Let's start making:

– we sort out the barley, remove debris, husks and anything that may be there, wash it several times;
– fry unblemished barley in a dry frying pan with a thick bottom until a pleasant smell of fried grains appears and the barley acquires a wonderful brown color;
– filter the birch sap through a fine strainer or through gauze folded in a couple of layers;
– pour the purified juice into the prepared container, add the cooled barley;

Recipe for making a drink from birch sap with barley

There are several options for how to prepare tasty and desired kvass from these components. To get a very tasty and necessary drink that can be stored for 6 months, you will need:

  • birch sap - 3 l;
  • barley -100 g;
  • capacity.

The recipe for making such kvass is simple. It is necessary to carefully strain the juice to remove any existing pieces of bark, wood chips and other particles that might have gotten into it during preparation. It is best to filter it using gauze folded in several layers. After this, set aside for 2 days in a cool place.

Dry the barley in a frying pan beforehand. The degree of roasting determines what the taste will be. If you overexpose the grains, the finished drink will be bitter. To achieve a delicate flavor, it is better to fry the barley until golden brown.

The recipe for making the drink requires a certain amount of time. Barley must be poured into juice. Some people place the grains in a gauze bag beforehand to make it easier to remove later. Kvass must be infused in a warm place. This activates the fermentation process. The first 2 days you should shake the container. Usually, within 3-4 days, kvass acquires the appropriate black color and pleasant taste.

If you leave it to steep for another day, it will acquire the most pronounced sourness. After this period, the kvass should be strained and cooled. When this particular traditional recipe is used, the finished composition differs in its rather mild but rich taste. As needed, the drink is sent to the basement for storage. To do this, pour the finished kvass into glass containers and seal tightly. This will allow you to store it in a dark, cool place for at least 6 months.

How to make kvass from birch sap with barley?

Ingredients

  • Birch juice;
  • barley;
  • raisin.
  1. Is this useful?

Perhaps there is no such person among our fellow citizens who has never tried kvass. It’s not for nothing that our distant forefathers knew how to create this beautiful drink. In addition to excellent taste, it has many other advantages, including health benefits. Although this is, naturally, an ambiguous point, because the drink contains a small dose of alcohol, which is really not very good. But, nevertheless, almost everyone is interested in the question of how to prepare kvass from birch sap with barley at home?

Is this useful?

As was said a little above, this drink has found its own lover for a very long time. At the moment, kvass is considered an ordinary drink, which has moved forward from century to century, from generation to generation, to our days. It distinguished itself among all others not only for its wonderful mild taste, but also for its many necessary parameters. And the point here is not only about what goods the drink is made from, but in general almost everything depends on its physical parameters. For example, we all know that it is a carbonated drink; thanks to this, our internal digestive organs (namely the intestinal tract) begin to work better.

But besides this, you cannot ignore the rich vitamin composition of the product. By drinking almost a couple of glasses of the drink a day (you don’t need any more), you can greatly strengthen your own immunity and really replenish your storage of essential vitamins, this is especially important in the cool seasons, when we so miss the sun and new vegetables and fruits.

Children can also drink kvass, since the ethyl alcohol content in it is actually low. But, of course, everywhere has its limitations, so it is better to give the child a glass of drink a day. And, obviously, it is better to give the drink to older children, from 7-8 years old; for very young children it will be a very carbonated drink, which is also not always good for such a gentle stomach.

Here's what a typical recipe is rich in:

  • Virtually all available vitamins (a group of low molecular weight organic compounds of relatively simple structure and varied chemical nature) : E, C, PP, B1, B2, A
  • Calcium and magnesium alloys that are useful and necessary for the body
  • Phosphorus
  • Lactic and other organic acids
  • Amino acids and amines

But in fact there are even more of them, each of them is not bad in its own way and has its own personal characteristics. For example, one variety may be beneficial for the stomach, the second – for the kidneys. Of course, we must not forget about the taste of the product; their tastes are also very different.

But in fact, asking the question of how to create kvass from birch sap with barley, we cannot even imagine how simple and fast it is. If you break the whole process into stages, then it can take almost one day including all the preparations.

Watch a detailed video on how to make kvass from birch sap and barley.

Step 1 – collection

Of all the subsequent steps, this is the longest. But, of course, you can’t do without natural birch sap. It’s better to try a little and get the drink from birch trees with your own hands, rather than buy it in stores. There is still sugar and preservatives.

First you need to find a birch tree. It’s better not to touch a completely young plant; try to find “someone” older. It is better to start the process at the very beginning of the day - during the day (the earlier, the better). We finish late in the evening. The tree trunk must be at least 30 cm in diameter, since no one wants to unnecessarily injure small and young trees. The height of the cut made is about half a meter. Having finished collecting the juice, we must close the incision with something. For example, moss or mud are suitable for this.

Step 2 – cleansing

One of the main steps in the recipe for kvass from birch sap with barley is the purification of the raw materials. If birch sap is poorly purified, then, firstly, the taste of the product will suffer enormously, and secondly, it will generally be very unpleasant to drink. You don't need anything supernatural for this. You can completely get by with ordinary gauze and a colander. To be more effective, run the already purified solution several more times, so the taste will become softer and more pleasant. Then we leave the product to infuse for a certain number of days in a cool place, and only after that we proceed to the next step.

Step 3 - Barley

Typically, the proportions for kvass made from birch sap with barley and sugar are always similar. For 3 liters of water there are about 100 grams of roasted seeds. They must be fried in a dry frying pan, stirring constantly until golden brown.

Manufacturing

We take the pre-purified juice from the cool cellar and add barley to it. Be sure to tightly close the container and put it back in a warm space for 3-4 days. Be sure to stir it several times throughout the infusion time.

Kvass from birch sap and barley at home: recipes

Even so, it would seem that an ordinary drink can be varied and changed beyond recognition by the obvious addition of some additional ingredient. For example, it is very simple to create kvass from birch sap with barley and raisins.

  • birch sap – 3 liters;
  • barley – 100 g;
  • raisins – 20-25 pieces.

The process of making this recipe is not much different from the traditional one. We use the infused liquid again, add golden barley to it and, right along with it, add raisins into the liquid. We close and put away for 3-4 days in a warm room. Of course, from time to time the future drink must be stirred.

Fermented drink

You can try making a traditional kvass recipe with bread, sugar and water, replacing the liquid with birch sap. Then fermentation processes will begin, based on ordinary nutritional yeast. This is also a good option to vary your usual drinking.
