Manufacturing tricks

To make the cutlets come out tasty and juicy:

  1. Create minced meat without the help of others. And so that there is no excess water in it, pat the meat well with a cardboard towel
  2. To dilute the pale appearance of steamed cutlets and vary the taste, you can add different vegetables, herbs and spices to the minced meat.
  3. It is better to add chopped onions. Grated or twisted onion through a meat grinder will make the minced meat watery.
  4. To get the perfect shape and color of the cutlets, you can roll them in breadcrumbs
  5. A melted piece of butter added to the minced meat will give the cutlets softness and tenderness.

Steamed diet cutlets are a universal dish. They are in unsurpassed harmony with all types of side dishes: potatoes, cereals, vegetables.

You can use various sauces and seasonings with them. They can also be served as a separate dish, which will please everyone without exception.

Steamed chicken cutlets - 8 recipes for dietary cutlets for kids and adults

To cook proper steamed chicken cutlets, you need to use a slow cooker or a double boiler. But you can create it in another way. How exactly? About everything in order in our article!

A perfect recipe for steamed chicken cutlets

To create traditional steamed cutlets, you will need to take tender low-calorie fillet, fragrant onions and spices to enhance the taste.

  • chicken fillet – 400 g;
  • onions – 85-90 g;
  • breadcrumbs - 3 tbsp. l.;
  • rock salt;
  • medium testicle – 1 pc.;
  • aromatic pepper to taste.

{Instructions} step by step:

  1. Trim the transparent films and fat from the fillet. Wash carefully, then cut the bird into pieces.
  2. Then peel the skins from the onions, wash and divide into slices. Grind together with the chicken in a meat grinder.
  3. Combine soft minced meat with fresh eggs and spices. Carefully knead the fragrant mass, which is immediately transferred to the refrigerator.
  4. After half an hour, use a moistened spoon to scoop out the mixture and form into oval shapes. Roll each one in small breadcrumbs.
  5. Place minced chicken cutlets on the bottom of a special container. Place in a double boiler or multicooker. Cook the dish for approximately 10-13 minutes.
  6. Serve with hot greens. The best sauce is sour cream or natural yogurt.

If you don’t have modern units in your kitchen, you can create cutlets in another way. Just bring the water to a boil in a saucepan, place a container or colander on top so that they do not touch the boiling water, cover the workpiece with a suitable lid and cook for about 15-19 minutes.

With the addition of semolina

Don't want to use eggs? It is recommended to include semolina in the recipe, which will “bind” the minced meat.

To create cutlets, you need to take:

  • chicken fillet – 400-450 g;
  • table salt;
  • semolina – 2 tbsp. l.;
  • medium onion – 80-85 g;
  • breadcrumbs;
  • seasoning for chicken to taste.
  1. Cut the processed and washed fillet on a cutting board. Also chop the onion without peeling.
  2. Pass both ingredients through a meat grinder. Season the purchased minced meat with salt and fragrant spices.
  3. Pour all the semolina into the mixture and stir. Place chicken mixture on refrigerator shelf. Let it stand.
  4. After an hour, when the cereal has swollen a little, put the water on until it boils. During this period of time, form cutlets with the addition of semolina.
  5. Place the preparations inside the container, set it over boiling water, and then cook for 10-15 minutes.

The designated cereal will “bind” the ingredients together, so this version of the cutlets can be prepared without using eggs.

Steam cutlets with carrots and herbs

Steamed cutlets, especially those made from chicken, turn out snow-white. To add some bright colors, chefs recommend adding carrots and herbs.

  • chicken breast – 450 g;
  • carrots and onions – 80 g each;
  • parsley and dill – 6-7 g each;
  • salt;
  • chicken egg – 1 pc.;
  • curry – 1 tsp.

