Jalebi

Jalebi - sweet spirals - is one of the most beloved delicacies of Indians. Preparing jalebi is not particularly difficult. The ingredients included in its composition are at hand for every housewife.

Products
For the test:
Flour – 175 g
Baking powder – 1/4 tsp.
Water – 300 ml
Sour cream (or yogurt) – 1 tbsp.
Semolina – 2 tsp.

Water – 600 ml
Lemon – 1 tbsp.
Saffron – 1 tsp.

Prepare all ingredients for jalebi.

How to prepare jalebi:

Mix flour with baking powder and semolina, sift into a deep bowl, add water and mix.
Add sour cream and stir vigorously until the lumps disappear. Cover the bowl and place in a warm space for 2 hours. A multi-cooker is perfect for this, in the “Multi-cook” mode, with the temperature set at 35 degrees.

Prepare the syrup: dissolve sugar in water, add saffron to give the syrup a golden color.
In India, they add flower essence to the syrup, but this is not for everybody. Boil the sweet syrup until it thickens.

Heat the vegetable oil to approximately 100 degrees. Pour the dough into a cooking bag and squeeze it through the hole in a narrow stream into the bubbling oil, forming spirals - a ring within a ring, starting from the center.

Remove the spirals fried until golden brown from the oil, drain, and place on a napkin to remove excess oil.

Then dip the hot jalebis in the hot syrup for 20 seconds.

Place the spirals in a colander to remove any remaining syrup. When serving jalebi, you can sprinkle with ground nuts. Jalebi is served both hot and cool.

How to cook jalebi

To make the dough you will need:

  1. 2 stacks flour;
  2. 2 tsp yogurt or kefir;
  3. 1.5 stack. warm water;
  4. 1.5 tsp. semolina;
  5. ½ tsp. soda

  • 2 stacks water;
  • 1 tsp lemon juice;

Manufacturing process

Let's start preparing the dough. The first thing you need to do is mix flour and semolina. After this, add yogurt, soda and water. We take a mixer and start whisking it all well. You will see that the dough is quite liquid. Don't worry, this is how it should be.

After this, you need to place the bowl with the jalebi dough in a warm place for several hours. This must be done so that the dough can ferment.

After some time, you will see that the dough has become more viscous and homogeneous.
In addition, it will begin to gurgle. While the dough reaches the mixture that suits us, prepare the syrup. To begin with, you will need to bring water with sugar and lemon juice to a boil for the jalebi.

Let it cook for 5 minutes. After this, turn off the syrup and let it cool.

To fry the dough, you can use a disposable pastry bag. It is necessary to cut off very little edges so that the dough is squeezed out in thin spirals.

Before heating the dough, preheat the pan thoroughly. Add enough butter or ghee so that the dough does not touch the bottom of the pan. Wait until it warms up perfectly.

Using a pastry bag, squeeze out the dough and make spirals or any other pictures. Jalebi should be fried for approximately 30 seconds on each side. They will acquire a slight blush and noticeably swell. When removing them from the pan, dry them for a few seconds on a napkin so that it absorbs excess oil and the Indian jalebi will be healthier.

Step 1:

How to cook jalebi? Prepare the products according to the list. Take the highest grade flour. Try to keep all products at the same temperature, room temperature. Sift the flour through a fine sieve in advance. It is better to use the smallest semolina, bottled or filtered water.

Step 2:

Pour wheat flour into suitable sized containers. Add semolina and baking powder to it. Stir gently, being careful not to stir up any flour dust.

Step 3:

Add sour cream to the dry flour mixture.

Step 4:

Pour in water and start kneading the dough. It should turn out watery, but a little thicker than pancake. Try not to pour in all the water, do it in parts, because it may take more or less water for you than for me (it depends on the flour).

Step 5:

Leave the finished dough in a warm place overnight (that is, in the dark) or for at least 2 hours.

Step 6:

Start making syrup.

