Turkey broth
To prepare a traditional turkey first course, the following ingredients will be useful:
- 700 gr. turkeys;
- 3 l. water;
- 300 g potatoes;
- Onion;
- Carrot;
- Pasta;
- Garlic;
- Greenery;
- Salt.
Manufacturing
- Take a pan, pour water into it and put it on fire. To make a rich and nutritious broth, it is best to use turkey necks, but you can use any other part of the turkey. We wash the necks and place them in a pan with water.
- Prepare vegetables for cooking. Peel the potatoes, onions and carrots. Peel the garlic, wash the herbs and prepare a glass of small pasta for the soup.
- When the water with turkey necks boils, carefully collect the foam. Let it simmer over low heat with the lid on for about 60 minutes.
- Cut the potatoes into cubes, chop other vegetables and herbs, and pass a clove of garlic through a press.
- Add chopped potatoes, chopped onions and carrots to the boiled turkey necks.
- Add some salt to the broth, mix well and bring to a boil. Cook over low heat for about 20 minutes, occasionally checking the potatoes for readiness.
- Add pasta to the first dish and cook for a couple more minutes.
- Pour in the chopped herbs, add the garlic and let the contents of the pan boil again.
- Cover the pan with a lid, let it simmer for a couple more minutes, and turn off the heat.
- Let the soup brew. After that we pour it into deep plates, making sure to put a piece of turkey neck in each serving. Serve the dish hot.
Turkey soup with green peas
The piquancy and unique taste of the soup comes from the rich but dietary turkey broth and green peas. To make this simple and delicious turkey soup, you will need the following ingredients:
- 0.5 kg. turkeys;
- 2 l. water;
- 3 pcs. potatoes;
- 1 carrot;
- Onion;
- 150 g green peas;
- Salt, spices to taste.
Manufacturing
- We begin preparation by washing and drying the turkey. For this soup, it is better to use sirloin. Place the meat in a pan with water. After boiling, remove the resulting foam and reduce the heat to low. Cook the turkey until half cooked, covering the pan with a lid first.
- Preparing the vegetables. Peel the potatoes, onions and carrots. Cut into cubes. Carrots can be grated. Place the vegetables in the broth, which should come to a boil. Then reduce the heat again, adding salt to the soup and adding your favorite spices. You can create a frying of onions and carrots, which will give the dish a wonderful golden color. You can simply add vegetables to the pan to make the finished dish nutritious.
- Throw the canned green peas into the pan at the end. Cook for about 10 more minutes.
- Let the finished dish brew, then pour it into plates and serve with chopped fresh herbs and sour cream.
Soup with sorrel and turkey
The fascinating combination of sorrel and diet turkey broth makes this dish unusual and unlike other recipes. The beautiful golden color of the broth is emphasized by sorrel greens, bright bell peppers and tomatoes. To make a dish with the smell of summer you will need:
- 600 g turkey;
- 3 pcs. potatoes;
- 200 g sorrel;
- Carrots and onions;
- 2-3 testicles;
- Bell pepper;
- Tomato;
- Greenery;
- Salt and spices.
Manufacturing
- We wash the meat, remove the skin, if any, and cut it into pieces. Place in a saucepan, add water and put on fire. When the broth boils, skim off the foam and leave to simmer until the turkey is half cooked.
- Cut potatoes, onions and carrots into strips. This will give the finished dish originality.
- Add bay leaf and peppercorns to the broth. We check the readiness of the meat, then add potatoes and other vegetables to the pan. You can also add green onions to the soup, which will make the soup in the bowl especially beautiful and appetizing.
- Grind the bell pepper and tomato, then add them to the soup.
- Boil the eggs separately and cut them into cubes to add to the soup.
- Place sorrel and chopped herbs in the first dish. Cook until done.
- Add the crushed egg to the soup and leave the soup on the fire for another 5 minutes.
- Serve the soup, generously sprinkled with herbs and adding sour cream.

It so happens that for me personally, the turkey is an exotic bird. My grandmother didn’t raise turkeys in the village, just chickens and geese. I remember that from time to time the neighbor’s turkeys would walk down the street, healthy as horses and angry as small puppies. Well, it’s a bird of its own; in general, it makes a good turkey and cabbage soup.
The turkey (Meleagris gallopavo) is a large bird. The wild turkey is native to America and is a close relative of the pheasant. Wild turkeys can weigh up to 8 kg, and domestic ones, they say, can weigh up to 35 kg (!).
Turkey meat is very tasty and nutritious, although it is not particularly tender. More like young veal than chicken. In terms of live weight, the turkey is second only to the ostrich. At one point I saw a domestic turkey weighing more than 20 kg. Just one ham can feed the whole family, and even a cat.
Turkey meat is considered dietary and contains a lot of highly digestible protein.
In general, turkey is tasty not only when fried, but also in excellent soups. Turkey meat makes a good rich broth. In American cuisine, there are a huge number of options for turkey first courses. How to make turkey soup
