  • the dough for making pies can be made with sour cream, milk, yogurt or whey;
  • the amount of sugar in the prepared mass will depend on the type of interior;
  • the dough is ready for baking if it has a soft, elastic structure and does not stick to your hands or to the table;
  • For pies fried in a frying pan, unleavened dough is perfect, and for making in the oven or oven - yeast dough.

Oven recipe

Soda dough for fried pies

Most often, pies fried in a frying pan are prepared at home. They turn out extremely tasty and cook faster than in the oven. Dough prepared with baking soda is excellent for making this dish.

The dough prepared with soda will be quite fluffy if prepared with kefir or yogurt. For this type of test, there is no need to extinguish the soda, because the drink will perfectly replace acetic acid.

So, we make the dough with soda for fried pies, following the tips:

  1. pour 200 ml of kefir/yogurt into a cup;
  2. add soda there and wait until the reaction passes;
  3. add 1 small spoonful of salt and sugar into the drink;
  4. beat 2 eggs into the mixture;
  5. pour 3 cups of sifted flour into a cup;
  6. knead soft dough;
  7. at the end of kneading, pour 2 huge tablespoons of sunflower oil into your hands and knead slightly (so the dough will become elastic and soft).

The dough prepared in this way must be placed in a cup and covered with a napkin, leaving it alone for half an hour. During this period of time it will become the softest and most airy. While the dough is reaching, you can prepare all the internal components. Later, all that remains is to form small pies and cook them in a hot frying pan.

Dough for pies with cabbage

Almost everyone loves pies with cabbage insides. Moreover, they are equally delicious both fried and baked in the oven. A good candidate yeast dough for making this dish would be dough made with soda. If you cook it correctly, guests or family won’t even notice the difference, and everything will take less time. The dough prepared in this way has a lovely texture, a good smell and will enhance the taste of your favorite pies.

The recipe for making dough for cabbage pies is extremely simple, so no matter what kind of housewife can make it, you just need a little diligence and patience.

To prepare the soda dough for cabbage pies, you need:

  • mix 200 ml of kefir with 1 small spoon of soda, stir and wait 3-5 minutes;
  • pour a small spoon of table salt and 5 tablespoons of vegetable oil into a cup, mix everything until smooth;
  • add 650 grams of flour and knead into a thick, tight dough.

While the dough rests and improves its taste, you can fry the cabbage in sunflower or butter (whichever you prefer). The formed pies can be baked on a sheet, having previously coated them with egg yolk. Those who want to quickly taste cabbage pies can fry them in a frying pan.

Soda dough without eggs

This version of dough for pies is considered the most beneficial for the body: it is better absorbed, is considered a light meal, and is suitable for vegetarian cuisine. Pies made with this dough turn out delicious both baked and fried. The inside of these pies can be very different, the taste of the dough will complement the memory.

In order to create dough without eggs without the help of others, you need a minimum of goods: flour, drink, soda, salt and vegetable oil.

The method of action is:

  1. pour 500 ml of warm kefir into a container for kneading dough and add 1 small spoon of soda powder to it and stir until the reaction takes place;
  2. after 3-5 minutes, add 1 teaspoon of salt and 2-3 huge tablespoons of sunflower oil to a cup, mix everything until smooth;
  3. add 500-600 grams of sifted flour and knead into a loose dough.

It is better to add flour evenly, so the smallest amount can be useful - it depends on the thickness of the kefir. This dough does not need to rest: it can be immediately formed into pies. It is better to fry the products in butter: it does not emit harmful substances, like vegetable oil, and imparts a good taste to the pies.

Kefir dough

Kefir dough with the addition of soda is an option for those who do not want to spend a lot of time making the dough. This is a simple recipe that any lady can do, even if she is not very good at cooking.

A fluffy soft kefir dough is made like this:

  • Pour 200-300 ml of kefir into a deep cup and quench it with soda (you need 1 small spoon without a slide);
  • beat 2 eggs into a cup, add 0.5 teaspoon of salt;
  • add 2-3 tablespoons of vegetable oil, mix everything well;
  • pour 2-3 cups of flour into the mixture and knead into a soft dough that will not stick to your hands.

