Sweet rolls are an ordinary but beautiful dessert that will appeal to all connoisseurs of savory food without exception. In fact, this dish is a fantasy on the theme of traditional Japanese rolls. Keeping the classic cylindrical shape of the rolls, we wrap the filling in chocolate pancakes instead of nori, and use sweet cream cheese or curd mass and juicy fruits in the salty interior. In a couple of minutes we will have a beautiful, unusual and indescribably delicious dessert. Shall we begin?!

Prepare the ingredients according to the list.

Beat the chicken egg for a couple of minutes so that the white and yolk mix well.

Add milk, sugar, 1 pinch of salt and 2-3 tbsp. cocoa. Stir everything thoroughly until the mixture is homogeneous and the sugar and cocoa are dissolved.

In portions of 1 tbsp. Add sifted wheat flour to the mixture of watery ingredients. Stir everything well. When adding flour, be guided by the thickness of the consistency, when the flour dissolves completely and you get a uniformly liquid “pancake” dough - the mixture is ready. I add about 5-6 tbsp. flour. Place the finished dough in the refrigerator for 15-20 minutes.

Heat a frying pan and grease the bottom with a thin layer of vegetable oil. Pour in a portion of the prepared dough. Tilt the pan, spread the dough into a thin layer and fry the resulting pancake on both sides until cooked. Repeat the function with the remaining dough.

Place the finished pancakes on a plate and brush with butter. In a frying pan Ø 28 cm I usually get 6 not very thin pancakes.

For the inside, mix cream cheese or curd mass with sweet powder. If desired, add vanilla sugar or other spices to taste.

Prepare the fruit for the insides. Peel the apples, remove the seeds and cut the apples into small pieces. Also peel and cut the orange into small pieces. In order not to peel each segment of the orange from the partitions, after peeling the orange, use a sharp knife to cut out the pulp between the partitions (for more details, see the video version of the recipe).

The composition and amount of fruit inside can be adjusted to your own taste. I love the way orange and sweet, juicy apple varieties are mixed into chocolate pancakes. I most often prepare a summer dessert with strawberries.

Spread the prepared pancakes with cream cheese or curd mixture. Add pieces of fruit, slightly moving away from the far edge of the pancake.

Roll the pancake into a roll or fold it, lightly knead it, and shape the pancake using a beech mat. Cover the prepared rolls with cling film and place in the refrigerator for 2-3 hours to cool.

Cut the chilled sweet pancake rolls into portions, decorate according to your own taste and mood, and then serve.

Sweet pancake rolls “Three tastes” with sauces

DESCRIPTION

PANCAKE DOUGH:
about 1.5 tbsp.
premium flour 1/2 tsp baking
powder pinch of salt
1 pack of vanilla sugar
2-3 tbsp sugar (amount of sugar to taste), if you eat it with sour cream or for a non-sweet interior, then I increase the amount of sugar, it all depends on taste preferences - all my gourmands!!
2 tbsp olive oil
2 eggs
1 tbsp.
cream 10% (warm) 1 tbsp.
milk (warm) 1 tbsp. water (warm)

1. MILK FILLING:
Sweet powder 3 tbsp (the amount of sugar can be increased or decreased - all to taste)
Philadelphia or Mascarpone cheese 1 package (can be replaced with any other cream cheese or just cottage cheese with sour cream or cream

2. POPPY FILLING:
poppy seeds 150 g
milk – 150 g
sugar 1-2 tbsp (the amount of sugar can be increased or decreased - all to taste)
zest of ½ lemon
1 tsp honey

3. FRUIT FILLING OR BOILED CONDENSED MILK (all to taste),
any thick fruit jam (to taste)
or boiled condensed milk

1. STRAWBERRY SAUCE

frozen strawberries 1 pack
1 tbsp starch
4-5 tbsp sugar
vanillin
50 g butter
a glass of cognac

2. ORANGE SAUCE

Ingredients:
5 oranges
zest of several oranges
1/2 tbsp starch
2 tbsp sugar
1 tbsp honey
2 tbsp sweet butter
a glass of orange liqueur (if for children, omit the liqueur)

3.WHITE CHOCOLATE SAUCE WITH BANANAS

Ingredients:
1/2 pack of snow-white chocolate
50 g butter
1-2 bananas
1 can of condensed milk
vanilla
1 glass of Baileys milk liqueur

4. CHOCOLATE-NUT SAUCE

1 pack of dark chocolate
50 g butter
100 ml water
vanilla
almonds/walnuts/hazelnuts
a glass of cognac

5. MARMALADE AND HONEY SAUCE

Ingredients:
fruit marmalade (any kind to taste) 150 g
water – 2 cups
2 tbsp.
l sugar 1 tbsp.
l honey lemon zest or orange - to taste

