Everyone in my family loves zucchini, and during the summer season, dishes from this vegetable are always on our menu. I suggest making stewed zucchini with meat. This dish can be either independent or an addition to any side dish. For example, my husband eats without a side dish, and especially for him I add more zucchini. My daughter, on the contrary, prefers to complement the dish with pasta or potatoes and uses it as a gravy. And I enjoy it in any version. This time I cooked with veal.

To prepare a dish, prepare the necessary products from the list.

Wash and dry the veal, cut into pieces 3-3.5 cm.

Pour sunflower oil into a pan and heat it, add meat and fry slightly. Cut the onion into half rings and add to the meat. Sprinkle with salt and seasoning.

Stir tomato paste in a glass of water, add to the pan and stir. Cover the pan with a lid, reduce heat and cook the meat for 35-40 minutes, until tender.

While the meat is stewing, chop the zucchini. Any version of a large tenderloin will do; I prefer semicircles.

When the meat can just be pierced with a fork, you can add zucchini, be sure to add salt and pepper. If desired, depending on the number of zucchini, you can add more water, but do not forget that the zucchini will also release a lot of juice when stewing.

Simmer the zucchini with meat for 15 minutes until the zucchini is soft. Finely chop the garlic and add it at the very end. Turn off the stove, cover the pan with a lid and let the dish sit for 10 minutes.

Serve very tasty and fragrant stewed zucchini with meat to the table, sprinkled with chopped dill.

Ingredients

  • 3 medium zucchini
  • 0.5 kg of any meat (pork, beef, lamb)
  • 3 tomatoes
  • 2 onions
  • 1 carrot
  • 3-4 cloves of garlic
  • small bunch of parsley
  • salt, pepper, spices to taste

Recipe for making a dish at home

  1. Peel the onion and cut into thin quarters, peel the carrots and grate on a large grater (you can also cut into cubes or strips). Wash the meat and cut into small cubes.
  2. Heat approximately 50 ml of vegetable oil in a deep frying pan or saucepan with a thick bottom, add the onion and fry it until golden brown over low heat. Add carrots and fry over low heat for a couple more minutes until the vegetables are soft.
  3. Add chopped meat to the pan, stir and increase the heat to high. Cook, stirring, approximately 1-2 minutes. Then reduce the heat to medium and cook the meat with frying, stirring, until the water has completely evaporated.
  4. Pour about 150 ml of broth or clear water into the frying pan, bring to a boil and cover with a lid (leaving a gap for steam to escape). Simmer the pork for about 1 hour with water boiling gently, and the beef for about an hour and a half until soft. If the water boils away during the stewing process, you can add it to the pan a little at a time.
  5. Make a cross-shaped cut on the tomatoes and place them in boiling water for a minute. Drain the boiling water, pour ice water over the tomatoes and let them cool completely. Remove the skin from the tomatoes and cut the pulp into small pieces.
  6. Carefully wash the zucchini and cut into cubes approximately the same size as the meat. If you are using old zucchini, you must remove the skin and remove the seeds first. Peel the garlic and chop it very finely or grate it on a small grater. Chop the greens with a sharp knife.
  7. Add zucchini, tomatoes and half the garlic to the frying pan with meat, salt, pepper and stir (add a little boiling water as needed). Simmer the zucchini with meat for about half an hour at a low simmer under the lid, stirring occasionally with a spatula.
  8. After the designated time, add the second half of the garlic, chopped herbs, stir and remove from heat. Leave the zucchini stew with meat to steep under the lid for 15-20 minutes. Remove the lid, place the finished dish on plates and serve. Especially delicious with sour cream. Bon appetit!

Manufacturing method

1. Cut the pork meat into small pieces.

2. At this point, lightly marinate the pieces of chopped meat. Pepper the pieces in a bowl with the consistency of peppers, pour in soy sauce (to taste) and mix the mass with your hand.

3. Cut the onion into quarter rings with a knife.

4. Finely chop the garlic cloves using a knife.

5. In a frying pan with oil, fry the garlic and onion until translucent. Then add grated carrots and fry together for 2 minutes.

6. Place the fried carrots, onions and garlic into a heat-resistant pan.

7. Place pieces of meat with sauce in the vacated frying pan, pepper and fry for a couple of minutes. Add more sauce as needed.

8. Next, add the meat to the vegetables in the pan. Mix everything and pay attention to the fact that there is little liquid. Therefore, there is no need to add water, the liquid will still appear from the zucchini.

9. Place the pan on the fire, close the lid and simmer for 10 minutes.

10. Add half-thawed pieces of fruit to the meat; there is no need to defrost them completely, otherwise it will be porridge.

11. Taste the liquid, determine the salt, add salt and add a mixture of peppers. Stirring is necessary at this point. Cover with a lid, turn on low heat and bring the stewed zucchini to readiness.
