour with baking powder;
  2. Grind half the amount of butter with sugar, add the egg and flour;
  3. Place the purchased dough in the freezer for 60 minutes;
  4. Rub the dough mixture on a large section of a hand grater and bake in an oven heated to 180 degrees until golden brown. Line a baking sheet with parchment paper;
  5. We wash the raisins, soak them in cognac for about 20 minutes. Beat the condensed milk and the remaining butter well, combine with the raisins and baked crumbs;
  6. We make “anthills”, which can be decorated with chopped walnuts, and put them in the cold for 1.5-2 hours.

In addition to baked “worms” from dough and cookies, “building material” for dessert can be called gingerbread cookies, crackers and corn sticks, which can also be used to make remarkable cakes. And you can add honey, sour cream and even milk, previously melted toffee, to the cream.

Step-by-step recipe with photos

The “Anthill” cake is one of the most recognizable desserts and is prepared quickly from simple ingredients. I offer the most traditional option, but in the form of portioned cakes. Alcohol is not necessary in the cream, although not excessive to enhance the taste. Usually cognac or rum is added, I liked the addition of Baileys liqueur.

The main ingredients for the “Anthill” cake or pastries:

For the dough, combine softened butter with sugar and beat.

Add sour cream and beat again.

Then add flour and soda. There is no need to extinguish the soda additionally; it will be extinguished by the acid of the sour cream.

Stir into crumbs first.

And then collect the dough into a homogeneous mass and divide into pieces. You can cool them for a while or even freeze them if you grate them later.

Make flagella from the dough, grate or roll it through a meat grinder.

Spread the dough on a baking sheet, for example, on a silicone mat.

Bake this shortbread dough in a preheated oven at 180 degrees for about 20 minutes.

Break the finished sand flagella.

To make the cream, combine softened butter, boiled condensed milk and alcohol (rum, cognac, Baileys.) Boiled condensed milk seemed very thick to me and I added a couple of tablespoons of milk.

Mix the ingredients into a homogeneous cream by hand or using a blender.

Combine and stir the cream with sand crumbs.

Next, form either a cake, or pastries, or both! Silicone molds are very convenient for this.

Let the cake or pastries soak at room temperature for about 1-2 hours, and then place in the refrigerator. Decorate the finished “Anthill” cakes and serve to taste, for example, in cardboard molds and with multi-colored sweet toppings.
