Semolina porridge casserole: traditional recipe
The traditional recipe for semolina casserole involves boiling the porridge, and then baking it with other main ingredients. Since the only sweet ingredients are sugar, it will be delicious to serve a piece of casserole with jam, jam or condensed milk as a sauce.
Ingredients:
- 210 g semolina;
- 210 ml of milk of any fat content;
- 50-60 g sugar;
- a little salt;
- a couple of raw eggs;
- 35 g butter;

- 2 tbsp. l. sifted wheat flour;
- 5 ml sunflower or olive oil.
Manufacturing method:
1. To begin with, cook semolina porridge. In a saucepan, mix cool milk, semolina, sugar, salt and butter. Place the pan over moderate heat and begin to cook, stirring the porridge vigorously all the time. When it boils, it's ready. Remove from heat and leave to cool for a quarter of an hour.
2. Now add two eggs to the porridge, sift in baking powder and premium wheat flour. Mix everything until the dough is homogeneous.
3. Turn on the oven at a temperature of 180-200°C.
4. Cover the baking dish with food foil and grease with sunflower oil. Place the semolina dough into it and put it in the oven.
5. Keep semolina casserole in a hot oven for about 25 minutes.
Let the finished casserole cool slightly and you are ready to serve! Everyone's favorite casserole made from tender semolina porridge will be a good breakfast or afternoon snack for the whole family.
Cottage cheese casserole from semolina porridge
Adding cottage cheese and kefir to the recipe makes the casserole even more satisfying. Enriched with calcium, it will not only be tasty, but also beneficial for the growing body of the child or child.
Ingredients:
- 190 g semolina;
- 150 ml kefir (ryazhenka or snowball);
- 110 g cottage cheese;
- two testicles;
- 40 g sugar;
- salt;
- 40 g of premium wheat flour;
- sachet (11g) baking powder;
- sunflower oil.
Manufacturing method:
1. In a large bowl, mix cottage cheese and drink. If you use fermented baked milk or snowball for a recipe, you need to reduce the amount of sugar. Using a spatula, grind the mixture until smooth.
2. Add semolina, break the eggs, add salt and sugar. Stir and leave for a quarter of an hour alone.
3. Sift the flour with baking powder and pour the mixture into the semolina grounds. Mix thoroughly and set aside again for a few minutes.
4. In the meantime, set the oven temperature to 180-200°C and prepare a baking sheet or mold.
Place food foil in the mold and grease with sunflower oil (if desired, it can be replaced with butter).
5. Transfer the semolina porridge casserole dough into a mold and place in the oven.
6. After 20-25 minutes, the baked dessert is ready to eat.
You can serve the casserole with fruit or berry jelly as a sauce. It will turn out to be an afternoon snack just like in kindergarten.
Semolina porridge casserole with berries
Any variety or type of berries are suitable for this recipe. Adding them depends only on your imagination. Cranberries or lingonberries, currants or cherries, the choice is huge. Whatever berries are taken for production, they will fortify the semolina casserole. You can use either fresh or frozen berries, or dried berries. The production design does not change, but frozen ones must first be rolled in flour, and dried ones must be soaked in warm water.
Ingredients:
- 150 g semolina;
- 120 g wheat flour;
- 120 ml milk;
- one testicle;
- 40 g of sweet sand or powder;
- vanilla;
- sunflower oil;
- 100 g frozen blueberries (or all others).
Manufacturing method:
1. Sift wheat flour (90 g) and baking powder into one cup.
By the way, you can use baking soda instead of baking powder, but it will color the dough of the finished casserole gray.
2. In another cup, combine milk and semolina. Set aside for 10-15 minutes.
3. At this point, while the dough for the semolina casserole is being prepared, turn on the oven at 180-200°C.
4. After the designated time, add the egg, regular sugar and vanilla to the semolina. Mix.
5. Add flour and knead into a thin dough.
6. Sprinkle the frozen berries with the remaining wheat flour and add to the dough.
This way they will not lose their own juice when thawing, and the dough will have a light color, not colored by berry juice. Mix the mixture quickly and place it on a greased baking sheet. Let it bake for half an hour.
Allow the dish to cool and divide into portions. This delicious casserole with berries will be a pleasant surprise not only for children, but also for adults. Its gentle taste and pleasant mixture will be remembered for the whole day!
Semolina casserole with pumpkin and dried fruits
If kids don’t want to eat healthy pumpkin, you can hide it in a delicious semolina casserole. Dried fruits in the recipe are not only a “zest”, but also additional vitamins. If desired, they can be replaced with pieces of new fruit. For example, pear and apple, plum and peach are suitable. Any combination of fruits in semolina dough will be useful.
Ingredients:
- 200 g semolina;
- half a glass of milk;
- 50 ml filtered water;
- 25 g butter;
- 60 g pumpkin;
- 1 tbsp. l. Sahara;
- a pinch of salt;
- 100 g of all dried fruits without seeds (dried apricots, prunes, raisins, dogwood);
- two raw chicken eggs;
- 50 g of premium wheat flour;
- 11 g baking powder.
Manufacturing method:
1. Wash and soak dried fruits in warm water. Cut them into small pieces (not counting the raisins, do not cut them).
2. Cook semolina porridge in a saucepan. To do this, mix water with milk (take cool), add semolina and butter. Add sugar and salt. Stir and discard for now.
3. Peel the pumpkin and grate it on a small grater or, using a blender, grind it into puree. Add to porridge.
4. Place the pan on the heat and, stirring constantly with a whisk or tablespoon, bring the porridge to a boil. Remove from heat and cool for a couple of minutes, stirring with a whisk.
5. Add eggs, flour and baking powder to the porridge. Stir until smooth and add dried fruits. Mix again.
6. Turn on the oven at 180-200°C.
7. Place the semolina porridge casserole dough on a baking sheet lined with paper or foil. If desired, grease it with additional oil.
8. Place the dish to bake until done.

