There can be as many recipes for homemade ice cream as you like - it all depends on your taste. Now I propose to try a cool dessert, which we will create on the basis of a traditional ice cream with the addition of fatty cottage cheese. We serve curd ice cream with syrups, dessert sauces, fresh berries, chocolate, nuts or crushed cookies.

I carefully told you how to make homemade ice cream in this recipe. In addition, you can simply create heavy whipping cream yourself from milk and butter (recipe here). I advise you to choose fatty cottage cheese for making ice cream, because the taste and texture of the upcoming dessert depends on it.

To make homemade curd ice cream, we will need the following ingredients: full-fat cottage cheese (I used 11%), heavy whipping cream (at least 30%), milk, egg yolks, granulated sugar and vanilla sugar (can be replaced with a pinch of vanillin, vanilla essence or do not add at all).

Pour 130 grams of sugar, a tablespoon of vanilla sugar and 3 egg yolks into a suitable sized bowl.

Mix everything and add 130 ml of milk (you can straight from the refrigerator).

Mix everything thoroughly with a whisk or beat with a mixer until the sugar begins to dissolve.

Place the saucepan with the resulting mass in a water bath. This means in another saucepan, bring a glass of water to a boil. We put this whole structure on the fire and, stirring constantly, cook the yolks, sugar and milk over low heat until the mass thickens - 10 minutes is enough. Just don’t overcook it, otherwise you’ll end up with an omelette, and we want a one hundred percent smooth custard. When you feel that the mass has begun to thicken, immediately remove from the water bath.

The mixture of hot custard comes out similar to condensed milk. Let it cool one hundred percent. To speed up the cooling process, you can place the saucepan in a bowl of ice water.

When the custard base for the future curd ice cream has cooled one hundred percent, pour it into a suitable-sized container. Add 400 grams of fatty cottage cheese.

We beat everything with an immersion blender so that the mass is one hundred percent homogeneous.

Meanwhile, in a separate bowl, beat cool heavy cream (400 ml) until fluffy and creamy.

It is not necessary to whip the cream to stiff peaks - let the mass be gentle and soft. Don't overdo it, otherwise you'll end up with butter and whey.

Add whipped cream to the custard with cottage cheese. Using a whisk or mixer at the lowest speed, combine everything until smooth. Not for long, just to make everything smooth.

This is our preparation for homemade curd ice cream.

We transfer the future dessert into a freezer-safe container, cover it with a lid and put it in the freezer.

It’s better to take out the ice cream every 30 minutes and carefully stir it so that there are no ice crystals in it later. And so at least 4-5 times. After four to five hours of freezing, there is no need to stir the mixture. At the mixing step, you can add your favorite additives to the ice cream: jam or marmalade, nuts, cookie crumbs, chopped chocolate.

  2. Pour the cream into the bowl with the cottage cheese and grind again with a blender.
  3. Add condensed milk, beat with a blender. The milk-curd mass should become homogeneous, without a single lump, and at the same time very fluffy.
  4. Transfer the resulting mixture into prepared small molds (not made of silicone). Cover each mold with cling film or foil, securing firmly.
  5. Place the closed molds with the prepared curd dessert in the freezer for 6 hours.
  6. If desired, you can remove each molded ice cream, wrap it in foil and put it in a separate compartment in the freezer for storage until needed. This kind of ice cream can be stored for three months from the date of its production.
  7. During meals, take out the ice cream 10 minutes before serving it, transfer it to a bowl (saucer or cup) and let it melt a little.

  • powdered sugar – 150 g;
  • fresh, ripe bananas (can be overripe) – 600 g (approximately 4 pcs);
  • fresh green apples – 300 g;
  • vanilla powder – 20 g;
  • cinnamon powder – 20 g;
  • heavy cream (from 20%) - 200 g;
  • thickener for cream powder – 20 g.

To prepare banana-apple ice cream with cottage cheese, follow the instructions:

  1. Peel the bananas. Puree the banana pulp in a blender.
  2. Using an electronic juicer, extract the juice from new green apples, having previously washed them and cut them into pieces so that they can simply be passed through the eye of the juicer.
  3. Pour the freshly squeezed apple juice into a bowl with the banana puree and blend again with a blender.
  4. Add cottage cheese with sweet powder to the apple-banana mixture in a bowl. Mix everything again with a blender. You should get a homogeneous curd-banana-apple sweet mixture with a green color.
  5. Place vanillin and cinnamon in a bowl with the ice cream being prepared and mix them into a homogeneous mixture with a blender. You will get the most delicious cream.
  6. In a separate bowl, beat the cream with a mixer along with the thickener. The beating process continues until “peaks” and a snow-white, airy fluffy mass are obtained.
  7. Combine the whipped cream with the curd cream by mixing them with a mixer (blender) with a special “whisk” attachment.
  8. Transfer the resulting mass into a container with a tight-fitting lid and place it in the freezer for 6 hours.
  9. During the first 3 hours, stir the ice cream, taking it out of the freezer every half hour. This should be done so that ice crystals do not form in the ice cream and it hardens moderately. Then the ice cream should be taken out only before the meal, a quarter of an hour before it is served, so that it can melt a little and simply be transferred with an ordinary spoon into the prepared portioned cream cups.

Homemade creamy curd ice cream with dried fruits, nuts and chocolate

  • boiled condensed milk – 400 g;
  • sweet cream butter with a fat content of at least 82.5% - 100 g;

  3. Freeze the chocolate and then chop it using a coarse grater.
  4. Dried fruits (raisins with prunes, dried apricots, banana and pineapple), previously steamed in hot water, chop using a knife with a very sharp blade.
