Prepare all vegetables (rinse, peel).

Chop everything, not counting the carrots, into medium-sized cubes, approximately 0.5-1 cm. Grate the carrots on a large grater.

Pour refined sunflower oil into a deep frying pan, when it warms up well over medium heat, add the onion and fry until golden pieces appear, then add the carrots, mix and sauté for a short time, 5-7 minutes.

Add bell pepper, mix again and simmer for 5 minutes.

Carefully place the zucchini on top. They usually come out in a heap at first, so you need to lay them out so that the pieces don’t fall out of the fryer. They will settle during the simmering process. Cover the roasting pan with a lid and create a low heat. After a couple of minutes, the zucchini will begin to release liquid. Simmer, stirring occasionally, until the juice has completely evaporated. This takes approximately an hour.

After the liquid has evaporated, add tomatoes, salt, pepper, and stir. Cover again and simmer until the tomato juice has completely evaporated. The caviar should become “dry”, in other words, all the liquid should leave.

When the caviar is ready, add a tablespoon of dill and parsley mixture, stir, set aside the frying pan and cool the caviar one hundred percent.

If desired, you can add chopped garlic to the cool dish. This time I did it without him. It turns out very tasty and without garlic. The flavor comes from bell pepper. If you add garlic, it will slightly prevail over the pepper. In general, who likes what. Bon appetit!
