And this is where grape pie can come to the rescue. You can prepare it with any kind of dough - the berry is mixed with regular yeast, perfectly complements the puff pastry and allows you to create biscuits.

For this baking, any variety is suitable - you can place both snow-white and purple grapes in the mold. It is recommended not to remove the skin from the berries - it contains many necessary substances, it is better to remove the seeds - their presence can spoil the memory of sweetness.

In addition to its excellent taste properties, the usefulness of grapes lies in its rejuvenating effect and beneficial effects on the liver. A juicy sweet pie will decorate your table and create a lasting memory for your guests!

The total production time is from 40 minutes to 2 hours.

Traditional grape pie recipe

You can vary the amount of grapes in the pie, relying on its sweetness - if the berries are sour, add a little more sugar.

Ingredients:

  • 0.5 kg of grapes;
  • a packet of dry yeast;
  • 0.4 kg flour;
  • 50 gr. butter;
  • half a glass of sweet sand;
  • 1 tablespoon vegetable oil or olive oil;
  • glass of water;
  • a pinch of salt.

Manufacturing:

  1. Mix all the bulk ingredients: add sugar, salt and yeast to the flour.
  2. Warm the water to room temperature. Take out the butter ahead of time - it should become soft.
  3. Add water to the flour mixture, stirring constantly and eliminating any lumps. Then add oil in the same way.
  4. Let the dough sit - cover and set aside for an hour.
  5. Prepare the grapes - wash them, cut them into 2 parts, remove the seeds if desired.
  6. Mix it with vegetable oil and a small amount of sugar.
  7. Once the dough has risen, divide it in half. Roll each part into a narrow layer. Remember, the cake will rise in the oven.
  8. Place the first layer on parchment paper. Spread the grapes over the entire surface, but not all of them.
  9. Cover the top with a second layer and also decorate the top with berries. Place them cut side down.
  10. Place in the oven preheated to 180º and bake for about an hour.

Pie with grapes and apples

Grapes are often complemented with apples - green apples go better with green grapes, and reddish ones or citrus fruits go better with purple ones. If you add both, you get juicy baked goods with a pronounced fruity taste.

Ingredients:

  • 1 testicle;
  • 0.2 kg of grapes;
  • 0.2 kg apples;
  • ½ lemon;
  • 0.3 kg flour;
  • 100 gr. butter;
  • half a glass of sugar;
  • glass of water;
  • a pinch of cinnamon and salt.

Manufacturing:

  1. Mix flour with salt and sweet sand.
  2. Soften the butter in advance - either at room temperature or in a water bath. Add it to the flour mixture.
  3. Pour in a little water and let the dough sit for 15 minutes.
  4. While the dough is infusing, prepare the apples - cut off their skins and cut into thin slices.
  5. Simmer the fruits in a frying pan for about 5 minutes along with cinnamon and lemon juice. Let the apples cool.
  6. Take out the dough, knead it and divide it into 2 parts. Roll each of them into a narrow layer.
  7. Place apples in the first layer, grapes on top. Cover with a second layer. Brush the pie with beaten egg and place in the oven for 40 minutes.

Cheese and grape pie

It's no secret that the taste of grapes is perfectly emphasized by cheese. This is a combination for real gourmets, and a pie with grapes and cheese will make any table unique. It is better to make the dough with kefir - this will make the baked goods airy.

Ingredients:

  • 0.3 kg of grapes;
  • 100 gr. hard cheese;
  • 200 gr. flour;
  • 200 ml kefir;
  • 2 testicles;
  • half a glass of sweet sand;
  • a pinch of soda, salt.

Manufacturing:

  1. Grate the cheese on a medium grater, wash the grapes and cut into 4 parts.
  2. Combine flour and sugar. Add salt and soda there.
  3. Make a hole in the consistency and pour the eggs into it. Knead the dough.
  4. Pour in the drink. You should get a liquid and at the same time viscous dough.
  5. Pour half the batter into the baking pan. Sprinkle sparingly with cheese and grapes. Pour the remaining dough on top.
  6. Bake at 180ºC for 25 minutes.

Grape pie with puff pastry

This very simple recipe can always be used when guests are already on the doorstep. The result is sweet baked goods that will cost you a minimum of costs.

Ingredients:

  • 0.5 kg puff pastry;
  • 300 gr. grapes;
  • 3 teaspoons sugar;
  • butter.

Manufacturing:

  1. Take out the dough and defrost it - it should become soft and pliable.
  2. Grease a baking dish with oil.
  3. Place half of the dough into the mold.
  4. Place the grapes cut in half on a layer.
  5. Sprinkle with sugar.
  6. Cover with another layer of puff pastry.
  7. Bake in the oven for 20 minutes.