Recipe step by step:

  1. Clean, wash and cut the breast. Remove the skin from the onion and peel the carrots. Separate the dill and parsley and wash.
  2. Grind poultry, herbs and vegetables in a meat grinder. Mix the mixture in a large bowl. Drive in a fresh egg, washed in advance in a soda solution.
  3. Continuing kneading, add curry and table salt. Leave the finished minced meat in the cold for approximately 30-40 minutes.
  4. In the next step, form oval shapes with wet hands or a spoon. Place in a special bowl, which is placed over bubbling water.
  5. Cook steamed cutlets with carrots and herbs for about 15 minutes, then immediately serve with sour cream sauce.

In addition to the greens indicated in the list, it is permissible to use other types: cilantro, spinach, tarragon, sorrel or basil.

With bread in a slow cooker

Minced meat often includes bread. But since this is a dietary recipe, it is suggested to take a few slices of bran loaf.

To make cutlets you need:

  • bran bread – 100 g;
  • chicken breast – 0.5 kg;
  • snow-white onion – 80-85 g;
  • salt and spices for chicken;
  • milk – 1-2 tbsp. l.;
  • large testicle – 1 pc.;
  • breadcrumbs for breading.

  1. Cut a couple of slices of bran bread. Divide into several parts, and later fill each with a sufficient amount of milk.
  2. At the same time, prepare the breast and white onion. Grind together with the softened slices in a meat grinder.
  3. Combine the resulting mixture with a large egg and spices. Add some salt. Stir until the mixture becomes viscous. Place in the cold for half an hour.
  4. From chilled and brewed minced meat, create oval or round shaped pieces. Bread each one in breadcrumbs.
  5. Pour boiling water from the kettle into the bowl of the unit. Insert a laurel leaf. In the “Fry” mode, bring the liquid to a boil. Then switch to the “Steam” option.
  6. Place a container on top where you can quickly transfer the workpieces. Snap the lid. Cook cutlets with bread in a slow cooker for 15 minutes.

Since this dish was created for a dietary menu, it is recommended to use bran bread specifically for steamed chicken cutlets in a slow cooker. And it’s better not the first freshness.

With cheese inside

For contrast, it is permissible to stuff the cutlets with some kind of inside. For example, cheese, which is best mixed with sour cream, herbs and garlic.

  • chicken fillet – 0.5 kg;
  • medium testicle – 1 pc.;
  • spreadable cheese – 100 g;
  • salt;
  • garlic – 2 cloves;
  • dill - 3-4 branches;
  • sour cream – 1 tbsp. l.;
  • onion – 1 pc.;
  • finely ground crackers.

Recipe step by step:

  1. Place the cheese into a deep plate. Rub with a fork and then add sour cream, crushed garlic and chopped dill.
  2. Mix the filling and immediately place it in the freezer.
  3. Cut the fillet together with the onion. Grind the indicated products in a meat grinder. Break a clean egg into the minced meat. Add salt and mix.
  4. Return the cheese mixture to the table. Roll uniform balls.
  5. Now take a sufficient amount of minced chicken, create a flat cake on your palms and place a ball of innards in the middle.
  6. Cover the filling with chicken mixture on all sides, forming a cutlet. Repeat until ingredients are complete. Roll everything in breadcrumbs.
  7. Place the pieces with the cheese inside on the bottom of the container. Steam for about a quarter of an hour.

The ingredient used for the inside can be replaced with cottage cheese, feta cheese or suluguni. But it is not recommended to take ordinary cheese, since it is very high in calories, which is unacceptable for the diet menu.

Recipe for those on a diet

If you stick to a low-calorie diet in principle, it is better to remove all the “heavy” ingredients: flour, breadcrumbs and eggs. But you can only put bran bread.

To create cutlets you will need:

  • chicken (fillet) – 490-500 g;
  • sour cream – 1 tbsp. l.;
  • salt;
  • parsley – 4-5 sprigs;
  • bran bread – 100-110 g.
  1. Cut bran bread into small cubes. Place on a baking sheet. Dry in the oven without using oil. Temperature – 200 degrees. Time – 7-10 minutes.
  2. Grind the light golden crackers in a blender or using a rolling pin. Set aside.
  3. Now pass the processed chicken through a meat grinder. Mix the minced meat with bran bread crumbs, salt, chopped parsley and sour cream.
  4. Stir and leave on the refrigerator shelf. After 30-40 minutes, quickly form the pieces, constantly washing your hands with water.
  5. Place on the bottom of the container. Steam the diet cutlets for 10-15 minutes.

