Cottage cheese casserole with apples

Cottage cheese casserole with apples

Thursday, November 1, 2018

I never tire of sharing with you new recipes for cottage cheese casseroles, and now I suggest you try them with apples. Warm, satisfying and fragrant homemade cottage cheese casserole with pieces of juicy sweet and sour apples. It goes well with a cup of aromatic tea either warm or cool – be sure to make it!

Cottage cheese for casserole is suitable at any fat content (I used 5%), but the fattier the product, the more satisfying and tender the finished dish turns out. The same goes for milk. We take large chicken eggs (about 60-65 grams each). You can try replacing semolina with potato or corn starch, but I won’t tell you exactly how much, so you will have to determine it without the help of others and only by trial and error.

The amount of sugar in the cottage cheese casserole depends on the acidity of the cottage cheese and your taste (I don’t recommend reducing it for foodies). Choose apples that are firm, juicy, and sweet and sour. For flavoring, you can add a little vanilla sugar or vanillin to the curd base (substitute natural vanilla if desired and able), citrus zest or even cinnamon.

Ingredients:

Making a dish step by step:

To make homemade cottage cheese casserole, we will need the following ingredients: cottage cheese, sweet sand, chicken eggs, semolina, milk, apples and butter (for greasing the mold). All products should be at room temperature.

Take a bowl, pour 80 grams of semolina into it and fill it with milk (160 ml). Mix and leave on the table so that the semolina swells.

I highly recommend rubbing 800 grams of cottage cheese through a sieve. I agree, the process is quite tedious, but it’s worth it - after wiping, not a single large lump remains.

After 15-17 minutes, the whole cottage cheese will be like a light and airy cloud.

In a separate bowl, combine 3 large chicken eggs (you can replace 4 or 5 small ones) with 80 grams of sugar. At this step, you can add your favorite flavoring (vanilla, citrus, cinnamon).

Beat the eggs and sugar with a mixer or whisk until the sugar crystals dissolve.

Pour the semolina swollen in milk into the cottage cheese.

Next, pour in the eggs, beaten with sugar, which are an airy mass.

Mix everything thoroughly - the base for the cottage cheese casserole is ready.

Lastly, let's deal with the apples (so that they don't have time to darken), and don't forget to turn on the oven to heat up (170-180 degrees). Wash the apples, dry them, cut off the skin, remove the seeds, and cut the pulp into not very large cubes.

We transfer the prepared apple slices (300 grams - this is the weight of the fruit already prepared in this way) into the curd base.

Mix thoroughly so that the apple pieces are moderately distributed throughout the curd mass.

Grease the baking dish with soft butter (30 grams) – bottom and walls.

We transfer the curd base with apples into the mold, level it with a spoon or spatula.

Bake cottage cheese casserole with apples in a preheated oven at 170-180 degrees for 40-60 hours. Production time may vary depending on the size and height of the mold, as well as the characteristics of the oven. I have a gas oven, bottom heat, medium grid level, no convection. Take the finished casserole out of the oven, let it cool for 10 minutes, after which you can serve it if you like it hot.

Warm, satisfying and fragrant homemade cottage cheese casserole with pieces of juicy sweet and sour apples. With a cup of aromatic tea, it is good both warm and cool - be sure to try it! Cook for your health, friends, and bon appetit!

Benefits for the body

So, in order to understand how useful the casserole is, let’s look at the benefits of its main ingredients:

  • cottage cheese is rich in protein, vitamins and microelements, is perfectly absorbed by the body, does not actually lose the necessary parameters during heat treatment, and is a natural dietary lactic acid product;

  • apples - contain a wide range of vitamins and minerals, are rich in fiber, antioxidants (pectin), contain a huge amount of structured water and prebiotics that normalize the functioning of the gastrointestinal tract (gastrointestinal tract - the digestive system of the organs of real multicellular animals, designed for processing and extracting nutrients from food substances) ;

  • eggs - are a natural source of protein and nutrients, contain the necessary cholesterol (an organic compound, a natural fatty, lipophilic alcohol found in the cell membranes of all living organisms except non-nuclear ones) , have a low calorie content, and thanks to lecithin and choline, they promote the removal of fats from the body.

