Dear cooks, now I would like to share with you a recipe that, to be honest, amazed me to the core. The fact is that this is, in fact, a cake on water. Maybe someone is familiar with this technology, but this is the first time I’ve seen something similar. Sour cream, milk, yogurt and a drink are usually added to the dough, but what about water, and with such a great result? The cake came out airy, almost weightless, it doesn’t go stale for a long time, it’s just magic! Because this is an economical, folk recipe, a cupcake “for one penny,” I named it after the medieval coin, which began to be minted in the Czech Republic back in 1300 under King Wenceslas II and which was in use until 1547.

Cake . Cake is a flour product made from yeast or sponge dough, baked with the addition of raisins, nuts, fruits, dried fruits, jam, etc. Cupcakes come in different sizes and shapes: rectangular, round, square, round with a hole in the center (ring shape), or they can be completely random in shape.

The first cupcakes originated in Old Rome. But the manufacturing principle was even simpler than it is now. Back then, to make a cake, it was enough to mix barley puree with raisins, nuts and pomegranate. The popularity of cupcakes increased with the advent of sugar in the 16th century. * you don’t need to take out the cake immediately after turning off the oven; it’s great if it stays in the oven for some more time. It is better to remove the cake from the mold after it has cooled completely.

After the cake has cooled completely, you can pour glaze over it. It’s not difficult to prepare: just whisk the sweet powder with the egg white.

Manufacturing process

In any recipe for making muffins, the most important thing is to knead the dough correctly. This is what we will do:

  1. First, sift the flour (do this twice if possible). Then add baking powder to the flour and mix well.
  2. Place the butter in a mixer bowl and start beating (at high speed). Continue beating until the butter turns snow-white. Without stopping the process, add sugar, then beat for another 2 minutes.
  3. Add both eggs to the resulting mass, add vanilla sugar and beat again until the mass becomes snow-white. During the beating process, remnants of our consistency will remain on the walls of the bowl - they must be removed so that a homogeneous mass emerges.
  4. Next, reduce the speed of the mixer to a minimum and evenly add flour and milk to the mixture (continue whisking). Add flour and milk in 3-4 additions.
  5. When we get a dough that is homogeneous in its structure, we can turn off the mixer.
  6. Now the dough needs to be poured into cardboard molds. This can be created using a special pastry bag or a regular tablespoon. Fundamentally! Fill the molds approximately 2/3 full.
  7. Preheat the oven at 180 degrees. Place the molds with the dough on a baking sheet and place in the oven for 20 minutes.
  8. When the cupcakes are ready, take them out of the oven and let them cool (do not remove them from the molds).

  1. Beat the butter and sugar until foamy, adding 1 egg at a time, combine with flour, starch, and baking powder.
  2. Add cottage cheese, mashed with sour cream and vanilla. Add cherries and mix.
  3. Line the pan with parchment or grease it, transfer the dough into it and bake in the oven. Manufacturing time – 50-60 minutes at a temperature of 180°C.

8. Cottage cheesecake with apples

The preparation and quantity of ingredients are similar to the cheesecake with cherries.

Instead of cherries, take 4-5 apples, peeled and cut into small cubes. Apples mix perfectly with cinnamon, so we recommend adding a pinch to apples for lovers of fragrant baked goods.

9. Curd muffins with raisins

Crumbly warm pastries that are appropriate both on a festive table and for everyday tea drinking.

Ingredients:

  • Cottage cheese – 150 g.
  • Flour - 1.5 cups.
  • Raisins - to taste.
  • Eggs – 1 whole and 1 yolk.
  • Vegetable oil – 2 tbsp. spoons.
  • Melted butter – 1 tbsp. spoon.
  • Sugar – 0.5 cups.
  • Baking powder – 0.5 teaspoon.
  • Soda - a pinch.
  • Salt.

Manufacturing:

  1. Mix flour, soda, baking powder and salt.
  2. Beat the mixture of butter and sugar for 5 minutes, adding all the eggs, then add the cottage cheese and beat for another 2 minutes.
  3. Add the flour mixture in parts and mix thoroughly, using a mixer. We introduce raisins at the end.
  4. Prepare the molds - grease, fill two-thirds full and bake for about half an hour at 180 degrees.

10. Curd cake according to GOST

The recipe is very close to a traditional cupcake.

Ingredients:

  • Flour – 300 g.
  • Cottage cheese – 260 g.
  • Sugar – 330 g.
  • Testicles category C1 – 4 pcs.
  • Plum oil – 150 g.
  • Baking powder – 1.t. spoons.

Manufacturing:

  1. Soften the butter (you can use good margarine) and grind it with sugar.
  2. We wipe the cottage cheese (beat it), combine it with an oily consistency, mix in the eggs one at a time.
  3. Add the sifted flour and baking powder last; at this step you can add additives - nuts, chocolate chips, raisins.
  4. Oven temperature – 170-180 degrees, baking dishes – silicone or oiled iron, cooking time – from 45 minutes to an hour.
  5. Sprinkle the cooled products with sweet powder.
