These meat flatbreads are prepared throughout the Middle East and Turkey. They are called differently - lamaj, lahmajun - this is something like oriental fast food, a tasty and unusual dish in its presentation. You can currently try it in any Turkish restaurant.

Once upon a time, having tasted lahmacun for the first time, my household and I fell in love with it and ordered it whenever we could.

In the homeland of flatbreads, they are cooked in a hot oven, and I cooked it that way, it was delicious. Now I’ll show you the most common option, how you can cook Turkish pizza Lahmacun in an ordinary frying pan.

For fresh yeast dough, we will need the following products. I mix dry yeast with flour. Always pay attention to the yeast mixing method indicated on the package.

Pour water into a bowl, add sugar, salt and vegetable oil, mix everything. Then add flour and yeast and knead the dough.

To make kneading the dough easier, you can lightly grease your hands with vegetable oil. The amount of flour can vary greatly or minimally, because flour varies in its properties. The dough should turn out soft and pliable, and for this you need to knead it well. Then cover with film and place in a warm space to rise.

To prepare the filling, take all the necessary products. My sweet peppers are already twisted in a meat grinder.

Mix the ground beef with chopped onion, garlic, chopped tomato, bell pepper, herbs, spices and salt. All this can be processed in a meat grinder at once. If there are no tomatoes, you can replace them with a spoon of tomato paste, but this is not the same. Knead the minced meat until smooth and add a little water so that the inside becomes semi-liquid and can simply be spread on the dough. I added less than half a cup.

When the dough increases in volume, divide it into 6 parts. You can create larger cakes, then you will have fewer blanks. Roll out each piece of dough into a thin circle 2-3 mm wide. A frying pan with a non-stick coating must be kept on low heat and be well heated. To make it easier to distribute the filling, the prepared flatbread can be immediately placed on a hot frying pan.

I'm showing you how to create this on your first flatbread. In the subsequent ones, I already distributed the minced meat directly in the frying pan.

Fry the tortillas covered for one and a half to two minutes.

In this way. They cook very quickly because the dough is very thin and the meat is spread in a thin layer.

Inspect the back of the tortillas. As soon as they brown and the inside becomes light, the lahmajun are ready.

Place them on a plate in a pile and be sure to cover them with a deep bowl so that they do not cool down and soften.

Serve lahmacun flatbreads, generously pouring lemon juice over the meat surface, distributing greenish parsley leaves and tomato rings. They roll it up and eat it hot right away. This particular presentation brings out all the flavors of this dish. The waiters showed it to us in a Turkish restaurant, and since then we have not deviated from the tradition, even though I don’t like parsley)))) Everything in this dish is harmonious. Have fun!

How to cook lahmacun in Turkish

Lahmajun (لحم بعجين‎‎) - pronounced “Lakham bi ajin” and translated as meat in dough. This is a kind of pizza with chopped minced meat, vegetables and herbs. In the old days, such flatbreads helped poor farmers because they were made from ordinary dough and leftover food that was in the house. At the moment, this is a very popular dish in the east and in European countries. That's what street fast food is like.

In Arab countries, lahmacun can be purchased at any step. At home, its composition may vary depending on the region and preferences. For the inside, they use beef or lamb, which is chopped very finely, but can be replaced with regular minced meat.

By the way, the Turks believe that the Italians stole their idea and made their famous pizza. At home, I sometimes cook lahmacun, but with the most common ingredients. But when I want rich and very tasty lahmacun, I turn to this recipe from Turkish cuisine.