- 1⁄2 tbsp. flour;
- 1 tsp salt;
- 1 tsp Sahara;
- 2 tsp baking powder;
- 1 tsp instant yeast;
- 150 ml warm water or milk;
- 2 tbsp. semolina porridge.
- Mix semolina, salt, sugar, flour and baking powder in a bowl.
- Add the yeast and beat with a mixer at low speed, adding warm water or milk evenly.
- Increase the speed and beat the dough until it becomes creamy and watery.
- Cover the bowl with cling film and set aside in a warm place for 15-30 minutes, until the top of the dough becomes slightly foamy.
- Heat a small non-stick frying pan over medium heat and begin baking the pancakes.
- Slowly pour the batter into the center and spread it sparingly around the circle. Fry for about 2 minutes, do not turn. The surface must be spongy and not sticky.
- Pancakes are best served with a syrup of butter and honey.
If the bubbles are not forming properly, maybe the batter is too thick, try thinning it.
Pudding
You can create pudding from the remaining semolina porridge. Get a light and satisfying breakfast.
- 2.5 tbsp. semolina porridge;
- 2 testicles.
- Beat semolina with egg yolks.
- In a separate bowl, beat the egg whites until stiff. Combine with the rest of the ingredients and stir.
- Preheat the oven to 180 C in advance. Pour the mixture into the mold and bake for 40 minutes.
- The pudding is served chilled, with jam or chocolate.
If desired, you can add raisins, candied fruits or dried apricots to the dough.

Curd casserole with semolina
A traditional casserole recipe that we all enjoyed in kindergarten.
- 500 gr. cottage cheese;
- 2 tbsp. semolina porridge;
- 1⁄2 tbsp. Sahara;
- 5 eggs;
- 1 tsp baking powder;
- 1/2 tsp. salt and vanilla sugar.
- Mix semolina, cottage cheese, egg yolks, baking powder, salt and vanilla in a bowl.
- In a separate container, beat the egg whites with sugar with a mixer.
- Mix all ingredients until smooth.
- Preheat the oven to 180 C in advance. Cover the baking pan with parchment.
- Pour in the dough and bake for 45-60 minutes until golden brown.
- Before serving, the pudding should be removed from the mold and cooled, sprinkled with sweet powder and berries.
In a multicooker, the pudding is baked in the “Baking” mode for 40 minutes, then brought to readiness in the “Heating” mode.
Manna
Delicious, light pie, without semolina flour.
- 1.5 tbsp. semolina porridge;
- 1.5 tbsp. flour;
- 2 testicles;
- 4 tbsp. l. sweet sand;
- 1 tsp soda (quench with lemon juice).
- Whisk the egg whites and sugar until foamy. Next, add the yolks and semolina, stir until the mixture is homogeneous.
- Quench the baking soda with lemon juice and add to the mixture along with the flour. Beat well with a mixer. The dough should be approximately the same mixture as thick sour cream.
- Preheat the oven to 200 C. Pour the dough into an oiled baking dish and bake for 40 minutes. Check readiness with a toothpick.
- Before serving, cool the pie and sprinkle the top with sweet powder.
Very thick porridge should be diluted with warm milk. If it was not sweet, double the amount of sugar.
Semolina balls
You can also create meatballs from semolina. They are served with sour cream or jam.
- 2-3 tbsp. semolina porridge;
- 1 testicle;
- salt and sugar to taste;
- breadcrumbs;
- flour.
- Add egg, salt and sugar to cool porridge. Stir until smooth.
- Add flour to thicken the mixture and form into balls and roll them in breadcrumbs.
- Place the frying pan over medium heat, add vegetable oil. Once it has warmed up, fry the meatballs until crispy and golden brown.
- Transfer the meatballs to a plate and cool slightly before serving.
You can add grated cheese to the semolina mass; it will give the meatballs a creamy taste.
Casserole with fruit
Semolina porridge baked with peaches will be a good breakfast.
- 2.5 tbsp. semolina porridge;
- 2 tbsp. sweet sand;
- 1 testicle;
- 2 pcs. peach;
- 1 PC. apple.
- Mix the porridge with egg yolk.
- In a separate container, beat the egg white and sugar with a blender until thick foam. Combine everything and stir.
- Peel the fruit, finely chop the pulp and add to the semolina mixture.
- Preheat the oven to 180 C. Grease the pan with butter and sprinkle with breadcrumbs.
- Brush the top with beaten egg.
- Bake until golden brown, at least 25 minutes.
- Before serving, cool the casserole and pour over the fruit syrup.
Peaches and apples can be replaced with pears, apricots or persimmons.
Semolina casserole video recipe
Semolina cream
Good binding interior for honey, sponge or puff pastries.
- 2.5 tbsp. semolina porridge;
- 1 lemon (orange);
- 200 g butter;
- 1 tbsp. sweet powder.
- The butter should be softened first, then beat with sweet powder.
- Remove the zest from the citrus with a grater.
- Combine all ingredients with semolina. At medium speed, beat the cream with a blender until smooth and fluffy.
- Grease the shortcakes and place in the refrigerator for 2 hours.
If you heat the porridge and add 1.5 tsp. cocoa or melted chocolate bar, you will get a good chocolate dessert. You can also add banana mousse. To do this, place them in a bowl and mix them together in layers. Decorate with chocolate or waffle crumbs.
