In summer and spring, most often, I want to cook something tasty, frisky and ordinary. Try making delicious and satisfying green onion pancakes for your own family. Manufacturing development is quite simple and does not take much time. In almost 20 minutes, a hearty and tasty snack will be on your table.

Serve the pancakes warm with sour cream or other suitable sauce, for example, homemade mayonnaise, sweet and sour sauce.

Ingredients:

  • Green onion - 200 g.
  • Chicken eggs - 4-5 pcs.
  • Wheat flour - 5-6 tbsp. l.
  • Salt - 1-1.5 tsp.
  • Sugar - 1 tsp.
  • Herbes de Provence - 1 tsp.
  • Hard cheese - 100 g.
  • Vegetable oil - 50 g.

Production time: 30 minutes. Number of servings: 4.

How to cook:

1. First prepare the green onions. Wash it thoroughly and dry it on a cardboard towel to remove excess water. Cut into small pieces and place in a deep container for kneading dough.

2. Beat in the chicken eggs. If they are large, then 4 eggs will be useful; if they are small, take 5 pieces. Stir.

3. Add salt, sugar and herbes de Provence. You can experiment with spices. Stir.

4. Sprinkle with sifted wheat flour. Stir.

5. Grate any tasty hard cheese. Add shredded cheese to the rest of the ingredients. Stir until evenly distributed.

Cover with a lid and leave in the kitchen for 10-15 minutes. During this period of time, the onion mass will release juice and become less thick.

6. Place a frying pan with vegetable oil over moderate heat. Reheat well. Lay out small pieces in the form of thin cakes. Reduce heat slightly and cook until golden brown on one and two sides. During this period of time, the cheese will melt and brown perfectly.

7. Prepare a flat plate with cardboard napkins in advance. Place the pancakes with green onions to absorb excess oil and serve immediately after a couple of minutes.

I like to bake various types of pancakes with vegetable ghee made in Turkey. In appearance it resembles melted butter. They don't turn out very greasy. Kefir pancakes with eggs and green onions - a recipe for fluffy pancakes

Not long ago I watched a master class by Gordon Ramsay. Naturally, I liked the recipe itself. And the words that Gordon said. I don’t remember verbatim, but it went something like this: there is always something to learn in the kitchen. And it's true! Quite recently, I discovered how amazingly soda behaves, and how to correctly mix it into the dough so that the products are especially soft and shaggy. I’ll tell you about all this in the recipe for mind-blowing pancakes with green onions.

Not long ago I made pies with potatoes using kefir. So, I put baking soda in them the old way - in flour. But when I tried it the other way around, now this is the only way I cook. Although that dough is just as fluffy, it’s somehow even softer... I can’t describe it in general - just try both technologies and choose yours.

Fluffy kefir pancakes with eggs and green onions

Pancakes are a common dish in Slavic cuisine. We've all been making them for years. But not everyone knows that pancakes can be a separate dish if they are served with sauce and a drink. But they can replace bread. In this case, they are served with first courses. Naturally, in the 2nd case we are talking about unsweetened flatbreads. I’ll tell you exactly how to prepare snack pancakes.

  • Flour – 200g;
  • Drink – 200g;
  • Testicle – 1 pc.;
  • Green onion – 60g;
  • Soda – 4g;
  • Salt – 3g;
  • Vegetable oil - for frying.
  • Sour cream;
  • Dill.

I measure all the ingredients using a kitchen scale. I take a fatty drink - 2.5%. It will taste better this way. But the egg is an optional component; I made it without it, I just added a little more water (20 g). It comes out unsurpassed! By the way, in addition to onions, a boiled egg, cut into cubes, is added to the filling. But I don’t like eggs as much as I do, so I cook without them. There is no particular difference felt. All the flavor here comes specifically from the onion!

We quickly and deliciously prepare pancakes with green onions:

1. So, let's start making the dough. Add baking soda to the drink and stir.

It rises and foams quite a lot, look, the cup has become full.

2. Beat the egg and salt until light foam appears. I beat with a fork, or you can use a whisk. Take a larger container for eggs, because we will introduce all the other components here. And later I had to pour it into a saucepan because the flour didn’t fit.

3. We combine both bases: pour the drink with soda into the beaten egg. Beat until the mixture is homogeneous. By the way, the drink frothed even more while it stood.

4. Add a spoon or two of flour into the watery base. And every time we carefully mix the dough so that there are no lumps in it.

The mixture of the finished dough is like thick sour cream. Even thicker. It is sticky and stretchy, like slime.

5. Cut off the feathers of green onions. And cut them into small pieces.

6. Mix the chopped onion into the dough. Don't feel sorry for Luke. There must be so much of it.

This very exciting activity of mixing onions in dough can be entrusted to children. My son “asked for it” himself.

7. Heat the oil in a frying pan. And reduce the heat to medium (I set it to 3 on an electric stove with six divisions). Dip a clean spoon into the heated oil so that it is perfectly lubricated. Now the dough slides off perfectly into the pan.

8. Spoon the dough into the frying pan.

Fry the pancakes on both sides for 2-3 minutes until golden brown. When you turn them over, they begin to rise and become very tall and plump. And so tasty that my husband snatched it right out of the frying pan. They are soft, more tender than if you threw soda into flour.

Prepare the sauce. Chop the dill. Mix dill with sour cream. And we dip the most delicate and delicious pancakes into it. It's so delicious that it's impossible to describe in words.

As for substituting certain ingredients. The drink can simply be replaced with fermented baked milk or yogurt. Onions can be replaced with greens. Or, cook with onions and eggs. And for the sauce, you can make your own mayonnaise or use unsweetened yogurt instead of sour cream.

Tips for making onion pancakes with kefir

Amazingly, even an ordinary pancake recipe has several necessary aspects that will make the preparation of the dish easier and help make it tastier:

1. Soda is usually added to flour and later combined with the rest of the ingredients. In the same recipe, I tried to create it slightly differently. And she combined the drink with soda, allowing time for the reaction to begin and the drink to begin to foam. And later I mixed it with the rest of the ingredients. As a result, the dough is fluffy, tender, melts in your mouth!

2. To make it easier to scoop up the dough, you can dip a spoon in heated oil: the spoon is spotless, and the dough comes off the spoon without any problems.

The basic recipe for pancakes is easy to add different tastes and smells. Just one aspect should be taken into account: if the inside of the flatbread is sweet, it is worth adding at least a little sugar (or honey) to the dough. Probable internals:

  • Apples. By the way, you can add vanillin and/or cinnamon along with apples. This tendency will turn ordinary pancakes into almost real cakes.
  • Banana.
  • Raisin.
  • Cottage cheese.
  • Greenery.
  • Sausage. Curiously, chopped onions mixed into pieces are mixed with the sausage.
  • Tomatoes. Only in advance should they be blanched.
  • Vegetables such as zucchini, cabbage, eggplant or bell peppers. But before adding vegetables to the dough, they should be lightly fried separately.

My friend often does not mix in the additives listed above, but makes their true innards. For example, he places a piece of dough on a frying pan. Place minced meat on top of it. And on top of the minced meat is another layer of dough. Naturally, such pancakes turn out a little larger than ordinary ones. Well, so that they are one hundred percent fried, when she turns the cakes over to the other side, she covers the frying pan with a lid, but she quickly makes really lazy pies from ordinary dough. Well, this option is similar to mine, only with an egg.