Other recipes

  • Traditional

The traditional version is prepared without flour. The recipe includes semolina, which makes the structure softer and more fluffy. We will certainly prepare a casserole from good goods. When we take it out of the oven, let it cool and only later, after cutting it into portions, will we treat the family.

This is a very tasty dish, we will serve it in a beautiful bowl with sour cream or jam. And if you sprinkle it with nuts or sesame seeds on top, it will add a unique taste. I often prepare the usual traditional version for breakfast for the whole family, prepare it the same way.

  • Like in kindergarten

Dietary casserole, like in kindergarten, is prepared by us for breakfast throughout our lives. Obviously, this is provided that we look after our health and try to eat right. It also brings back pleasant memoirs of youth.

I don’t understand about you, but I was always happy when the kindergarten served cottage cheese casserole with jelly for afternoon tea. Even now, when I prepare it for my own family, I try to create everything so that it is delicious, as in childhood. Be sure to pour condensed milk, jam or the same jelly on top. Bon appetit!

  • In a slow cooker

A good, quick, successful option for making cottage cheese casserole is in a slow cooker. Apples can be mixed into the curd dough, or you can lay them out like a beautiful flower on the bottom of the bowl and later pour the watery curd dough on top. It comes out beautifully, evenly, fluffy and very tasty.

If you have a slow cooker at home, and I have no doubt about it, be sure to cook your baked goods in it. I am sure that once you do this, you will fall in love with cooking this way.

It is customary to eat this dessert cold, but contrary to various advice, I like to eat it piping hot. I take it out of the multicooker, cut it into pieces and immediately enjoy it with fragrant tea or coffee with milk. Try it, you will like it!

  • With fried apples

In a non-stick frying pan without handles, prepare a cottage cheese casserole with fried apples. I usually pour vegetable oil into a frying pan or melt a piece of butter and fry the slices with sugar in it until beautifully golden brown.

The option with caramelized apples turns out much more attractive than if we simply laid out chopped raw fruits on the surface of the casserole. Sweet apple slices are a wonderful decoration for a savory cottage cheese casserole. Prepare it the same way and please your loved ones.

  • With apples and raisins

Everything is delicious with raisins! And if we add raisins to our current dish, we will simply create it even sweeter and more enjoyable. The result is a wonderful delicacy, ready to compete with any South American cheesecake.

Raisins need to be thoroughly washed and soaked for 2-3 hours. Add it to the dough after the semolina swells and mix everything well. We will bake in the oven for 40-45 minutes and look forward to our beloved homemade sweets.

Useful tips

  1. I recommend eating sweet and sour apples with a reddish side. We take 2 huge fruits, but if the fruits are small, take 3-4 pieces.
  2. I definitely put raisins in the dough to make it sweeter. My family really likes it with raisins.
  3. Do not immediately take out the finished casserole after turning off the oven. Open the oven door slightly and let the baked goods cool as slowly as possible. This way it will settle less and will be more fluffy and softer.
  4. It is believed that you can cook from expired, sour cottage cheese. I don't recommend doing this. To make it tasty and healthy, cook from good products and constantly check the expiration date of the cottage cheese in the store.
  5. If you beat egg whites with sugar in a blender, you will get the most fluffy dough structure.
  6. Add cinnamon or vanilla to highlight the taste of apples.
  7. You can add not only apples to the casserole, but also any other fruits and berries. It’s interesting that you can not just mix them into the curd dough, but lay them in layers so that they look more attractive when cut.
  8. Serve the finished product in a beautiful shallow dish, decorate the food with various toppings and jelly, honey, jam, condensed milk.