6. CREAMY CHOCOLATE SAUCE

Ingredients:
1 pack of heavy cream 35% fat
vanilla
2 tbsp sugar
2 tbsp butter
2 tbsp brewed strong coffee
1/2 pack of dark chocolate
1 glass of milk liqueur

7. BLACKBERRY-CRANBERRY SAUCE WITH ORANGE JUICE

1 pack of frozen blackberries,
large, frozen cranberries
1/2 tbsp sugar
50 g butter
1/2 tbsp.
orange juice glass of cognac
1/2 tsp nutmeg zest
of 1/2 lemon
1 tbsp starch

8. CREATIVE SAUCE

Ingredients:
1 pack full-fat cottage cheese
4 tbsp sweet powder
1 pack of cottage cheese without additives
sour cream 3 tbsp
vanilla
1 glass of milk liqueur

How to make sweet pancake rolls

Ingredients:

  • Milk – 500 ml
  • Wheat flour – 160 g
  • Chicken egg – 3 pcs.
  • Sugar – 3 tbsp.
  • Sour cream – 3 tbsp.
  • Cocoa powder – 3 tbsp.
  • Vegetable oil – 1 tbsp. + for frying
  • Cottage cheese – 300 g
  • Banana – 1 pc.
  • Kiwi – 1 pc.
  • Apple – 1 pc.
  • Baking powder – 1 tsp.

Manufacturing:

Let's start preparing sweet pancake rolls by making the pancakes themselves.

In a deep bowl, mix eggs with 2 tablespoons of sugar.

Beat with a whisk until foam appears. This can be created either with a hand whisk or with a mixer.

Chocolate pancakes with cocoa (and we will bake these specifically) often turn out dry, but there is one trick: to make them soft, you need to add sour cream to the dough. 1 tablespoon of sour cream of any fat content is enough.

Along with sour cream, add 1 tablespoon of vegetable oil without aroma, mix well with a whisk.

Sift flour with baking powder and cocoa into a separate bowl.

Add half the mixture of flour and cocoa to the watery part and mix thoroughly with a whisk. The result will be a smooth and fairly compacted mass.

Now you can pour in warm milk and mix well again.

Add the rest of the flour and cocoa consistency, mix and achieve a homogeneous dough structure without lumps.

The dough needs to stand for 10 to 20 minutes so that the flour absorbs the liquid well. Check the dough for thickness. It should be like regular pancake batter, only chocolate-colored. If the dough is very liquid, add 1 tablespoon of flour; if, on the contrary, it is dense, then dilute with milk.

Heat the frying pan well, grease it with vegetable oil and spread the dough over the pan with a ladle. Do not pour too much batter, otherwise the finished pancakes will be very thick.

Because the pancakes are chocolate, it is quite difficult to determine the degree of their readiness; be careful that they do not burn or turn black. The pancakes bake quickly - a little less than 1 minute on each side.

Place the finished pancakes in a stack on top of each other.

Prepare the curd filling: mix cottage cheese of any fat content, pureed through a sieve, a tablespoon of sugar (you can use sweet powder) and 2 tablespoons of sour cream.

Cut fruits into thin strips - banana, apple and kiwi.

Spread a thin layer of curd filling over the chocolate pancake (approximately 2-3 mm).

Place strips of fruit on top of curd filling.

Roll the pancake into a tight tube.

Trim the edges without the inside with a knife and cut the pancake tube into rolls of similar size.

Place the sweet rolls on a plate and garnish with melted chocolate and mint.

You can make sweet pancake rolls from ordinary light pancakes, but the cut of the rolls will be less contrasting than with chocolate pancakes.

Sweet pancake rolls

Sweet pancake rolls are very easy to make. Mascarpone cheese and any sweet fruit are useful for this. Pancake rolls turn out very tender and tasty.

  • Soft cheese (“Mascarpone”) – 250 g
  • Sugar - 50 g
  • Lemon zest - 1 pc.
  • Banana – 2 pcs.
  • Jam (strawberry) - 100 g

Recipe for “Sweet pancake rolls”:

1. Prepare pancakes ahead of time according to the recipe that you like. Add “Oleina” sunflower oil to the pancake dough.

3. For the inside, grate the lemon zest on a small grater.

4. Prepare the filling: combine soft mascarpone cheese, sugar and lemon zest. Stir everything thoroughly.

5. Place the pancake in front of you and spread the cheese filling in an even layer, leaving about 2 cm on the far side. Cut the banana pulp into small cubes and place on top of the cheese filling.

6. Roll the pancake into a roll. Wrap the purchased rolls in cling film and place in the refrigerator for an hour.

7. Before serving, carefully cut the rolled pancakes into rolls approximately 3 cm high. Place on a plate.
Serve with strawberry jam. Bon appetit!