Ingredients:

  • 1 cup flour;

Manufacturing:

  1. Wash the grapes and cut in half. Prepare the zest in advance if you don’t have it: grate the skin of the lemon and orange and dry it in the oven.
  2. Beat eggs with sugar. Add softened butter and olive oil evenly, beat again.
  3. Add milk, vanilla sugar, baking powder and flour (add it through a sieve). Stir thoroughly.
  4. Add the zest. Let the dough soak in the citrus scent - leave it for 10 minutes.
  5. Add grapes - half of the full amount.
  6. Place the dough in the mold and place in the oven for 10 minutes. It must be perfectly heated to 180ºС.
  7. Remove the pie, sprinkle the remaining grapes on top and bake again for 40 minutes.

Simple and very tasty homemade baked goods according to this recipe are perfect for home tea drinking. Tender, soft, wet dough and berry islands made from dark grapes are beauty, not pie. I especially like to eat it on the second day (after refrigeration) - the pie comes out so juicy and aromatic.

I use the highest grade wheat flour for this baking; I don’t recommend reducing the amount of sugar (even though the cake comes out quite sweet). Use butter with a fat content of at least 72%, and any refined vegetable oil, that is, without flavor, will do. You can replace thick natural yogurt with low-fat sour cream (10%) or full-fat kefir, but then you will have to slightly adjust the amount of flour used in the recipe.

Making a dish step by step:

To make homemade grape pie, we will need the following ingredients: grapes, premium wheat flour, natural yogurt, sweet sand and vanilla sugar, chicken eggs, butter and refined vegetable oil, and baking powder. All products should be at room temperature.

Immediately turn on the oven to heat up (180 degrees). In a separate bowl, combine 300 grams of premium wheat flour, 10 grams of baking powder and a pinch of salt. Read this recipe for how to create dough baking powder at home.

Mix everything with a fork, spoon or whisk so that all the bulk ingredients are moderately distributed in consistency.

You can take grapes for this pie of any color, but completely, naturally, without seeds. I had purple grapes, with seeds at that, but they didn’t really spoil the memory in the finished pie. We remove the berries from the branches, wash them, dry them - you get 400 grams.

Break chicken eggs (3 pieces) into a bowl or beating bowl, add 180 grams of sweet sand and 1 teaspoon of vanilla sugar (I use it black because it contains natural vanilla).

Beat the eggs and sugar with a mixer at high speed until the sweet crystals are completely dissolved. Depending on the power of the mixer, the whipping time may vary significantly, but we need to achieve an increase in the size of the mass by 4-5 times. It's time to add 250 grams of natural yogurt (I took thick, 2% fat) - just mix it into the egg mixture.

Next, pour in 50 ml of vegetable oil (I use sunflower) without aroma and 50 grams of butter, which must be melted in advance and cooled to room temperature. Again, mix everything until smooth or beat briefly with a mixer.

All that remains is to mix the flour mixture from step 3 into the base for the upcoming pie.

If you use a mixer, do it very quickly and not for long, because the cake dough does not like long mixing. Then the finished baked goods will not turn out airy, fluffy and loose. When there are no lumps of flour left, stop stirring.

To bake a pie with grapes, take any suitable form (I have a square 20x20 cm) and grease it with vegetable oil (take almost 1 teaspoon of the total size according to the recipe). To prevent the baked goods from sticking, you can line the pan with parchment paper or create a so-called “French shirt”. Grease the pan with a thin layer of butter, then sprinkle with flour, shaking off excess. My option is just vegetable oil (then no flour is needed). Place a third of the dough into the pan and distribute it moderately.

We put some of the berries on top (also about a third) and drown them in the dough.

Cover 2/3 of the dough and again the grapes. In this way we assemble the entire workpiece - 3 layers of dough and 3 layers of berries.

Bake the grape pie in a preheated oven for approximately 50 minutes at 180 degrees on a medium level until golden brown. I have a gas oven, bottom heat, without convection (by definition it may not be there). Then we take out the cake and let it cool slightly in the mold - about 10 minutes. If you wish, you can sprinkle the baked goods with sweet powder, but in my opinion it turns out magically without it.

Grape pie according to this recipe is great both warm and cooled. Tender, soft, wet dough and berry islands are beauty, not baking. I especially like this pie with grapes on the 2nd day (after refrigeration) - it is so juicy and aromatic. Cook for your health and bon appetit, friends!
