One of my favorite pies is charlotte with cottage cheese and apples. Lush, airy, warm and fragrant. All you need to make it is beat the eggs with sugar and mix them with the rest of the ingredients, add the apple filling and bake in the oven. A luxurious combination of simplicity of the recipe and good taste.

For some reason, most commonly made apple pies are usually called charlottes, even if they are not made from traditional sponge dough. There are recipes for charlotte with kefir, sour cream, milk or cream - this will not surprise anyone. So I decided not to deviate from the “rules” and call this fluffy curd pie with apples charlotte. How does it differ from the classics? Of course, the presence of cottage cheese in the dough. It makes the charlotte the least light, but the most moisturized and tender. With all this, the splendor does not suffer at all, because not only well-beaten eggs with sugar, but also baking powder will help the cake to rise perfectly. This charlotte will appeal to lovers of soft baked goods with a balanced taste; you can’t actually feel the cottage cheese in it, but it perfectly balances the sweetness of apples and sugar.

How to cook lush charlotte with apples and cottage cheese in the oven - step-by-step recipe with photos:

Place the eggs in a deep bowl, carefully breaking the shell. There is no need to separate the yolks from the whites. Agree, this is great news, because you will save time and clean dishes. Add sugar to the eggs, all at once. This also can’t help but amuse, because there is no need to “strain” the sweet sand, as when making traditional sponge dough. You can use ordinary sugar - snow-white, the taste of charlotte will be a little different, but still delicious. Also add vanilla sugar, vanillin or vanilla extract.

Beat the eggs and sugar with a mixer until you get a dense, fluffy, bubbly foam. For whipping, you can use a mixer, food processor or blender with a whisk attachment.

Place cottage cheese into the egg mixture. There are no special requirements for it. The main thing is that it should be tasty and fresh. If the curd is grainy, rub it through an iron sieve to obtain the most uniform consistency. Stir. The result will be a slightly heterogeneous, soft dough with small particles of cottage cheese. If you scoop it into a spoon and tilt it over a bowl, it will not drip, but will fall. Set the finished dough aside for now and work on the apple insides. You can also turn on the oven and let it preheat to 180 degrees.

Take a heatproof mold. If you prefer to bake in silicone, you do not need to prepare it further. But the clay or iron mold must be greased with soft butter and sprinkled with crushed breadcrumbs or semolina - this way there is less chance of destroying the finished charlotte when removing it. Place about half of the curd dough on the bottom of the pan. Place apple slices on top. To enhance the flavor, you can sprinkle the filling with cinnamon.

If it is solid and not with a hole in the center, you will have to cook longer so that the center of the charlotte is perfectly baked.

Immediately remove the finished pie from the mold and place it on a wire rack, let it cool slightly. Before serving, you can sprinkle with sweet powder or nuts. Only cooked charlotte is especially tasty if it has not had time to cool completely. And the next day the pie remains appetizing, and the apples in it are juicy.

Pour 100 ml of kefir into a glass, add 1/3 teaspoon of soda, mix gently and leave for 10 minutes