Step 7:

Pour water into the pan and add sugar. Turn on the stove to low heat.

Step 8:

Stir the water until the sugar is one hundred percent dissolved. Bring sweet syrup to a boil. Pour in lemon juice and cook for another 1-2 minutes. Let the syrup cool slightly.

Step 9:

Pour the finished dough into a pastry bag or a regular tight bag. For a bag, use a nozzle with a narrow opening, and for a bag, simply cut off the corner.

Step 10:

Heat vegetable oil in a frying pan. The oil level should be about 3-4 cm. Squeeze the dough from the bag into the hot oil in the shape of spirals. Fry on both sides until golden brown.

Step 11:

Remove the finished jalebis from the oil with a slotted spoon. Let the excess oil drip off and transfer the jalebis to the cooled sweet syrup for 5 seconds.

Step 12:

Remove the jalebis from the syrup and you are ready to serve. Bon appetit!

The hardest part of making jalebis is pressing them into spiral shapes. The first few things just came out in separate pieces, but then things got even simpler. To squeeze out jalebi, it is best to use a tight bag, from which you can cut off a corner. The jalebis are tasty, but like all fried foods, they are obviously not a healthy food.

Be prepared for the fact that you may need more or less flour than indicated in the recipe. Focus not on the amount of flour, but on the desired thickness of the dough. To avoid mistakes, read about flour and its properties!

Use oil with the highest smoke point for frying!
Any oil is useful only until it reaches a certain temperature - the smoke point, at which the oil begins to glow and toxic substances, including carcinogens, are formed in it. With rare exceptions, unrefined oils have a low smoke point.
They contain a lot of unfiltered organic particles, which quickly begin to glow. Refined oils are more resistant to heat and have a higher smoke point. If you are going to cook food in the oven, frying pan or grill, make sure to use oil with the highest smoke point. The most common of the oils with the highest smoke point are refined varieties of sunflower, olive and grape.

This is one of the most favorite sweets in India. Jalebis are prepared there right on the street, on virtually any corner, and sold right away. Sweet crispy spirals will not leave anyone indifferent, and will especially appeal to children and gourmets.

Indian Vedic sweets - jalebi

Compound:

  • 1.5 cups flour
  • 1 tbsp. spoon of sour cream
  • 1/4 teaspoon baking soda
  • 2 teaspoons semolina
  • 1.5 glasses of water
  • 1.5 cups sugar
  • 1 glass of water
  • 1 tbsp. spoon of lemon juice
  • a few saffron stamens (if available)
  • a couple of cardamom pods (optional, for scent)

Also:

  • vegetable oil (for deep frying)

Making jalebi:

  1. Mix all the ingredients for the dough. It should not be thick, approximately like pancake batter.

Dough for making Indian sweets

  • Cover and place in a warm space for at least two hours. If there is no warm place, then the container with the dough can be placed in a bowl of warm water.
  • Prepare syrup. To do this, mix water with sugar and put on fire. When it boils, add saffron and cardamom (optional) and cook over medium heat for about 8 minutes until the syrup becomes slightly thick. At the end add lemon juice.

    Syrup for impregnation

  • Find a thick bag (you can even use milk) and cut off a corner, and create a huge hole on the back side if it is not there. Either use a pastry bag or syringe.
  • Pour oil into a frying pan in a layer of at least 3 cm and put on fire.
  • Pour part of the dough into a bag, pinch the top hole and squeeze it in a narrow stream into the bubbling oil with radial movements so that spirals come out.

    Fry on both sides until golden brown. There should be enough oil so that the jalebis do not touch the bottom of the pan.

    Making jalebi

  • Remove the jalebis with a slotted spoon, let the excess oil drain off and immediately dip them hot in the cooled syrup for about 10 seconds.
  • Place the jalebis soaked in syrup on a tray to dry and cool.

    After soaking in syrup, the jalebis should remain crispy, so don’t leave them there forever (maximum 25-30 seconds)!