How to create cottage cheese casserole with apples in the oven according to a step-by-step recipe with photos

Cottage cheese is useful for everyone: both adults and children. Naturally, the most common option is to eat it with sour cream and sugar (honey, jam), but what can you do if cottage cheese is not one of your favorite products. I suggest you experiment and prepare a delicious cottage cheese and apple casserole. With all this, the beneficial characteristics of cottage cheese will not decrease.

Cottage cheese casserole with apples

Ingredients

Cottage cheese (choose fat content as desired) 400 g
Sour cream (choose fat content as desired) 2 tbsp. l.
Chicken eggs 2 pcs.
Semolina ½ cup
Sugar 3-6 tbsp. l.
Apple (greenish) 1 PC.
Butter for the form

Choosing the right ingredients

Cottage cheese is one of the products that quickly spoils. If you buy it at the market or from farmers, always pay attention at first to the dishes in which the product is placed, and to the neatness of the merchant. Visually evaluate the cottage cheese you like; it should be uniform, snow-white or cream-colored. Smell - the freshest cottage cheese has a gentle creamy smell with a slight sourness; if it smells sour, then it is already a stale product.

Be sure to try the cottage cheese - it should contain a slight sourness, but it should not be sour. It shouldn’t be sweet either; if you feel a sweetish taste, it means you tried to hide the shortcomings with sugar; you don’t need to use such cottage cheese.

When buying cottage cheese in a store, pay attention to the packaging: it must be sealed, dry, and free of blisters. It is better to choose a product in a hard or plastic container, because it guarantees the safety of the product and eliminates the risk of germs and germs getting inside. The product should not be taken in soft or damp packaging. Carefully read the information on the packaging and what is stated by the manufacturer in the composition. If you buy cottage cheese, then the only ingredients allowed are:

  • natural milk;
  • leaven;
  • calcium chloride;
  • rennet extract.

If you see milk powder, vegetable fats, sorbic acid (E 202) or other preservatives in the composition, then this product cannot be called natural cottage cheese.

Step-by-step production

  1. Place cottage cheese from packs (400 g) into a deep bowl and mash with a fork.
  2. Add 2 tablespoons of sour cream to the bowl and stir.
  3. Take 2 chicken eggs and separate the whites from the yolks. Do this carefully so as not to catch the yolk with the sharp edge of the shell.
  4. Place the yolks into the cottage cheese and stir.
  5. Add 0.5 cups of semolina to the consistency, stir and let it swell.
  6. Beat the whites with 3 tablespoons of sugar (if you like it sweeter, you can add more sugar) until snow-white foam. It is not necessary to beat until stable peaks form; you just have to get a compacted air mass.
  7. Gradually add the whipped whites to the main mixture and fold them in gently.
  8. Wash the apple, peel it, cut it in half, remove the core. Cut one half into cubes and the other into slices.
  9. Carefully mix the apple cubes with the curd mass.
  10. Prepare a baking dish by greasing it with butter and sprinkling with semolina.
  11. Pour the prepared mixture into the mold and smooth the surface with a spoon.
  12. Place apple slices on top and sprinkle with sugar.
  13. Place the pan in the preheated oven and bake for 30 minutes at 200 degrees. Remove the pan and the casserole has risen and browned. Let it cool a little and you can serve it.

How to serve correctly

Cottage cheese casserole with apples can be served either warm or cool. When the casserole has cooled a little in the pan, cut it into portions and serve, topped with sour cream, and if the casserole is not sweet enough for you, then with honey, condensed milk or jam.

Tips and tricks for making

  • Spices can improve the taste of a casserole with apples and cottage cheese: lemon zest, vanillin and cinnamon.
  • If you don’t want to bother with the eggs, then you don’t have to separate the whites from the yolks, but knead everything together. The casserole will still turn out, but it will only be the least airy and warm.
  • If you purchased cottage cheese by weight at the market or in a store, then you need to rub it through a sieve to obtain a homogeneous mass.
  • Those who are concerned about their figure should take cottage cheese and sour cream with the least amount of fat, and choose greenish apples - they have the least calories. If you choose sweet apples, you can reduce the amount of sugar.