Since this recipe for those on a diet does not contain semolina, flour, eggs or other “binding” product, a little bran bread, dried and crushed with your own hands, must be included.

With oat flakes

To give the cutlets an unusual structure, you need to add oatmeal previously steamed in yogurt.

  • oatmeal – 3 tbsp. l.;
  • minced chicken with onions – 600 g;
  • salt (table salt);
  • natural yogurt – 3 tbsp. l.;
  • testicle – 1 pc.;
  • seasoning "khmeli-suneli";
  • breadcrumbs.

Steamed cutlets are prepared from the same products as ordinary traditional fried cutlets, but they are prepared using units such as a steamer, pressure cooker, or multicooker (steamed cooking mode).

Due to the fact that when making steam cutlets there is no need for oil for frying them, the calorie content of such cutlets is reduced. They do not have a fried crust, so they are even easier to digest by the body and do not weigh down the stomach and digestive organs.

The principle of making steam cutlets is simple. Minced meat (beef, pork, chicken, lamb), also snow-white bread soaked in milk or water (can be replaced with grated potatoes, zucchini, pumpkin), chopped onions, salt, pepper are useful. And of course chicken eggs. A minced egg can retain the shape of the cutlet during its production, especially if the cutlet is not fried, but steamed.

Next, cutlets are formed from the prepared minced meat. They can be breaded in breadcrumbs or left without any breading at all. Then the cutlets are laid out on a mesh (you can grease it with vegetable oil) of a steamer and steamed until cooked.

Steamed cutlets can also be not meat, but vegetable, made from vegetables chopped by different methods.

You can serve steamed cutlets with various side dishes - from cereals, boiled pasta, from vegetables, stewed and fresh, from potatoes.

Cooking steamed chicken cutlets

  1. Cutlets can be prepared from various parts of the carcass, but you can get a very dietary dish only from chicken fillet. This part of the carcass contains virtually no fat. Wash the meat thoroughly and dry it with a napkin to remove excess water. Trim off any remaining fat. Cut into pieces and pass through a meat grinder (you can grind in a blender).
  2. Wash and dry the pumpkin. Peel off the skin. Grind on a medium grater. Squeeze out excess juice. Add to meat and stir well until evenly distributed.
  3. Add protein, dried paprika, dill, dark pepper, ground garlic and salt. Stir well.
  4. Using wet hands, form the cutlet mixture into round or oval shapes. Place in a heatproof dish. Place it on the grid in the multicooker bowl. Pour 300-400 ml of hot water into the bottom of the bowl. Cover with a lid and launch the “steamer” program - in different multicookers these keys are identical: in “Redmond” they can be “steamed”, “cook for steam” - it’s hard to make a mistake. Leave for 15 minutes. Production time depends on the power of your equipment. Focus on the annotation. If desired, diet cutlets can be baked in the oven at 180 degrees for 30-35 minutes.
  5. Meat cutlets with pumpkin are ready. Serve hot, sprinkled with chopped herbs.

Naturally, it will take little more time to make ordinary fried cutlets. Here, the production time is practically considered only the preparation step. The wonderful blush is fully compensated by the usefulness of steam cutlets. In addition, the golden color of the pumpkin version can completely compete in aesthetics with the classic crust.

Well, to complement this dietary holiday, you can steam vegetables along with the cutlets. Cut peeled carrots, asparagus, bell peppers and other vegetables to taste and fill the empty spaces on the multicooker grid with them - put as much as you can, you can add a little salt. A tasty and bright lunch is ready!

Don't forget that you can also create turkey cutlets using the suggested recipes.

Have a healthy lunch for you!