After making this dough, you can immediately create pies and fry them in a frying pan or bake them in the oven. The finished products are tender and tasty.

Soda dough for pies

The lightness of the dough comes from carbon dioxide, which is released when heated and the interaction of sodium bicarbonate with an acidic environment. And for it to form, the soda powder must be extinguished. If the prepared mass contains fermented milk products, for example, a drink, then there is no need to extinguish the soda.

  • sugar – 1 tbsp. l.;
  • butter – 50 g;
  • water – half a glass;
  • ¼ teaspoon each of soda and salt;
  • citric acid on the tip of a knife;
  1. Combine baking soda and sifted flour. Dissolve sugar, salt and citric acid in half a glass of water.
  2. Add 1 egg, room temperature butter and flour to the solution.
  3. Knead the dough quickly, no more than 1 minute. During the reaction with citric acid, sodium bicarbonate is quenched, carbon dioxide bubbles dissolve, and the structure of the test mass becomes less airy and solid.

Frisky milk pie

If guests arrive unexpectedly and you have nothing to serve for tea, make this pie - it’s not a bad and fun treat. It will only take half an hour.

To make sweets we take the following ingredients:

  • testicle – 1 pc.;
  • flour – 2 cups;
  • soda slaked with vinegar;
  • milk – 300 ml;
  • sugar – 200 g;
  • vegetable oil – 3 tbsp. l.

Grind the egg with sugar and add milk evenly, stir. Then first add 1 cup of flour, then slaked soda with vinegar, butter and the rest of the flour. Knead the dough until it becomes firm and elastic. Fresh or canned fruits are ideal for filling. Bake for 30 minutes in the oven. Pour chocolate or any sweet syrup on top, sprinkle with nuts and raisins.

Fried pies with soda

Thanks to the soda, the fried pies will turn out fluffy and airy, and the sour cream that goes into the dough will give a delicate taste.

For a fluffy, fragrant pie dough you will need:

  • flour – 800 g;
  • drink – 400 ml;
  • sour cream – 2 tbsp. l.;
  • testicle – 1 pc.;
  • sodium bicarbonate – 1 tsp;
  • salt.
  1. The drink must be mixed with sour cream. It should not be cool, but slightly warmed to room temperature. Beat the egg into the mixture, sift the flour, add salt, soda and mix all the products until smooth.
  2. Set the dough aside for 15 minutes to “rest”, then fry the pies in vegetable oil.

Kefir dough

There is no sour cream in this recipe, but we assure you that this will not change the taste of the pies, but will be just as tender and pleasant.

In the deepest container, mix 200 ml of kefir, 1 tsp. soda, a pinch of salt and add 2 chicken eggs. Add a little vegetable oil so that the dough remains elastic and does not stick to your hands, sift 2-3 cups of flour into the mixture. Knead the dough, then form the pies and fry in a frying pan.

Soda pies in the oven

Soda pies baked in the oven will appeal to those who don’t like fried foods. This delicacy is not as fatty, but no less fluffy and airy than with yeast dough. The main thing is to consume the correct amount of sodium bicarbonate powder.

Yeast-free dough

The usual ingredients for the pies are:

  • butter – 250 g;
  • testicle – 1 pc.;
  • drink – 200 ml;
  • salt, soda, sugar - 1 teaspoon each;
  • flour - 3 cups;

Prepare the soda pie:

  1. Mash the butter with the egg, salt and sugar with a fork, pour in the drink and stir well.
  2. Sift 3 cups of flour, add soda to the mixture and knead the dough. Using a rolling pin, roll it out lightly and place it in the refrigerator for half an hour.
  3. After a short “rest” in a cool place, the dough must be kneaded further.
  4. Cut the dough into small balls and roll out into circles.
  5. Prepare the filling using the options suggested in the article, or come up with something of your own.
  6. Pinch the edges of the pies by dipping your fingers in vegetable oil, shape the products and place them lightly in the mold.
  7. Bake the pies for 30-40 minutes in the oven at 180 degrees.

