Now it’s time to cook it with pork, but in order for our first dish to be the most rich, rich, exactly what you want to eat in the winter, we will add not only pork bones, but also smoked brisket or bacon. What will we need

  • pork - 500 g;
  • peas - 500 g;
  • smoked bacon or brisket - 250 g;
  • onions – 1 pc.;
  • carrots – 1 pc.;
  • butter – 20 g;
  • bay leaf - 2 pcs.;
  • garlic – 1 clove;
  • dried oregano -1 tsp;
  • salt - 0.5 tsp;
  • snow-white bread - 5-6 slices;
  • vegetable oil - 2 tbsp. l.

Quantity: 6 servings. The capacity of the pan is 3 liters.

How to make savory pea soup with pork

  1. So, I have a pork bone for broth. If you have ribs, cook with them; ribs are excellent for our purposes. Wash the pork with cool water and place it in the water. Pour 2.5 liters of water. Bring to a boil. Once the foam appears, remove it with a slotted spoon. Stir the meat until the foam appears again. We collect it all, reduce the heat, cook until tender, about two hours.
  2. The broth is cooked, strain. Let's get the meat.
  3. Remove the bone and cut the pork into small pieces.
  4. Peel the onions and carrots. Cut the onions into small cubes. Grate the peeled carrots.
  5. Take a pan with a thick bottom. Pour a little sunflower oil, lightly fry the onions and carrots.
  6. Cut the bacon or brisket into small pieces. Add carrots and onions and simmer everything together for 3-4 minutes.
  7. Pour the strained broth into the pan with the fried bacon. Add peas there too. Let it boil, skim off the foam. Cook for 25-30 minutes. It's still enough for the peas to cook. Usually, for the traditional version, split dry peas are used. It cooks the fastest, so you don’t have to soak it in advance. If you take whole peas, it is much better to soak them for 2 hours before cooking. Dry greenish is also suitable, but you need to realize that with it you will not get that beautiful golden color that is inherent in delicious pea soup.
  8. Place the pork pieces into the broth.
  9. Next add chopped garlic.
  10. And, of course, we season it with our favorite spices: oregano, ground pepper, season with salt. Bring to a boil, turn off the heat. Cover with a lid and let it brew. The dish will be very fragrant if you pour it into clay pots and send it to steep in the oven for 15 minutes. This way you will imitate the effect of a Russian stove, where classic soups, including pea soup, were simmered at low heat and came out especially tasty.
  11. All that remains is to create the crackers. Cut snow-white bread into small cubes. Pour a couple of tablespoons of vegetable oil into the frying pan. Fry the bread cubes on all sides until golden brown.

Recipe for Pea Soup with Pork:

Wash the peas until the water is clear and soak them in cool water overnight (that is, in the dark) , or for 3 hours.

In the morning, wash the soaked peas again, add water (the amount of water is the same as you plan for soup, for 1.5 cups I have a medium saucepan) and set to cook. As soon as the foam appears, be sure to remove it, reduce the heat, add salt and cook the peas under the lid over moderate heat for 30-40 minutes. I had split peas and 30-40 minutes was enough for them to cook, especially since they had been soaked all night (that is, in the dark) .

While the peas are cooking, let's create the frying. Cut the meat into pieces, size and quantity at your discretion. I cut it into small cubes. Place the meat on a hot frying pan and brown it on all sides.

Cut the onion into cubes and add to the meat, and fry for 3 minutes.

Cut or grate the carrots and also add to the meat and onions.

If your peas have not boiled down to a pulpy puree, but have retained their original appearance, but have already been boiled, separate them from the water in which they were boiled, and throw the liquid in a saucepan. Turn the boiled city into puree using a blender and return it back to the water. Add roast, potatoes, bay leaf and pepper. And put on fire and cook until the potatoes are ready.

Pea soup with pork is one of the most delicious versions of pea soup. Pea soups can be cooked for serving on the same day, and are also good and acceptable on the 2nd and 3rd days, which is important for especially busy housewives.

The traditional recipe for pea soup with pork implies that you take the meat with a bone: meat on the bone gives the most delicious and rich broth. If you don't have pork ribs, take an entrecote with a bone, a piece of ham with a bone, or brisket.

The most common vegetables in pea soup are potatoes, onions and carrots.

How to make pea soup with pork

Ingredients:

  • Peas – 1.5 tbsp. (200 ml)
  • Pork ribs – 800 g
  • Potatoes – 5 pcs.
  • Carrots – 1 pc.
  • Onions – 1 pc.
  • Vegetable oil – 2 tbsp. for frying
  • Spices – 3 pinch(s) dried Italian herbs
  • Salt - to taste
  • Water – 3 l

Manufacturing:

Peas for soup are dry yellowish: whole or split. It gives what is called a normal taste.

The soaking time for whole and chopped differs significantly. For preparation, i.e. keeping whole peas in water is several hours; it is recommended to soak them, for example, overnight (that is, in the dark) . For split or crushed polished peas, soaking in water for about an hour is enough, and some varieties of split peas are ready for cooking almost immediately, i.e. immediately after washing.

