Takuska for a festive table in the form of a pie of pancakes with meat is simple to prepare, but it will take a little time. Housewives will also need this recipe for Maslenitsa, when they need to create a wide variety of dishes, snacks and sweets from pancakes. This pancake pie with meat must be served cool. It holds its shape perfectly and comes out very tasty. My recipe with step-by-step photos is at your service.

Pie Inner:

  • 1 glass of drinking water;
  • 2 pieces of onions;
  • 1 carrot;
  • 2 bay leaves;
  • 60 grams of fresh meat;
  • 1 clove of garlic;
  • 1/3 teaspoon salt;
  • ¼ teaspoon ground dark pepper;
  • ¼ teaspoon ground coriander;
  • 3 sprigs of dill.

For pancakes:

  • ½ liter of milk 3.6%;
  • 2 pcs. chicken eggs D-1;
  • 200 grams of wheat flour;
  • a pinch of salt;
  • 1 teaspoon sugar;
  • 40 ml vegetable oil;
  • green lettuce leaves for decoration.

How to cook pancake pie with meat in the oven

First I will prepare the meat filling. In a duckling pot or stewpan, cut the meat into pieces, peel one onion and cut into four parts, add to the meat. Peel the carrots and cut them into pieces, place them with the meat, add all the spices and fill them with water. Close the lid and simmer until done over medium heat.

Pass the stew through a meat grinder. Cut the onion into cubes and fry in oil. Combine the onion with the minced meat and mix everything together.

The meat inside is ready, let's bake pancakes. Mix the eggs with sugar and salt, add ¼ portion of flour and beat with a mixer. Then, one by one, pour in a little milk and a little flour, and beat. Later again milk and flour. The finished dough should not have any lumps.

Pour 250 ml of the finished dough and put it aside.

Heat the oil in a pancake pan and bake thin pancakes from the remaining dough.

When both the pancakes and the inside are ready, we begin to assemble the pancake pie. Take a baking dish with removable sides d=24 cm, place one pancake on the bottom, and in a circle another four pancakes on the sides of the pan.

We wrap the meat filling in the remaining pancakes and roll them into a tube. We place one at the bottom of the mold, and continue to lay out the others in a circle until we fill the entire mold.

When the mold is one hundred percent filled with stuffed pancakes (I got 2 tiers), chop the dill and mix it with the dough, which we set aside. Fill all the pancakes with this batter.

We wrap the hanging pancakes and cover them with one whole pancake.

Set the oven to 200°C. Once it has warmed up, cover the prepared pie with foil and place in the oven for 20 minutes. Then, take it out of the oven and cool it in the pan.

Transfer the cooled pancake pie with meat to a plate. I decorated it with beautiful and juicy green lettuce leaves.

I like to add rice to the filling, but it's not important. This time I intended to make it with meat only, but I over-salted it a little. I still had to add rice - I couldn’t live without it! Try both ways and decide for yourself which tastes better!

Ingredients

  • Milk – 0.6 l
  • Testicle – 2 pcs.
  • Vegetable oil – 3 tbsp. + for frying
  • Flour – 150-200 g
  • Sugar – 1.5 tbsp.
  • Soda – 0.5 tsp.
  • Salt - to taste
  • Minced meat – 400 g
  • Onion – 1 pc.
  • Rice (optional) – 50 g

Step-by-step manufacturing process at home

  1. The proposed quantity of goods is enough for 15-20 pancakes, which will be used for the pie, and heels on top, which can be eaten with jam or sour cream.

Beat the eggs into a thick foam. Add milk, sugar, salt, slaked soda and mix. Add the sifted flour in portions, achieving the appropriate consistency of the dough. It should flow freely from a spoon, but not be very liquid. Lastly, add 3 tablespoons of oil.


Lightly grease the frying pan and heat it well. Fill 1 scoop of dough and spread it over the bottom, turning the pan in the appropriate direction. We bake pancakes on both sides. There is no need to fry them too much to prevent them from becoming brittle.

While the pancakes are cooking, you can do the insides at the same time. Peel the onion, wash it and cut it into cubes. Fry in a small amount of vegetable oil.

Add the minced meat to the frying pan and fry along with the onion for about 10 minutes. Salt and season to taste. If it starts to burn, add a little water.

If you decide to make a pie with rice, now is the time to add it. Mix everything well, cover with a lid and leave to brew for another 10 minutes. Taste for salt and pepper and add if necessary.

We put a stack of ready-made pancakes and a plate with entrails in front of us. Grease the pan with vegetable oil and lay out several pancakes so that the edges hang down. Place 1-2 more pancakes on the bottom.

Distribute approximately half of the minced meat over the pancakes.

Cover with a couple of pancakes and spread the remaining filling. You can create a taller cake and form three layers. We place another pancake on top and bend the edges of the ones that were hanging down from the very beginning. To keep the top neat, cover it with another pancake and tuck the edges into the pan. Place the pie in the oven, preheated to 180 degrees, for 15 minutes.

Cool the finished pancake pie with meat slightly and remove it from the mold. Serve hot, cutting into pieces like a cake. It's so delicious that no additions are needed. Apart from, perhaps, tea!
