And this is essentially made in Korea (unlike our beloved Korean carrots). And even though in the Land of Morning Freshness they often make heh not from chicken, but from mackerel, tuna, beef or octopus, the main thing in this dish is the marinade. The hot spicy mixture and vinegar make the thinly sliced ​​poultry so tender and appetizing that it’s simply impossible to get enough of it. And, by the way, you don’t have to be a specific traveler to try Korean chicken fillet heh. The recipe with a detailed photo will tell you what to combine with what to make a colorful Korean snack from the most ordinary Russian goods.

To make it, take:

chicken breast fillet – 600 g carrots - 2 pcs. medium size
onions - 2-3 heads sweet pepper (optional) - 1 pod
table salt - 1 tbsp. l. ready-made seasoning for Korean carrots - 2.5 tbsp. l. or spices*
fresh garlic - 3-4 cloves sugar - 1 tsp.
table vinegar - 4-5 tbsp. l. soy sauce - 4-5 tbsp. l. (not necessarily)
sesame seeds - for decoration (optional) vegetable oil without aroma - 120-150 ml

*the finished seasoning can be replaced with the following spices: red hot pepper - 1 tsp, reddish sweet paprika - 1.5 tsp, dark freshly ground pepper - 3/4 tsp, coriander grains (whole or crushed) - 2 tsp.

How to cook chicken heh with vegetables in Korean (recipe with photos step by step):

I usually make this appetizer with chicken breast fillet. After marinating, the chicken comes out tender and very tasty. But on a theoretical level, you can eat meat from the legs, having previously removed the bones and skin from it. Wash the bird thoroughly. Dry and cut. The pieces should be very thin so that the marinade can simply soak them. I tried to create blocks no thicker than 2-3 mm.

Advice:

If you are not convinced of the quality of the chicken and are afraid to eat it without heat treatment, fry it in advance over high heat in vegetable oil. And then marinate in Korean marinade. The taste and texture of the dish will be completely different. But it will also come out delicious and piquant in an oriental way. It is important to process the chicken before marinating. If you fry already prepared heh, the meat will become hard due to the vinegar.

Cut the peeled and washed carrots into strips or grate them on a special grater for Korean salads.

Feel free to add more onion, it comes out very tasty. Remove the husk from it. Cut into thin half rings.

For brighter color and taste, I decided to add sweet pepper to the chicken khe. Cut the pod in half. Remove the core with seeds. Chop the pulp into thin, almost transparent strips.

Place all hehe ingredients in a deep bowl. Add salt and sugar. Stir.

Place dry spices and pressed garlic in a heap. Heat sunflower or other deodorized vegetable oil in a frying pan. Pour over seasonings and stir quickly.

Pour in vinegar. The table can be replaced with apple or rice.

Add soy sauce. Stir chicken, vegetables and spices again. Cover with a lid or cling film. Place in a cool space to marinate for 1-2 days. The longer a dish is marinated, the more intense its taste becomes.

Prepare all the necessary products. Use prepared chicken fillet, vegetables and spices that you usually put in Korean vegetable snacks.

Wash the chicken fillet and blot off excess water with napkins.

Take a suitable container or bowl. Peel the carrots and grate them on a special grater. Peel the onion and cut into strips or halves of rings. Place everything in a container. If desired, you can add garlic.

I have to say that until that moment I was quite skeptical about all the heh salads that could be purchased at any point in the market, and I had never been an ardent fan of similar salads. Obviously, the recipe ended up in my notebook that same day! Using this recipe, I was able to prepare the most delicious Korean chicken heh the first time. I took a photo of the recipe so that you can see for yourself that the manufacturing process is not at all difficult. At least it’s much simpler than I thought. I would like to warn you right away - chicken for heh is not boiled or fried, it is marinated raw, so be very careful when choosing chicken in the store. It must be completely fresh and from a proven manufacturer.

  • chicken fillet – 500 g,
  • carrots – 200 g,
  • onions – 180 g,
  • vinegar essence - 1 tbsp. l.,
  • Korean carrot seasoning – 2 tbsp. l.,
  • vegetable oil – 4 tbsp. l.,
  • salt and dark ground pepper - to taste,
  • sesame seeds – 1 tsp. (upon submission),
  • fresh cilantro – 10 g (when serving).

How to cook chicken heh in Korean

First, rinse the chicken fillet, dry it and cut it against the grain into fairly thin strips. If you have problems with cutting the fillet (warm meat gets “picky” from time to time and practically falls apart under your fingers), you can keep it in the freezer for about 15 minutes.

Next, place the chicken strips in a suitable bowl, in which, in fact, the heh will be cooked (marinated).

Next are vegetables. We clean them, wash them, dry them and chop them. Chop the carrots into long, narrow strips. A special Korean-style carrot grater perfectly copes with this task. If you don't have one, a regular grater with large teeth will do. The external appearance of the carrots, in my opinion, will no longer be so beautiful, but this will in no way affect the taste.

We cut large onions into half rings or quarters (if the heads are quite large), small ones can be cut into rings.

Place the cooked vegetables in a bowl with the chicken.

Next, add salt, pepper and season with Korean carrot seasoning - all to your own taste. If desired, for lovers of the hottest salads, you can season the heh with finely chopped hot chili pepper.

Season with vinegar essence.

Afterwards, heat the vegetable oil in a frying pan until it smokes slightly, then season it with this hot oil.

Mix the contents of the bowl well. Taste the heh and add salt and sourness if necessary. If you suddenly overdo it with acid, you can quench it with a small amount of sugar.

Now he must marinate. To do this, cover the container with the salad with a flat bowl, place a weight on this bowl and load it in this form into the refrigerator, where it must stand for at least a day so that the raw chicken meat can marinate. During this period of time, it is better to look into the refrigerator 3-4 times and shake the contents of the container to mix.

After a while, remove the finished chicken heh from the refrigerator. To serve, lightly squeeze the salad from the marinade and place on a plate. Sprinkle with sesame seeds and chopped cilantro or parsley to taste.