Yeast dough with soda

Adding soda powder to yeast dough is quite an unusual phenomenon, but this recipe literally will not let you down.

For the test take:

  • milk – 400 ml;
  • margarine – 200 g;
  • vegetable oil – 2 tbsp. l.;
  • dry yeast – 2 tsp;
  • eggs – 2 pcs.;
  • flour – 1 glass;
  • soda – ½ teaspoon;
  • salt – 1 tsp;

First, melt the margarine and leave it to cool, we will need it later. Now dilute the yeast in warm milk, add salt, eggs and sugar. Begin to carefully pour in the margarine and stir everything. Add half the flour along with soda to the resulting mass, knead the dough. Add 2 tbsp to the preparation. spoons of vegetable oil and the rest of the flour. Place the dough in a bowl, cover with a cloth and set aside. In 40 minutes it will be ready for the upcoming production.

In my old notes, I found a recipe for a yeast dough called “Air”, in which, at first glance, the incompatible thing is mixed - yeast and soda. I rummaged through books and surfed the Internet, read reviews and discussions on this topic. I found out that no one understands how these two components work together, but in Hungarian cuisine such a combination is common. And therefore I came to the conclusion that until you try, you won’t learn anything (it’s not for nothing that I once wrote down the recipe). I made it once and the dough came out amazing!

. I thought about it, maybe it was just an accident, some luck? Yesterday I made the dough again and baked pies from it. The result eclipsed all my expectations - the pies were airy, soft, tender - SUCCESSFUL BAKING. Making the dough is simple and straightforward, it rises extremely quickly, in almost 30-40 minutes at room temperature and does not have a yeast or soda taste.

Yeast dough with the addition of soda “Aerial”

You will need
2 tbsp milk, 200 g margarine, 3 tbsp unflavored sunflower oil, 2 tsp dry yeast, 1 tsp baking powder or 0.5 tsp soda, 2 tbsp sugar, 1 tsp salt, 2 eggs + 1 egg for greasing, 1 kg 50 g - 1 kg 200 g flour or if for glasses (250 g), then 6.5 - 7.5 glasses.

Advice
It is better to sift flour for dough to get rid of hard impurities and saturate it with air, so the dough will become more airy and fluffy.
The amount of flour needed for kneading the dough depends on the properties of the flour. The best flour is the one with the highest gluten content. For this reason, the recipe does not contain clear information about the required amount of flour.

Production method:
Dissolve yeast in warm milk, add eggs, salt, sugar, melted warm margarine and stir everything well.

To the purchased mass, add half the flour mixed with soda (not slaked) or baking powder, stir well, then add two tablespoons of sunflower oil and add the rest of the flour little by little, stirring well. The dough should be elastic and homogeneous, but it still sticks to your hands. Pour 1 tablespoon of sunflower oil onto the dough and knead it again, very lightly, so that it does not stick to your hands. Cover the dough with film or a napkin and leave for 30-40 minutes. If the dough has risen, but the inside is not yet ready, the dough should be kneaded, covered again with film and set aside.
When everything is ready, you can start sculpting the pies,

as they fit, carefully grease them with egg.
And so that the pies come out the most beautiful and shine better, brush them with egg again. I very much regret that I did not write earlier about the temperature regime and because of this, not everyone’s pies came out, but better late than never.
Bake the pies at a temperature of 200 degrees for 15 - 20 minutes, until a golden brown crust appears.
Baking time depends on the oven. If the pies are browned on top and pale on the bottom, then cover them with a sheet of paper and continue baking until the bottom of the pies is ready. It doesn’t matter what kind of interior you use for pies.


But with this dough I liked the non-sweet one more. Because, to my taste, for sweet pastries the dough must be as rich as possible.
But as is clear, there are no comrades according to taste and color. For the sake of experience, I also baked sweet ones,

so my sweet pies with raspberry jam were not lying around, they were baked that same day.
