First, knead the dough. Since my pie is frisky, the dough for it will also be kneaded very quickly, which means we use dry active yeast - with it the dough will rise in almost 30-40 minutes. Mix sugar, yeast and 0.5 tbsp. flour.

Then pour warm milk into the dry mixture (I use 1%) and knead until smooth. To knead the dough, you can also use just water or a mixture of water and milk.

Leave the bowl warm for 10 minutes. During this period of time, the contents grow into a luxurious lush head. Add the yolk (don’t touch the white yet) and vegetable oil. I also tried to record this step of making the dough, but the yolk and butter instantly disappeared into the dough, leaving only a small depression in the “cap”.

Knead the dough with a whisk again and sift the flour into the bowl.

The dough is kneaded very soft and elastic. It is better to add a minimum of flour at first, and if after 10 minutes of kneading the dough still sticks to your hands or work surface, add another handful.

Cover the dough, put it in a warm place and start filling. Peel the potatoes, wash them, dry them and cut them into thin slices or cubes - whichever suits you faster. I used a shredder for cutting, and the smooth, thin plastic pieces were ready in a maximum of 5 minutes.

You can put raw onions in the filling, or you can fry them in oil - it’s up to your taste. I prefer the 2nd option - this way the inside comes out the most fragrant and juicy. At the same time, I don’t just fry the onion until softened, but brown it until it’s crunchy. Grind the peeled garlic into the filling.

And only when the dough is ready for cutting, add salt, pepper and season the filling with seasonings.

This is how my dough grew while the inside was being prepared, it took 25-30 minutes.

We crush it and divide it into two parts - one larger, the other much smaller. At this same step, you can turn on the oven to warm up. Temperature – 180 degrees.
