Ruddy puff pastry pies with cherries are a good option for savory, simple and easy-to-make homemade pastries, made from a small number of ingredients.

The use of ready-made puff pastry and pitted frozen cherries saves time and greatly simplifies the manufacturing process, because, in fact, there is a minimum of work left - to combine all the components and send them to the oven. With all this, the pies turned out are simply a sight for sore eyes! Ruddy, lush, airy, with fragrant, catchy and very juicy insides. A great addition to your morning cup of coffee or tea, without much hassle! Try it!

Prepare ingredients for puff pastries with frozen cherry insides.

Sprinkle frozen pitted cherries with sugar and defrost completely, leaving them at room temperature for several hours. To speed up the process, you can place the container with the cherries in a water bath or use a microwave oven.

If you plan to make puff pastry with cherries for breakfast, you can throw the cherries and sugar at room temperature the night before and move the puff pastry from the freezer to the refrigerator. By morning the components will be ready for use.

When the cherries are defrosted, separate the fruits from the released juice. If desired, save the juice - you can use it to make a savory syrup or sauce for pies.

Thaw the puff pastry, place on a floured work surface and roll out to 0.5cm thick.

Cut the dough into desired size pieces. I cut the dough into squares approximately 8cm x 8cm.

Stepping back approximately 0.5 centimeters from the edge of the dough, place a portion of cherries on any piece of dough.

Add a little starch to the cherries - approximately 0.5 teaspoon for each serving of cherries. If desired, you can also add a little sugar so that the inside of the pies is as sweet as possible. Fold any square of dough in half at an angle to form a triangle. Then dip the tines of a fork into the wheat flour and gently press the edges of the dough to seal them tightly.

Repeat the function with the remaining dough and entrails.

Place the prepared pies in the refrigerator for 10-15 minutes, and in the meantime preheat the oven to 180 degrees.

Brush the surface of the cooled pies with egg yolk, then place in a preheated oven and bake for 15-20 minutes until golden brown.

While the pies are baking, you can make a regular sauce from the remaining sweet cherry juice. To do this, bring the mixture of juice and sugar to a boil over medium heat, and stirring occasionally, cook the mixture for a couple of minutes until the sugar dissolves and large bubbles appear on the surface.

In a separate container, mix 1 tbsp. starch with 1 tbsp. cool water. Stir the mixture so that there are no lumps left, and then pour it into the bubbling cherry juice in a narrow stream. Stirring, bring the juice to a boil again, boil for about 1 more minute, and then cool.

Thanks to the starch, the juice will thicken as it cools, and you will get a sticky, sweet cherry sauce that can be served with pies, morning porridge, or other desserts.

Roll out the puff pastry (in one direction), increasing the length of the sheet by 1/3. Cut into 6 pieces.

I constantly use semolina to bind water in baking, because... I don’t like the taste of starch in the insides, and semolina does not change the taste at all.

  1. Wash the cherries, dry them, and remove the seeds.
  2. Roll out the dough and cut into squares.
  3. Distribute the cherries in one corner and add a couple of squares of chocolate.
  4. Cover with the opposite corner, forming a triangle, seal the edges tightly.
  5. Prick the surface in several places and bake for 25 minutes at 190 degrees.