For pea soup, select the amount of peas according to the following calculation: - 1 cup of peas per 1 liter of water - for a very thick soup mixture, - 0.5 cups of peas per 1 liter of water - for a thin soup.

Immediately cut the defrosted pork ribs into portions so that individual ribs with meat come out. After cooking with them, you will no longer need to create anything additional for serving.

If other pork meat is used on the bone, it may need to be removed later, cut off the bone and cut into portions.

Fry the meat in vegetable oil, olive or sunflower, but intended specifically for frying. The pieces of meat should be fried until lightly browned on all sides.

Frying the meat and then onions and carrots can be done immediately in a saucepan with a thick bottom, in which the soup will then be cooked.

Peel the carrots and onions and chop finely. It is convenient to simply grate carrots on a grater with large meshes. Add these vegetables to the fried meat, lightly salt and continue to fry everything together until they are lightly browned.

Salt greatly affects the cooking of peas; in salted water they boil more strongly, so if you want to keep the peas in the soup strong, then completely add salt to the pea soup with pork only at the very end.

Drain the peas from the soaking water, rinse them again with cool water as needed, and add to the rest of the ingredients. Add the first portion of spices and pour in hot water.

After boiling, reduce the heat to medium and cook for about half an hour, and then add the potatoes, cut into cubes or cubes.

Cook the soup until the potatoes are ready and the peas are cooked to the desired degree.

At the end of cooking, add a second portion of your favorite spices. Add salt to the finished soup to taste or allow consumers to salt their portions at their discretion. Manufacturing:

1. Thoroughly wash and soak the peas for 3-4 hours in cool water.

2. Drain the water, pour in new water, calculating three times more than peas. Let it cook.

3. When the peas boil, skim off the resulting foam, turn the heat to low, add salt to taste and cook until fully cooked. This will take about 45 minutes.

4. Cut the pork meat into strips, fry in oil (preferably lean).

5. Chop the onion and add to the pork.

6. Grate the carrots and add to frying. Fry all ingredients until soft.

7. Transfer the roast to the peas.

8. Peel and cut the potatoes into pieces and add to the soup.

9. Season with pepper, add bay leaves, and boil until the potatoes are cooked.

10. Chop the dill and sprinkle on the dish at the time of serving.

Tip: if the peas are not cooked, you can lightly crush them with a masher; You can also use crushed peas; you need to soak them for 1-2 hours, and they cook much faster.

Pea soup in a slow cooker

Compound:

• peas – 200 g;
• pork (ribs) – 300 g;
• smoked ribs – 150 g;
• potatoes – 3 pcs.;
• onions and carrots – 1 pc.;
• vegetable oil – 2 tbsp.
l.; • salt, ground dark pepper – to taste;
• dark bread – for croutons.

Tip: the recipe for making it in a slow cooker does not imply pre-soaking the peas; during cooking, they will boil perfectly.

Manufacturing:

1. Divide the ribs; if they are very huge, cut them into 2-3 parts.

2. In the multicooker, set the “Frying” program, time 15 minutes.

3. Pour oil into the bowl of the device, place the meat, fry lightly.

4. Chop (grate) carrots and onions. Sprinkle over ribs.

5. Add smoked ribs to the food, fry everything together until the timer turns off.

6. Cut the potatoes into strips, add them to the rest of the ingredients, and set the “Stew” mode for 120 minutes.

7. Add peas here, having washed them previously.

8. 20 minutes before the end of cooking, add bay leaves, pepper, and salt.

9. While the soup is cooking, make croutons from dark bread. To do this, cut it into cubes, place in the oven at 150 degrees, and stir several times during the drying process, cook for 5-10 minutes.

10. After turning off the multicooker, leave the pea soup with pork to brew for another 10 minutes and serve with sour cream and croutons.

• garlic – 3 cloves;
• mustard – 2 tsp;
• vegetable oil – for frying;

Tip: if you decide to make puree soup, then (that is, at night) in cool water to continue cooking in the morning.

Manufacturing:

1. Cut the pork into large pieces. Place in saucepan and simmer until cooked through, about 40 minutes. Pull it out.

2. Wash the soaked peas, add them to a saucepan with broth, and cook for 45 minutes.

3. Remove the skin from the potatoes, cut into strips, add to the soup, cook for another 20 minutes.

4. Cut the vegetables into small cubes and fry in a frying pan until browned.

5. Add the roast after the indicated time, add salt and cook for 15 minutes.

6. Once the soup is cooked, without turning off the heat, add chopped garlic and mustard. Boil for 3 minutes.

7. Let cool slightly, beat all ingredients with a blender to obtain a thick puree soup.

8. Finely chop the boiled meat and add to the already beaten mixture. Boil and turn off.

Secrets of making pea soup

To ensure that the soup is thick and the peas are perfectly cooked, you need to add 0.5 tsp during the cooking process. soda
