Eggplant rolls: 6 delicious recipes

With a little imagination, you can turn ordinary vegetables into a unique snack. Eggplant rolls are a tough rival to Japanese rolls!


Ingredients

eggplants (medium) 1 pc.
cottage cheese 200 g
garlic 1 clove
cheese (hard) 50 g
parsley 1 bunch
vegetable oil for frying
salt to taste
pepper to taste

Manufacturing process

Cut the eggplant into strips.

Sprinkle the strips with salt, let them sit for 10 minutes and blot with a cardboard towel.

Using a pastry brush, brush each strip with vegetable oil. This way, the eggplants won’t absorb excess oil, as happens when frying in oil.

Fry the eggplants in a dry hot frying pan.

Place fried strips on a paper towel.

Chop the garlic clove. It is best to grind it into a paste with a knife on a cutting board, adding a little salt.

Finely chop a bunch of parsley.

Mix greens with garlic. Mash well with a spoon.

Mix cottage cheese with herbs and grated cheese.

Add salt and pepper to taste.

Place a spoonful of cottage cheese on a slice of eggplant.

Wrap in a roll and pin with a toothpick.





Ingredients

eggplants (medium) 2 pcs.
vegetable oil 150 g
cheese (“Russian”) 100 g
cottage cheese 150 g
garlic 4 g (3-5 cloves)
walnuts 40 g
herbs (cilantro, basil, parsley) 40 g
paprika 3 g

Manufacturing process

Wash the eggplants and cut them lengthwise into thin slices.

Add salt and leave for 5 minutes. After this, wash again and dry with a napkin.

Heat vegetable oil in a frying pan. Fry eggplant slices in it until golden brown, place them on a wire rack to drain excess oil, and place on a paper napkin to dry.

Prepare the filling. Place grated cheese and cottage cheese in a mixing container. Add finely chopped garlic, cilantro and walnuts to them. Mix everything, add salt, pepper and sweet paprika.

Using a spoon, spoon the filling onto the eggplant slices and roll them into rolls.

Garnish the finished dish with herbs and serve.

onion 2 pcs.
tomatoes 2 pcs.
garlic 3-4 cloves
soy sauce 2 tbsp.
salt
spices (cumin, paprika, dark pepper)
sunflower oil

Manufacturing process

Wash and peel the vegetables. Cut the eggplant lengthwise into thin slices (5-7 mm), lightly salt and throw in quickly so that it “buries” (along with the excess liquid, the bitterness will go away). In the meantime, you can cut the onion into cubes and heat the grill pan.

Wipe the pan with vegetable oil and fry the eggplants on both sides. When they are ready, it is best to throw the pieces in a hot frying pan so that they soften slightly.

Fry the onion in vegetable oil until golden brown. You can immediately add a little salt - this will make it more difficult for it to burn.

While the onions are frying, grate the carrots and tomatoes on a large grater. It will be more convenient with tomatoes if you cut the fruit crosswise and rub it with the pulp, and throw away the skin.

Add carrots to the onion, salt and mix. Simmer until it softens.

Pour in the tomato pulp, stir and let the water evaporate slightly (it’s best to do this over low heat).

Crush cumin, paprika and pepper in a mortar.

Pour soy sauce into the vegetables, add spices and finely chopped garlic. Stir, remove from heat and cool slightly.

Spread the eggplant slices on a clean surface and wrap them in their carrot filling.


Ingredients

walnuts 130 g
cilantro bunch
dill bunch
onions 1/4 pcs.
garlic 2 cloves
salt 1 tsp.
wine vinegar 2 drops
hops-suneli 1 tsp.
eggplants 400 g
olive oil 20 ml
pomegranate (seeds) 1 tbsp.

Manufacturing process

Grind the nuts in a blender. Add cilantro, dill, onion and garlic. Add salt, wine vinegar, suneli hops to the nut mass. If the mass is very thick, you can dilute it with a small amount of water.

Cut the eggplants and fry in a hot frying pan in oil until golden brown. Place the eggplant slices on a napkin to get rid of excess oil.

Place the nut mixture on the eggplants and roll into rolls. Decorate the rolls with lemon seeds.


Ingredients

chicken breast 1 pc.
eggplant (large) 1 pc.
carrots 1 pc.
greens (parsley) to taste
vegetable oil (for frying)
sesame seeds to taste
salt to taste

Manufacturing process

Separate the chicken fillet from the bone. Grind in a blender.

Add carrots, grated on a small grater, and salt to the minced chicken. Mix well. If desired, you can add a crushed clove of garlic.

Wash the eggplant and cut into thin strips.

Soak the cut strips in cool water for 20 minutes to remove excess bitterness. Then lightly fry the strips in a frying pan greased with a small amount of vegetable oil. Place the fried strips on napkins to absorb excess oil.

Place a tablespoon of minced meat on the eggplant strips, level and sprinkle with finely chopped parsley.

Roll the strips into rolls.

Place the rolls on a baking tray lined with baking paper. Sprinkle eggplant with sesame seeds. Cook the eggplant rolls in the oven preheated to 190 degrees for 20 minutes.

Place the finished rolls on a plate and sprinkle with herbs.



Ingredients

spinach (for the inside + for the sauce) 50 g + 50 g
eggplant 1 pc.
milk cream 1-2 tbsp.
adjika (reddish+greenish) 2 g + 2 g
onion 10 g
cilantro 5 g
vegetable oil
salt spices (Svan salt)

Manufacturing process

For the inside, finely chop the cilantro and onion and combine in a bowl. Add poached spinach.

Add spices (Svan salt).

Fry in vegetable oil with salt and pepper until soft.

For the sauce, simmer the spinach, chop and place in a bowl. Add greenish adjika.

Salt and add spices.

Pour in a couple of tablespoons of cream.

Place the sauce on a plate.

Wrap the filling in fried eggplant slices.

Place the rolls in the sauce and garnish with herbs!
